This Wholesome Buddha Bowl is Packed with Goodness

 This fantastic, easy-to-create recipe will keep you well-nourished. Known as a Buddha Bowl, this wholesome meal is a combination of vegetables and grains, inspired by the principles of the macrobiotic diet - a way of eating that recommends a grain and vegetable-based diet, emphasizing the balance of yin and yang in food for greater health. It originated in Japan and combines a synergy of flavors consisting of sweet, sour, bitter, salty, light and hot.

This recipe has become a real favorite in the west. For starters, it's absolutely delicious. Secondly, it's incredibly easy to make during the week. It's also a comforting and nourishing dish, in addition to being extremely healthy. Last but not least, just looking at this heavenly bowl makes you want to dig right in. 

Top Tip: Decrease your cooking time by preparing your base ingredients (sweet potatoes, lentils and beans) at the beginning of the week. Once you've prepared your ingredients ahead of time, it will only take you five minutes to assemble. Enjoy!

Deliciously Healthy Buddha Bowl 

Ingredients (Serves 4) 

2 sweet potatoes, cubed & roasted 

2 cups cooked brown rice or quinoa 

 2 heads broccoli, chopped and steamed or roasted 

2-3 cups cooked black beans (or 1-2 14-oz cans) 

2-3 cups cooked lentils 

1-2 cups sauerkraut (finely cut, fermented cabbage)

* Fennel seeds, black sesame seeds, and chili flakes 

Tahini Miso Sauce:  

1 tbsp. light or yellow miso* 

 ¼ cup tahini* 

Juice from ½ a lemon

3-5 tbsp. water 

Dash of cayenne pepper *

Directions: 

1. To make the tahini-miso sauce, combine in a bowl and stir until smooth and creamy, adding more water if needed or desired. 

2. Then, place the roasted sweet potatoes, broccoli, cooked rice or quinoa, lentils and beans in a bowl. Add sauerkraut if you're using it. Finish off the bowl with the tahini-miso sauce, fennel seeds, black sesame seeds and chili flakes. 

3. Dig in and enjoy this healthy, delicious treat.

Home-made Powder For Strong Bones

 Ingredients and Preparations

Flax seeds 100 gm powder roast on low flame stirring well, remove cool.

Black sesame seeds 100 gm powder, roast the sesame seeds in the same pan on slow flame stirring till it starts to pop up, remove, cool.

Pumpkin seeds 50 gm powder

Black raisins 50 gm soak in hot water with 1 tsp baking soda to kill bacteria for 10-15 minutes

6-7 cm ginger root, peel and grate

Wash 1 lemon with water and baking soda, cut into slices, remove seeds.

add grated ginger, washed raisins, chopped lemon pieces and grind with hand blender OR in a mixer jar well. Add the ground ingredients to the powders, mix 200 gm honey, turmeric pdr 1 tbsp and

Black pepper pdr 1 tsp, mix all well.

Eat 1 tbsp morning and evening to have strong bones, store in the fridge.

The seeds are rich in calcium, iron, magnesium, Omega 3 fatty acids, which all helps to build bones. Black sesame seeds are richer by many times than white sesame seeds. Turmeric pdr has anti-inflammatory properties along with antioxidants, anti-bacterial and many more.

Unniyappam for Vishu

  

Vishu marks the Malayali New Year, symbolising prosperity and hopeful beginnings, with festive foods prepared using seasonal ingredients. Unniyappam, soft golden fritters made with rice flour, ripe bananas, jaggery, and coconut, are cherished for their warm flavour and comforting sweetness during the celebrations.

Ingredients

For the Batter:

½ cup raw rice  soaked 3–4 hours

½ cup jaggery  melted and strained

1 ripe banana (nendran/Kerala variety)

3 tbsp fresh grated coconut

1 tsp black sesame seeds

½ tsp cardamom pdr

¼ tsp dry ginger pdr (chukku)

A pinch of baking soda

A pinch of salt

¼ cup coconut oil  for cooking OR Sundrop/ Groundnut oil

poaching pan/ appakarai you get in iron, brass/ non-stick too, with 5/7/9 holes or more in some.

Method

  1. Soak raw rice in water for 3–4 hrs. Drain before grinding.
  2. Melt jaggery in 3–4 tbsp water, stir until dissolved, strain. Cool slightly.
  3. Grind rice + banana to a smooth, thick batter with minimal water.
  4. Add jaggery syrup, coconut, sesame seeds, cardamom, chukku, baking soda, and salt. Mix well. Rest 30 mins.
  5. Heat unniyappam pan on medium. Add a few drops of coconut oil to each mould.
  6. Fill each mould ¾ full. Don’t overfill — they puff up.
  7. Cook until edges set and bottom is golden (~3–4 mins). Flip, cook other side 2–3 mins.
  8. Drain on paper. Serve warm — soft inside, crisp outside.

