Hassleback Sweet Potato in Air Fryer

  

 

Ingredients

1/2 

Boil the sweet potato to one whistle in cooker.
Do not over boil it because we have to cut it also.
Now peel all the sweet potatoes.
Mark cuts the sweet potato in equal proportions. Now pre heat the air fryer on 120 degree temperature for 2 minutes.
Place a foil paper on the base and then put 2 to 3 sweet potato on it.
Sprinkle half of the salt, anardana powder on it.
Air fry it on 150 degree temperature for 4 to 5 minutes.
In the mean time, take a small pan, add one tablespoon olive oil in it.
Let it be heated on low flame for half minute and add tomato puree in it.
Let it be cooked for one minute.
Add soya sauce, salt and chili flakes in it.
Cook it for 1 minutes more and off the flame.
Now take the sweet potatoes out and sprinkle red chilli flakes on it.
Squeeze lemon on it and a bit of coriander chutney.
Garnish it with coriander chutney and tomato chutney.
You hassle-back sweet potato is ready to eat. Serve hot.

" KOTHAMBILI THUGAYAL" OR CORIANDER LEAVES CHUTNEY

INGREDIENTS
oil 1 tbsp
mustard seeds 1/2 tsp
urad dal 1 tbsp
hing little
ginger 1" cut into small pieces
green chilies 3-4 chopped or as per taste
coriander leaves washed and roughly chopped 1 cup
coconut grated( fresh)  1/2 cup
tamarind paste 1 tsp or to taste or little tamarind
salt to taste

METHOD
heat oil, add mustard seeds, once it crackles, add urad dal, once light golden, add ginger, green chilies, hing, fry for a minute, add coriander leaves, fry for 3-4 minutes on low flame, then add coconut and tamarind, fry for another 2 minutes, remove, cool, add salt and grind to a fine paste. In case you want to take this chutney while traveling to eat, then grind without adding water, you may add little oil.

This goes well with rice, dosai, idli, roti, bread. This is rich in vitamin C from green chilies and coriander leaves, fibre also from ginger and leaves, Vitamin E from coconut, protein from dal, for digestion you've hing and ginger !

HEALTHY OATS BHEL

Ingredients
1 cup puffed wheat (churmure)
½ cup oats
1 cup onion finely chopped
1 tomato finely chopped
1 small cucumber finely chopped
1 small boiled potato finely chopped
1 tsp coriander chutney
1 tbsp dates and tamarind chutney
1 small green chilly finely chopped
½ tsp lemon juice
Salt to taste

Method
Empty the vegetables and chopped green chilly in a large bowl
Garnish with coriander leaves, chutneys, salt and lemon juice.
Just before serving, add puffed wheat and oats.
Toss well to mix the ingredients and serve in individual bowls.
