Mock Meat Balls Baked

   

 Ingredients

3 cups cauliflower florets

1 ½ cups chopped cremini  OR button mushrooms

1 ½ cups chopped walnuts

1/3 cup tomato sauce

¼ cup chopped coriander leaves

¼ cup freshly grated Parmesan or Romano cheese

1 tsp kosher salt

1 to 1 ½ tsp fennel seeds

½ tsp dried marjoram /thyme / basil

½ tsp dried oregano

½ tsp onion powder

½ tsp garlic powder

¼ tsp  crushed red pepper flakes

2 eggs, lightly beaten

 

Preparations 

Preheat oven to 400 degrees F. Line a large baking sheet with parchment and set aside.

Place cauliflower, mushrooms, walnuts, and tomato sauce in bowl of a food processor and pulse until the texture of raw finely ground beef.

Transfer mixture to a large bowl. Add remaining ingredients and mix to thoroughly combine. Form mixture into 2-inch balls;  (press meatballs a bit to pack them before rolling into balls). Place on prepared baking sheet.

Bake balls about 20 minutes, until lightly browned and firm. Makes about 30 balls.

Use in spaghetti, meatball sandwiches, as a pizza topping, or with a dipping sauce as an appetizer.

Air Fryer Crispy Potatoes with Fried Eggs / Paneer

 Baby potatoes roasted till golden, with herbs and garlic, served with a perfectly fried egg. It’s comfort food done right — simple, homely, and oh-so-satisfying.

Shortcut: Use an air fryer for less mess, more crisp.

 

Ingredients:

1 kg baby potatoes, quartered 

2 cloves garlic, finely chopped 

¼ cup extra-virgin olive oil 

1 tbsp chopped fresh rosemary 

1 tbsp chopped fresh parsley 

1 tbsp fresh thyme leaves 

Salt to taste 

Freshly ground black pepper 

Pinch of crushed red pepper flakes

Method:

Halve the baby potatoes.

Preheat the air fryer to 425°F (220°C).

In a large bowl, toss the potatoes, garlic, olive oil, rosemary, parsley, and thyme. Season with salt, black pepper, and red pepper flakes.

Arrange the potatoes in a single layer and bake for about 35-40 minutes until crisp and golden.

Serve them with fried eggs on the side. OR no eggs, with paneer fried or paneer burji
