Slow-Cooker Vegan Lentil Chili

 This tasty lentil chili is filled with smoky spices and has a rich tomato flavor, but it is lighter than the meat-filled version, thanks to the addition of barley sweet butternut squash and hearty lentils. Lentils are the perfect substitute for a meat-free chili, as they cook up earthy and meaty, and there's no browning or precooking needed.

This hearty vegan chili comes together very easily with the aid of a slow cooker. All you have to do is mix the ingredients together, turn it on, and come back to a bowl of delicious and comforting vegan chili.

Recipe - Vegan - Chili

Ingredients 

1 pound large butternut squash cubes (about 1 1/4 inches) 

1 medium yellow onion, finely chopped  

1 medium red bell pepper, diced  

2 cloves garlic, finely chopped  

2 1/2 cups water  

1 (14.5-ounce) can crushed tomatoes  

1 (15-ounce) can black beans, drained and rinsed  

1 (15-ounce) can kidney beans, drained and rinsed  

3/4 cup dried lentils  

2 tbsp chili powder  

1 tbsp ground cumin 

1 tbsp olive oil  

2 tsp kosher salt  

1/4 tsp freshly ground black pepper  

Coarsely chopped fresh cilantro and diced avocado, for serving 

 

Method

1. Place all ingredients (except the cilantro and avocado) in a 6-quart or larger slow cooker and stir to combine. 

2. Cover and cook until the lentils are tender - 6 to 8 hours on the LOW setting. 

3. Stir again and serve topped with cilantro and avocado. 

Notes:

Storage: Leftovers can be stored in an airtight container in the fridge for up to 5 days. It can be frozen for up to 3 months.

Singhare ki Puri (For Ekadasi Vrat)

singhare ki puri served with potato curry in a plate. 

 Ingredients

2.5 to 3cups singhare ka atta(water chestnut flour)

1cup mashed potatoes or 2 medium sized boiled potatoes

1 or 2green chilies, minced or finely crushed in a mortar-pestle

tsp cumin powder or coarsely crushed cumin

2 tsp oil

rock salt or sendha namak as required

water to bind the dough

oil to deep fry puris as required

Instructions

Kneading Dough

Rinse the potatoes very well in fresh water. Then add them to a 2 liter pressure cooker.
 
Add enough water covering the potatoes. Also season with a few pinches of edible rock salt.
 Steam or pressure cook the potatoes for 3 to 4 whistles or until they have softened and are fork tender. When the pressure drops on its own in the cooker then only open the lid. Remove the cooked potatoes with pasta tongs and set them aside on a plate. Ensure that the potatoes are drained well of water. When warm, peel and mash the potatoes with a fork or a potato masher in a bowl. Add the water chestnut flour, minced green chilies, cumin powder, edible rock salt and oil. Mix the ingredients first. Add very little water about 1 to 2 tablespoons and begin to knead the dough. Don't add water unless required. Knead the dough and if it looks dry or lumpy in some parts, then add little water and knead again. The dough should be smooth, soft and pliable. The dough should not be sticky. If the dough looks sticky then sprinkle some water chestnut flour and knead again. With a sticky dough you won't be able to roll the puri.

Assemble & Roll

Take small or medium sized balls from the dough. Shape them to a neat ball between your palms. Sprinkle some water chestnut flour on the rolling board and on the dough ball. Roll the balls in to small or medium sized puris. Don’t make thin or thick puris. The thin ones will break when frying and the thick ones will get browned quickly from out leaving the insides uncooked.

Frying Singhare ki Puri

Heat oil in a kadai for deep frying the puris.
When the oil is medium hot, place the puri gently in the oil.When one sides puffs up, aid the puri to puff up by gently nudging it with the slotted spoon. When this side becomes golden then gently turn over and fry the second side until golden and crisp.If needed you can flip a few more times for even cooking.When singhare ki puri is golden, remove from the slotted spoon and drain on paper towels to remove excess oil. This way fry the remaining puri in batches.Serve the singhare ki puri hot with vrat ke aloo or kaddu ki sabji.

Buckwheat flour (kuttu atta) puri

Buckwheat flour (kuttu atta) puris are a traditional fasting recipe enjoyed during many Hindu vrat days. Served with vrat-friendly potato curry or yoghurt, they make a comforting meal during rainy weather. 

 Ingredients

  • 2 cups buckwheat flour or 250 grams kuttu ka atta
  • ½ tsp cumin powder
  • 1 tsp rock salt (edible and food grade) (sendha namak)
  • 1 cup hot boiling water
  • peanut oil for deep frying, add as required
  •  

    Preparations

    To make the dough  Take 2 cups buckwheat flour (or 250 grams kuttu ka atta) in a large mixing bowl or a plate (parat).Add ½ teaspoon cumin powder and 1 teaspoon rock salt (sendha namak).With a spoon mix well.Now add 1 cup hot boiling water.With a spoon mix everything. Cover the pan and keep aside till the mixture cools down.Once the mixture has cooled down, begin to knead it. While kneading add warm water if required. 1 to 2 tablespoons of water can be added.Knead to a smooth dough. The dough should not be sticky. Otherwise you won’t be able to roll the pooris.


    making kuttu ki puri Make small or medium sized balls from the dough. Take a dough ball and spread some oil on both sides. With a rolling pin, roll to a round circle. You can keep the kuttu puris slightly thick, but do not make them thin. Heat oil for deep frying in a kadai or pan. Check the oil by adding a small piece of the dough in it. If it comes up steadily and gradually, the oil is hot enough for the puris to be fried. Then gently slide one puri in the oil. Fry on medium flame. It will come on the surface and also puff up. If the puri does not puff, then gently nudge & press the surface with a slotted spoon, so that the puri puffs up. Fry till you see that oil has stopped sizzling and the kuttu puri looks golden and crisp. Then turn over the puri.  Fry the second side also till it turns crisp and golden. Remove with a slotted spoon. Place them on paper towels to remove excess oil. Similarly fry the rest of puris. Serve kuttu ke atte ki puri hot with vrat ke aloo or dahi arbi or dahi aloo.