Curry leaves Powder

 Ingredients

oil 1 tbsp

chana dal 1/2 cup roast little add

urad dal 1/2 cup once it also gets roasted add

peanuts 1/2 cup

black sesame seeds 1/2 cup

jeera 1 tsp

dry red chilies 10 or to taste

tamarind small lemon size

hing

remove once all are well fried

in the same kadai

add oil 1 tsp

garlic cloves as desired fry till brown, remove

 now add  curry leaves, salt and turmeric pdr/ when added while frying curry leaves , helps to retain its green colour.

curry leaves, washed and dried 2 big handfuls  fry in the same kadai till crisp, remove

once all the ing. have cooled

first grind the dals and chilies to a coarse powder

next pdr curry leaves coarse, add garlic and

add the first ground ing, grind to a coarse  pdr.

store in a clean dry jar. If fried with oil, it will last only for a month, if dry roasted, it will last longer.

Black Sesame Seed Carrot Cake

   

Healthy, delicious and vegan-friendly! This dessert gives you a little bit of everything, and I mean, in flavor too. 
 
After setting the oven to pre-heat at about 350°, add 1 and 1/2 cups of flour, 1 and 1/2 teaspoons of baking powder, a 1 teaspoon of salt and cinnamon and a quarter teaspoon of nutmeg to one bowl and whisk thoroughly. 
 
In a larger bowl, add a third of a cup of brown sugar and applesauce, 3/4 cup of sugar, a quarter cup unsweetened cow or almond milk, half a cup vegetable oil, 2 teaspoons of grated ginger, and finally half a teaspoon of vanilla extract
 
Whisk the contents of the bowl and slowly mix in the dry ingredients and 8 ounces of grated carrots, that’s around 3 carrots
Now you need to coat a pan with non-stick vegetable oil and scrape the batter into it. For best results, coat the pan with oil before you start to prepare the batter. 
 
Once the pan is filled, make sure to smooth out the top and sprinkle about two tablespoons of black sesame seeds on the top. Put the pan into the oven and let it bake for about 75 minutes. You can insert a butter knife or a tester into the center of the cake to check if it's done. When it finally is, you’ll have yourself a hot and sweet treat!

. Neyyappam

 Neyyappam - Wikipedia 

 

Ingredients

4 cups rice raw

2 - 2 1/2 cups  jaggery

½ cup  maida or wheat powder

1 tsp black sesame seeds

2 tbsp coconut chopped into small bites

cashews chopped into pieces

cardamom pdr 1/2 tsp

2 tsp ghee

1 pinch salt

 ¼ cup coconut grated (optional)

 

Preparations

Soak the rice in water for about 3-4 hours .

Melt jaggery with very little water and cool the solution to be slightly warm.

Once soaked, grind the soaked rice with the warm jaggery solution prepared ahead.

Add maida or wheat powder and grind again. Add cooked rice and coconut ( if using as they are optional ), and grind well. Adjust the water so that the consistency of the batter is as thick as that used for making idlis or pancakes. Heat a pan and add a teaspoon of ghee . Fry sesame seeds, chopped coconut pieces, cashews, and sauté till it is lightly browned and keep aside. Add the above sautéed items to the batter along with a pinch of salt. Let the batter sit for about 5 to 6 hours or overnight. It will get thicker on resting and may need to be loosened with water to get the right consistency.  Appakkara Heavy Duty Normally, it is fried in a cast iron vessel as seen in the picture.

grease each hole with ghee .
 Use a ladle to pour the batter and keep it at a low to medium flame to deep fry the neyyapam . It should get a dark brown colour .Using a high flame will leave the inner portion uncooked so it is better  to fry with low or medium flame. Turn over once the lower-side is cooked. The neyyapam , just like any other appams  made with jaggery , tastes even better the next day and can be kept in an air tight container for a few days.

 This dish is a specialty on Onam, Karthigai festival ( the festival of lamps).

Chinese Traditional Savory Snacks It is like our Namak para/ Kathiichu proichathu, only due to design, it looks fancy

 content  

Ingredients for crispy snacks:  
All-Purpose flour - 2 cups 
Salt - 1/2 tsp. 
Black sesame - 1/2 tsp. 
Eggs - 1  Normally I use ghee to make dough to get it crisp, no eggs,
Vegetable oil - 2 tbsp, plus more for frying 
Water - 1/2 cup
Method of preparation 
 
In a bowl, combine the flour, oil, salt, egg, and sesame. 
 
