Blueberry Cobbler Energy Balls

Ingredients

1 cup plus 2 tablespoons unsweetened dried blueberries, divided

¾ cup old-fashioned rolled oats

¾ cup smooth natural almond butter or sunflower seed butter

½ cup chopped dried figs

½ cup chopped pecans, toasted (see Tip)

3 tbsp chia seeds

2 tbsp honey

tsp vanilla extract

¾ tsp cinnamon pdr

tsp salt

¼ cup white chocolate chips


Preparations

Finely chop 2 tablespoons blueberries; set aside. Combine the remaining 1 cup blueberries, oats, almond butter (or sun butter), figs, pecans, chia seeds, honey, vanilla, cinnamon and salt in a food processor. Pulse until finely chopped, 10 to 20 pulses; then process until the mixture is crumbly but can be pressed to form a cohesive ball, about 1 minute, stopping to scrape down the sides as needed.

Using wet hands to prevent the mixture from sticking, squeeze and roll the mixture into 32 balls (about 1 tablespoon each); place in a single layer on a parchment-paper-lined baking sheet.

Place white chocolate chips in a small bowl; microwave on High in 30-second intervals, stirring after each interval, until melted and smooth, about 1 minute, 30 seconds total. Drizzle the melted white chocolate over the energy balls; sprinkle with the reserved chopped blueberries.

Energy Balls

Ingredients

  • cups dried figs, stemmed

  • 1 cup pitted dried dates

  • cups old-fashioned rolled oats

  • 3 tbsp unsalted smooth almond butter

  • 2 tbsp flaxseed

  • 1 tbsp orange juice

  • 1 tbsp vanilla extract

  • ¾ tsp ground cinnamon

  • ¾ tsp salt

     

    Method 

    Place 1½ cups figs and 1 cup dates in a medium heatproof bowl; cover with hot water. Let stand at room temperature until slightly softened, 20 to 30 minutes. 

    Line a baking sheet with parchment paper. Drain figs and dates; transfer to a food processor. Pulse until coarsely chopped, about 5 pulses. Add 1½ cups oats, 3 tablespoons almond butter, 2 tablespoons flaxseed, 1 tablespoon each orange juice and vanilla and ¾ teaspoon each cinnamon and salt; pulse until well combined, about 25 pulses, stopping to scrape down sides of bowl as needed. Using a cookie scoop or your hands, scoop the mixture into about 1½-tablespoon portions; roll with your hands into smooth balls.  

    Place the balls on the prepared baking sheet. Cover and refrigerate until chilled, at least 1 hour.

     

    Note- Refrigerate fig energy balls in an airtight container to keep them fresh for about 1 week. For long-term storage, you can freeze them in airtight freezer-safe bags for up to 3 months. When you’re ready to enjoy them, simply thaw as needed. 

    If you have leftover dried fruit from this recipe, you can slice it up and add it to salads, yogurt, overnight oats, cakes, breads, bars, trail mix—or simply snack on it as is.

    The type of oats you use is important. We recommend using old-fashioned rolled oats, as they are thinner and easier to eat in recipes where you are using uncooked oats for the best texture.

Energy balls with dates and a melting peanut butter heart

To fill up on energy before a workout or a busy day, make these Energy balls with a good taste of chocolate, hazelnut and peanuts (which very clearly reminds us of the Snickers chocolate bar)! Naturally sweetened with dates, this vegan recipe is perfect as a healthy snack. From now on, you no longer need to buy ready-made Energy balls, they will be even more delicious homemade, especially with this melting heart with peanut butter!

 

Ingredients

    • Energy balls with dates and a melting peanut butter heart - Preparation step 1Arrange the hazelnuts on a baking sheet covered with parchment paper and roast them in a preheated oven at 390°F (200°C) for 10 minutes.
