 Chocolate Chip and Peanut Butter Chickpea Cookies 

Ingredients

15 oz chickpeas can

peanut butter 1 cup

maple syrup  1/4 cup 

dark chocolate chips 1 cup

vanilla essence 1 tsp 

baking pdr 1 tsp
 
salt a pinch
 
pdr sugar for sprinkling optional 
 

Preparations Preheat your oven to 350 degrees. Line a baking sheet with parchment paper. Add chickpeas, peanut butter, maple syrup, baking powder, salt and vanilla extract to a food processor. Blend until well incorporated. Fold in chocolate chips with a spatula or give then a good mix with a spatula. Using a cookie scoop or a spoon, measure out about 1/4 cup of dough for each cookie. Roll it into a ball and then flatten into a cookie shape. Place the cookie discs on your prepared baking sheet and bake for about 10 minutes. Watch for them to turn a lovely golden brown – a sign they're done just right. Allow them to cool on a baking rack before eating. Optional) Sprinkle with powdered sugar for added flavor.

Chocolate Chip Cottage Cheese Muffins

Ingredients

  • 1 cup low-fat cottage cheese
  • 2 large eggs
  • 1/4 cup melted coconut oil
  • 1/3 cup coconut sugar or sweetener of choice
  • 1 tsp vanilla extract
  • 1 1/2 cups whole wheat flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup dark chocolate chips

Preparations:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together the cottage cheese, eggs, melted coconut oil, coconut sugar, and vanilla extract until smooth.
  3. In a separate bowl, combine the whole wheat flour, baking powder, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Fold in the dark chocolate chips.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  8. Let cool on a wire rack before serving.

Vegan Chocolate Cake

Avocados are rich and soft, which makes them an excellent substitute for butter. Furthermore, they are a great source of healthy fats, minerals, and vitamins. The healthy fats make avocados a great choice for a ketogenic diet. To add to this, they are an excellent source of folate (used to repair cells, and lutein (maintains eye health). 

 
Avocados have been used to lower cholesterol, treat osteoarthritis, and it's even been proven that they contain cancer-fighting properties. Therefore, adding this fruit to a cake is one of the tastiest ways to benefit from these health benefits. 
 
The taste of the avocado mixes in well with the other ingredients that it's not even possible to tell the difference. This cake is also sweetened with honey or maple syrup, instead of sugar and white flour. Try it out now! 
 
Ingredients: 

1 ripe organic avocado, mashed until smooth 
2 tsp baking powder 
¼ tsp sea salt 
¼ cup coconut or avocado oil 
3 cups coconut flour 
2 cups filtered water 
5 tbsp dark chocolate cocoa powder 
3 tbsp of maple syrup (or to your desired taste) 
2 tsp vanilla extract 
2 tbsp apple cider vinegar (or squeezed lemon juice) 
 
For the frosting 
2 ripe organic avocados, mashed until smooth 
5 tbsp dark chocolate  OR cocoa powder 
2 tbsp of maple syrup / honey
Whisk all the ingredients till smooth


Directions  
 
1. Preheat the oven to 350°F, grease, and (coconut) flour two 9" round cake pans. 
2. Whisk the flour, cocoa powder, salt, and baking powder in a large bowl. In a separate bowl, whisk avocado oil, vinegar, avocado, water, and vanilla extract. As soon as they are mixed well, add the maple syrup. 
3. Pour this mixture into the flour mixture and stir well. 
4. Divide the mixture evenly between cake pans, and bake.
5. After half an hour, check to see if they are done. 
6. Leave the cakes to cool in the pans, and take them out after 15 minutes to completely cool. 
7. Add a frosting layer on the first cake layer, and then top the second one. 
8. Pour the rest of the frosting on top of the entire cake.
