Chinese Traditional Savory Snacks It is like our Namak para/ Kathiichu proichathu, only due to design, it looks fancy

 content  

Ingredients for crispy snacks:  
All-Purpose flour - 2 cups 
Salt - 1/2 tsp. 
Black sesame - 1/2 tsp. 
Eggs - 1  Normally I use ghee to make dough to get it crisp, no eggs,
Vegetable oil - 2 tbsp, plus more for frying 
Water - 1/2 cup
Method of preparation 
 
In a bowl, combine the flour, oil, salt, egg, and sesame. 
 
Once crumbly, add the water in small portions, making sure to mix well between each. 
 
Knead the dough until it is uniform. It will be a bit sticky. Let rest covered 10 minutes. 
 
Knead again to form a smooth bowl, and let rest, covered, for another 30 minutes. 
 
On a lightly floured surface, roll out the dough to a 16x24 inch rectangle, as thin as possible. 
 
Cut the rectangle lengthwise along the longer side to divide it into 2 even rectangles. 
 
Lay them on top of each other and repeat. You will have 4 strips. 
 
Fold each strip lengthwise and slice it very thinly from the folded side, making sure not to slice all the way to the fold. 
 
Divide each strip into 1 1/2-inch-wide pieces roughly. 
 
For each 1 1/2-inch piece, open the fold and stick each corner on top of its opposite to shape it into the final shape. 
 
Over a medium-low flame, heat oil in a pan for deep frying. 
 
When it reaches 260°F, start adding the dough. Let it float for a minute, then flip.
 
Once golden, let cool on a towel-lined tray and enjoy the crunch! 
 
Tip: Don't skip letting the dough rest. This will make sure your final product comes out right.

 

Note- If you find it tedious to shape like it is shown, simply roll into thin roti, cut into diamond shapes and fry till crisp.