Once crumbly, add the water in small portions, making sure to mix well between each. 
 
Knead the dough until it is uniform. It will be a bit sticky. Let rest covered 10 minutes. 
 
Knead again to form a smooth bowl, and let rest, covered, for another 30 minutes. 
 
On a lightly floured surface, roll out the dough to a 16x24 inch rectangle, as thin as possible. 
 
Cut the rectangle lengthwise along the longer side to divide it into 2 even rectangles. 
 
Lay them on top of each other and repeat. You will have 4 strips. 
 
Fold each strip lengthwise and slice it very thinly from the folded side, making sure not to slice all the way to the fold. 
 
Divide each strip into 1 1/2-inch-wide pieces roughly. 
 
For each 1 1/2-inch piece, open the fold and stick each corner on top of its opposite to shape it into the final shape. 
 
Over a medium-low flame, heat oil in a pan for deep frying. 
 
When it reaches 260°F, start adding the dough. Let it float for a minute, then flip.
 
Once golden, let cool on a towel-lined tray and enjoy the crunch! 
 
Tip: Don't skip letting the dough rest. This will make sure your final product comes out right.

 

Note- If you find it tedious to shape like it is shown, simply roll into thin roti, cut into diamond shapes and fry till crisp.

Kulcha Naan

Ingredients 

1/2 Cup All Purpose Flour

1 tbsp Curd

1 tbsp Chopped coriander leaves

A pinch of Baking Soda

1 tsp Black Sesame seeds

1/4 tsp Salt

1/2 tsp Sugar

1/4 tsp Baking Powder

1/2 tsp Oil

 

How to Make Kulcha Naan


Prepare the dough in a large container by adding all purpose flour, sugar, salt, baking soda, baking powder, curd and oil. Keep it aside for 2 hours.

Now take the dough, divide it into equal parts. Roll each portion into a circle and sprinkle sesame seeds and coriander on top of it.

Now roll the kulcha and place it on a non stick pan.

Cook the kulcha until both sides turn crispy and golden brown.

Serve it with chole, mint chutney and onion rings.

Black Sesame Seed Carrot Cake

Whisk the contents of the bowl and slowly mix in the dry ingredients and 8 ounces of grated carrots, that’s around 3 carrots. 
 
Now you need to coat a pan with non-stick vegetable oil and scrape the batter into it. For best results, coat the pan with oil before you start to prepare the batter. 
 
Once the pan is filled, make sure to smooth out the top and sprinkle about two tablespoons of black sesame seeds on the top. Put the pan into the oven and let it bake for about 75 minutes. You can insert a butter knife or a tester into the center of the cake to check if it's done. 
 
When it finally is, you’ll have yourself a hot and sweet treat!

Avocado chips

 INGREDIENTS

avocado 1 mashed well, little lime juice

salt to taste

chili flakes little

egg 1 / almond flour 1 tbsp

sesame seeds white 1 tsp

black sesame seeds 1 tsp

Mix all the above ingredients well.

Grease a baking tray,put roughly 1 tbsp of the prepared mixture, leave around 2 cm space and spread another, keep repeating leaving space, as the mixture will spread flat.

Bake in a preheated oven @ 180 deg C for roughly 8-10 minutes or till light brown.

RAW BANANA ROLL

INGREDIENTS
for the outer layer
raw banana cooked & mashed  2 big ones
bread crumbs 2-3 tbsp
salt to taste
lime juice 2 tsp
ginger-garlic paste 1 tsp
green chilli paste 1 tsp
sugar pdr.  1 1/2 tsp

mix all together, flatten them on greased palm.

for stuffing
thick hung curd/ cottage cheese crumbled well/ cream cheese   1/4 cup
salt to taste
ginger-green chilli paste  1 tsp
mix well.

bread crumbs about 1/4 cup to roll
black sesame seeds 2 tbsp
oil for frying

METHOD

in flattened banana mixture, put about 1-2 tsp of stuffing, carefully cover from all sides, roll long or into any desired shape well.,
roll this in breadcrumbs well, remove excess crumbs by rolling well again, then roll in sesame seeds lightly
fry in hot oil delicately till light brown on all sides.
drain, serve hot with chutney of your choice.

ps- black sesame seeds have 400 times more calcium than white ones, so very good for health.
