Cloud Bread - Carb n Gluten free bread

I didn't think it possible to prepare bread with no carbs, but this recipe proved me wrong. Known as cloud bread, this carb, and gluten-free bread is soft, airy and fluffy, and so delicious - it practically melts in your mouth. It is an ideal replacement for traditional homemade bread, and it is also high in protein. 
 
So how do you make it? 
All you need is three ingredients: eggs, cream cheese and cream of tartar. The recipe below includes a couple of optional ingredients too - bits of rosemary were added for a more flavorful kick. The result? Patty-shaped bread, or as the name implies, clouds.

Ingredients
 
3 eggs, separated 
3 tbsp cream cheese 
1/4 tsp baking powder (or cream of tartar) 
 
Optional: 
1 tbsp of honey (or a natural sweetener)
Salt 
Garlic Powder 
Rosemary

Instructions:
 
1. Preheat the oven to 300°F. Meanwhile, separate the eggs, removing the yolk from the white. 
 
2. In one bowl, mix the egg yolks, cream cheese, and honey until smooth. 
 
3. In the second bowl, add 1/4 teaspoon baking powder (or cream of tartar if using) to the whites and beat the whites on high speed until they are fluffy, with firm peaks. The egg whites should have a whipped cream consistency.
 
4. Then, fold the egg yolk mixture into the egg whites carefully and slowly, retaining, as much as possible the fluffiness of the egg whites. Do not let the mixture melt. 
 
5. Spoon the mixture into 10-12 even rounds on a baking sheet and sprinkle with rosemary (if using) and put in the oven. 
 
6. Bake the bread for 17 to 20 minutes on the middle rack, then broil for 1 minute until they become golden brown. 
 
7. Remove from the oven, leave to cool and enjoy. 
 
Storage: Cloud bread may be stored in a container for three days on the counter and seven days in the refrigerator. It can also be stored in the freezer. 
 
Enjoy! This guilt-free treat works great as a hamburger bun or sandwich bread. You can toast it and enjoy with jam for a tasty breakfast.

Almond Joy Cake

 Ingredients:
1 ½ cups heavy cream
2 cups semi-sweet chocolate chips
5 eggs, separated and room temperature
2 cups granulated sugar
½ cup unsalted butter, softened
½ cup vegetable oil
1 tsp coconut extract
½ tsp vanilla extract
¼ tsp almond extract
2 ¼ cups cake flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1 cup buttermilk, room temperature
2 cups sweetened flaked or shredded coconut
¼ tsp cream of tartar
4 ounces cream cheese, softened
½ cup powdered sugar
¼ cup heavy cream
8 ounce tub whipped topping
¼ cup sliced almonds, toasted


Directions:

Preheat oven to 325°F. Spray three 9-inch cake pans with cooking spray and line with parchment paper.
Beat sugar, butter, and oil until blended. Add egg yolks and extracts, beating well. Mix dry ingredients separately and alternate with buttermilk into the creamed mixture. Stir in coconut.

Beat egg whites with cream of tartar to stiff peaks and fold into the batter. Divide into pans and bake 25-30 minutes.
For frosting, beat cream cheese, sugar, cream, and extract until fluffy. Fold in whipped topping and coconut.
Assemble cake with layers of ganache, frosting, and almonds. Top with more ganache and almonds.

Coffee Mousse

 INGREDIENTS

heavy cream  1 cup

sugar 6 tbsp

cocoa pdr  1 tbsp

eggs 4 separated

coffee pdr  2 tbsp

gelatin  1 1/2 tsp

 

METHOD

soak gelatin with 1/4 cup cold water for 10 minutes

separate white & yolk of eggs and keep in separate bowls.

heat the cream in a pan with coffee and cocoa powders on low heat till it dissolves.

don't boil it.

whisk egg yolks and sugar together for some time, pour some hot cream while whisking.

heat the cream again with whisked egg yolks and  heat on low heat, remove and pour in a large bowl

add soaked gelatin to the cream mixture and mix well. keep it aside to cool.whisk egg white in a large bowl till it stands till soft peak forms.

after the cream cool down, mix the egg whites with it with cut and fold method.

set the dessert in small cups or bowls in the fridge for 2 hours

once set and ready to be served, garnish with some grated chocolate, nuts and cherries and serve.

Magic Custard Cake

Ingredients

4 eggs (whites separated from the yolks), room temp
1 tsp vanilla extract
¾ cup sugar
125g (4.4oz) butter, melted
¾ cup plain flour
2 cups milk, lukewarm
icing sugar, for dusting


Instructions

Preheat oven to 160˚C (320F) or 140˚C (280F) Fan-forced. Line a square cake pan with baking paper.

Separate the eggs. Add the egg whites to a mixer and beat until egg whites are stiff. Place beaten egg whites in a bowl and set aside.

Beat egg yolks and sugar until light in color. Add butter and vanilla.

Beat 2 minutes. Add flour and mix it until fully incorporated. Slowly add the milk and beat until everything is well mixed together.

Add the egg whites, a third at a time and gently fold them in using a whisk, repeat until all egg whites are folded in.

Pour batter into a baking dish and bake for approx 60 minutes or until the top is lightly golden. (Wendy has a hot oven and it was ready in 40 minutes).

It will feel set when you press it. Cool and dust heavily with icing sugar.( I leave it in the fridge overnight and cut it the next morning.)

Store in a container in the fridge. This recipe is not suitable to freeze.