    Yoghurt with cucumber / Cucumber Raita

     Ingredients

    1 cup plain yoghurt
    1/2 cup cucumber, grated or finely chopped
    1/2 tsp roasted cumin powder
    1/2 tbsp rock salt
    1 tbsp fresh coriander, chopped
    lime juice optional as per taste 
     
    How to make it:

    Mix the yoghurt, cucumber, roasted cumin powder, rock salt and coriander in a bowl. Chill for a few minutes if desired and serve fresh. 

    This can be eaten plain as a summer snack or you can have with rice dishes- pulao, veg. biryani, mixed veg rice.

    Roasted makhana (fox nuts)

     Ingredients

    2 cups makhana/ fox nuts

    1 tsp ghee

    1/2 tsp turmeric pdr

    1/2 tsp cumin powder

    Pinch of black pepper

    1/2 tbsp rock salt

    How to make it:

    Heat the ghee in a pan, add the fox nuts and roast on low heat until crisp. Toss with turmeric, cumin powder, black pepper and rock salt. Serve it warm.

    Kidney beans and roasted sweet potato chaat

     Ingredients

    ½ cup boiled kidney beans (rajma)

    1 small sweet potato, cubed

    ½ cucumber, chopped

    ½ tomato, chopped

    ¼ onion, finely sliced

    A handful of coriander

    ½ tsp roasted cumin powder

    A pinch of chaat masala

    Lemon juice

    1 tsp olive oil

    Salt

    How to make it:

    Toss the sweet potato with olive oil and roast or air-fry until golden. Combine it with the rajma, cucumber, tomato, onion and coriander. Season with cumin, chaat masala, lemon and salt.

    Black Eyed Pea Salad

     black eyed pea salad recipe southern corn cucumbers red onions smoky smoked paprika vinaigrette 

    Ingredients

  • 3 cups cooked black eyed peas (about two 15 ounce cans, rinsed and drained)
  • 1 cup corn
  • 1/2 cup chopped red onion
  • 2 tomatoes , seeded and diced
  • 1 cup cucumber , seeded and diced
  • 3 green onions , chopped
  • For the Dressing:
  • 1/4 cup apple cider vinegar
  • juice of 1 lime
  • 2 tsp sugar
  • 1 tsp kosher salt
  • 1/4 tsp  freshly ground black pepper
  • 1 1/2 tsp cumin pdr
  • 3/4 tsp coriander pdr
  • 3/4 tsp smoked paprika
  • a few dashes of hot sauce , according to heat preference
  •  

    Preparations

     Combine the beans and vegetables in a large bowl. Whisk together the vinaigrette ingredients and pour over the mixture. Stir to combine. Refrigerate for at least 4 hours before serving. Enjoy as a salad, side dish or as a salsa with corn chips.

    Mexico’s Spiced Jackfruit Carnitas Tacos

      

     Ingredients

    400 gm raw jackfruit, boiled and shredded

    4 flour tortillas

    Juice of 2 limes

    Juice of 1 orange or 2 tbsp sweet lime juice

    1 tsp cumin powder

    1 tsp smoked paprika

    1 tsp dried oregano

    2 garlic cloves, minced

    Fresh salsa: 2 tomatoes + ½ onion + coriander + green chilli + lime juice, chopped fine

    Salt to taste

     

    Method

    Mix jackfruit with lime juice, orange juice, cumin, paprika, oregano, garlic and salt.

    Marinate for 10 mins.

    Cook the marinated jackfruit in a hot pan until slightly caramelised. About 10-12 mins.

    Warm tortillas in a dry pan for 30 seconds on each side.

    Load jackfruit onto tortillas. Top with fresh salsa.

    Squeeze extra lime and serve.

    Aloo-Tofu Tikki

     Tofu And Vegetable Tikki from cookingwithparita.com

    Ingredients

    2 medium potatoes
    200gtofu
    1 medium onion (chopped)
    1 tsp grated ginger
    1 tsp grated garlic
    1/2 tsp chilli powder
    1/4 tsp turmeric pdr
    1/2 tsp cumin pdr
    1/2 tsp chaat masala
    1 tsp pink salt
    1/8 tsp cinnamon pdr
    1 tbsp nutritional yeast
    1 1/2 tbsp. cornflour
    2 tbsp fresh chopped coriander
    1 1/2 tbsp oil
     
     
    Preparations
    Peel two medium potatoes and boil until soft
    Squeeze excess water out of the tofu block.
    Crumble the tofu using your hands or a fork.
    Once the potatoes have slightly cooled, mash them using your hands.
    Add the chopped onions, grated ginger, grated garlic, chilli powder, ground turmeric, ground cumin, chaat masala, pink salt, ground cinnamon, nutritional yeast, cornflour, coriander and mix with your hands until well combined.
    Take a piece of the mixture and form into tikkis.
    Heat the oil over medium heat.
    Carefully place the tikkis into the pan and cook for 4-5 minutes, until crispy.
    Flip the tikkis and cook the other side for 4-5 minutes.
    Once the tikkis are cooked place them on a plate lined with kitchen tissues to absorb all the excess oil.
    Enjoy with green chutney or ketchup!
