Roti Pizza ( Left-over Roti Pizza)

Ingredients

  • roti 
  • cheese slice
  • onion finely chopped
  • capsicum chopped
  • sweet corn
  • tomato chopped
  • paneer, cubes
  • mixed herbs
  • chilli flakes
  • cheese, grated
  •  

    Preparations 

  • Heat a pan and add a little ghee. Place one roti on the pan.
  • Once the roti is slightly warm, flip it and place cheese slices on top. Spread the cheese to cover the roti completely, creating a cheesy crust.
  • Place another roti on top. Apply a little ghee and roast until the bottom turns slightly crisp.
  • Flip the roti stack carefully.
  • Spread pizza sauce evenly on top. (You can use homemade or store-bought sauce.)
  • Add a layer of grated cheese.
  • Top with vegetables of your choice, such as onion, capsicum, corn, and tomato. Add paneer cubes if desired.
  • Sprinkle mixed herbs and chilli flakes.
  • Add more cheese on top for an extra cheesy texture.
  • Cover and cook on low flame for about 5 minutes, or until the cheese melts completely.
  • Remove from the pan, slice, and serve Roti Pizza hot.

    Pearl Millet Roti

     Ingredients

    1/4

    Add hot water gradually to the sieved pearl millet flour (and salt, if using). Knead into a smooth, soft dough.

    Divide the dough into equal portions and shape into round balls.
    Place a dough ball on a polythene sheet and flatten it into a round roti using a rolling pin or by gently pressing with your palm.
    Heat a tawa well. Carefully transfer the roti onto the hot tawa.
    Cook on both sides. Serve hot with any curry or dal

    Peanut butter-banana roti roll

     You'll need:

    1 roti/chapati
    1-2 tbsp peanut butter
    1 banana
    1 tsp honey (optional)

    How to make it:

    Spread peanut butter over a warm roti, place a banana in the centre, drizzle honey if you like and roll it up. Sweet, energy-packed and perfect if you need something on the move.

    Veg Stuffed Chessy Tacos

     Ingredients and Preparations

    left-over rotis

    oil 1 tbsp 

    garlic 1 tsp ( optional) 

     onion finely chopped 1 

    tomato 1 finely chopped

    capsicum 1 finely chopped

    corn 2 tbsp

    green chilies 2-3 finely chopped as per taste

    grated cheese as desired

    chili flakes as desired

    potatoes boiled and mashed  as needed 

    masala as per your taste

    butter to fry 

    heat oil in a pan 

    add garlic, fry for 2 minutes

     add onion, little salt to fry till transparent

    add tomatoes and rest of the veges, fry for 2- 3 minutes

    spread some mayonnaise/ tomato sauce, spread on the roti

    spread the veges on one half of the roti, spread some cheese

    fold the roti , press a little

    heat little butter put the folded roti, cook on one side pressing it down

    turn the roti to fry on the other side till crisp

    serve it hot with some chutney/ sauce.

    4-Ingredient Bean Roti

     4-Ingredient Bean Tortillas 

    Ingredients

    15 ounce canned chickpeas

    olive oil 3 tbsp

    all purpose flour 2 1/4 cups 

    salt if needed 

     

    Preparations

  • In a large food processor bowl. Add the can of chickpeas with the liquid from the can – if no added salt, oil, and salt if used.
  • Process on high speed, until it forms a smooth, yellowish, fine batter.
  • Add flour, olive oil, and salt if used. Process again on medium-high until a slightly sticky dough ball forms. The dough should be soft and moist, not overly wet or dry.
  • Sprinkle some flour on your work surface, lightly oil your hands to grab the dough so it doesn't stick to your fingers, and place it on a floured surface.
  • Sprinkle extra flour on top of the dough ball and knead a few times, adding more flour if needed(I added 1-2 tablespoons max), just to form a smooth dough. Cover with a towel and set it aside for 10 minutes to relax.
  • Cut the dough into 15 equal pieces, roll each piece into a ball.
  • Roll each ball on a floured surface, using a rolling pin, adding more flour on top as you roll to prevent the tortillas from sticking to the rolling pin. You can also use a tortilla press if you have one. Roll into a thin 3.5-inch wide (10cm).
  • Warm a non-stick pan on medium-high heat. Add the rolled roti, cover with a lid, and cook for 2 minutes until you see bubbles forming on top of the roti.
  • When bubbles appear, remove the lid, flip the roti, and cook it for another minute on the other side.
  • Repeat until all the rotis are cooked. Stack up the cooked rotis on a plate, cover with a piece of foil to keep them warm and soft.

    Veg Kathi Roll

    Ingredients:

    For filling:

    1 cup mixed vegetables (capsicum, onion, carrot – thinly sliced)

    ½ cup paneer (small cubes or strips)

    1 tsp ginger garlic paste

    ½ tsp red chili powder

    ½ tsp garam masala

    Salt

    1 tsp chaat masala

    1 tbsp oil

    For roll:

    • 2 paratha or rumali roti
    • Green chutney
    • Tomato ketchup or mayonnaise
    • Sliced onion
    • Lemon juice

    Method:

    Prepare Filling

    1. Heat oil in a pan on medium flame.

    2. Add ginger garlic paste and cook for 30 seconds.

    3. Add sliced onion and cook till slightly soft.

    4. Add capsicum and carrot. Cook 2–3 minutes (do not overcook).

    5. Add paneer, salt, chili powder and garam masala.

    6. Mix gently and cook 2–3 minutes.

    7. Sprinkle chaat masala and switch off the flame.

    8. Add a few drops of lemon juice.

    Prepare Paratha

    1. Heat paratha on tawa.

    2. Cook both sides of the till a light brown.

    3. Keep warm.

    Assemble Roll

    1. Place the hot paratha on a flat surface.

    2. Apply green chutney and a little ketchup or mayo.

    3. Add cooked filling in the centre.

    4. Roll tightly, wrap around a paper napkin to serve.

    Gluten-free High fiber roti

     Ingredients and Prep

    Carrots 1 big peel, chop roughly add to a blender jar with 1''ginger chopped

    Blend to a fine paste adding roughly 1/3 cup water

    Pour it in a bowl

    Powder 250 gm oats to a fine powder

    Add salt, pepper/ chili pdr , jeera pdr to the carrot mixture

    Add oats flour little at a time for you to mix well, add the entire flour  and mix well

    Add about a tbsp of oil, mix well, knead to a soft dough.

    Cut into small balls, roll out into thin rotis, cook on hot tawa, without putting oil/ ghee. Spread some ghee later on.

    You can make with spinach and others in the same way with oats.

    Leftover roti Tacos !

    At times we've left-over roti, some dry veges, all that can be used to make a quick snack. Whatever veges you've mash it well, add some finely chopped onion, finely grated carrot, add salt, chili pdr and other preferred masalas to taste, along with chopped coriander leaves.

    Heat a pan/ tawa, spread some oil./ ghee,  flatten the veges to the size of the roti, OR make with the veges like a thick cutlet, put a roti on top press it well, the veges will spread all over the roti. Now cook the vege- side down, press it on top well, after 2-3 minutes on medium flame, it will get cooked well, flip it, cook the roti side for a minute, then fold into half, you may spread some mayo, sauce of your choice, some cheese and salad and serve hot to the family. It will be a hit. Your family will now ask you to make extra rotis to make tacos !

     

    Important tip- How to have boiled potatoes always handy !

    Whenever, I use pressure cooker to cook, rice, lentils, I wash and cook few potatoes along with it. Once the pressure is released, keep the potatoes out, let the water drain, then keep it in a bowl, without peeling the potatoes, it will come in handy, like to make cutlet for tacos, or use to make quick poha. It will last more than a week in the fridge.

    Besan Ki Roti

     Ingredients

     GLUTEN-FREE Version 

    • 1 Cup Gram Flour/Chickpea Flour (Besan)
    • 1/2 Cup Any Glutenfree Oats Flour 
    • 2 Tbsp Oil -
    • 4 Tbsp Fresh Coriander – Chopped
    • 1 Large Green Chili –finely Chopped
    • 11/2 Tsp Carom Seed (Ajwain)
    • 1 Tsp Salt – As per taste
    • 1/2 Cup Water – Keep 2-3 tbsp extra

     REGULAR Version (with whole wheat flour)  -

    • 1 Cup Gram Flour/Chickpea Flour (Besan)
    • 1/2 Cup Whole Wheat Flour *
    • 2 Tbsp Oil - any light oil can be used
    • 4 Tbsp Fresh Coriander – Chopped
    • 1 Large Green Chili – finely Chopped
    • 11/2 Tsp Carom Seed (Ajwain)
    • 1 Tsp Salt – As per taste
    • 1/2 Cup Water – Keep 2-3 tbsp extra

    Instructions

     The Process of Making the Roti is Same for Both Version  (Choose as per convenience/need)

    In a food processor with dough attachment, add all the above-mentioned ingredients and pulse to form a smooth and pliable dough. (Takes about 5 minutes or you can make the dough by hand)

    Make 8 round balls out of the formed dough and using a rolling pin, roll them into disc shape using dry flour.

    Heat a nonstick pan/ tawa on high flame for 2 minutes and then reduce the flames to medium.

    Place one of the rolled roti on it. Turn the roti to another side after 1minute (Side up will have bubbles and brown spots).

    After both sides are browned for 1 minute each, remove the pan and put the roti on high flame, keep tossing it on both sides till they fluff up and evenly golden brown.

    Remove Roti and place into serving the dish. 

    Roll out rest of the dough and cook in the same way, you can apply some ghee on each and serve with dal , pickle and some dry veges.

    Leftover Roti MilkCake

    Ingredients

    Roti  2
    Milk pdr  50 gm
    pista / nuts chopped to garnish
    sugar  50 gm
    cardamom pdr  1/2 tsp
    milk  1 cup

    Method

    1. Grind the roti in fine powder.

    2. Then take a kadai and put sugar in it,when it gets melt and turns into golden colour add milk in it.

    3. Then add roti and milk powder in it and mix it properly till it gets thick and leaves the sides of the pan. Add cardamom pd and mix it.

    4. Take it out and spread on a greased tin/ plate.Garnish with pista flakes and then cut into pieces to serve.

    Jowar roti

     Ingredients

    • jowar flour: 1 cup
    • Warm water: As needed
    • A pinch of salt (optional)

     Jowar

    Method

    • In a mixing bowl, add jowar flour and a pinch of salt.
    • Add some warm water and knead it into a soft dough.
    • Divide the dough into small balls.
    • Roll each ball into a flat, round roti using a rolling pin.
    • Heat a tawa (griddle) on medium heat and cook the roti on both sides until light brown spots appear.
    • Serve hot with your choice of curry or vegetables.
