13 Bread-less Sandwich Ideas

 Just because you’re on a diet doesn’t mean you have to ditch your favorite foods. There’s nothing better than a juicy sandwich. If you’re trying to lose weight, wish to take a break from bread, or you're just out of bread in the house, why not try these innovative alternatives? These mouthwatering dishes are easy to make and are suitable for the whole family.

1. BLT Spring roll alternative-sandwiches 

 Replace bread with rice paper for a different take on your traditional BLT. Season with fresh basil and mint.

2. Tomato bun sloppy joe

Instead of putting your meatball in a bun place it between large tomato halves. Spread mayonnaise or Greek yogurt over your meatball and add alfalfa sprouted seeds. 

3. Cucumber turkey subs

Replace your footlongs with cucumbers. Scoop out the seeds in the center, spread mustard and white cheese and add slices of turkey. 

4. Portobello mushroom sandwich

For this mouthwatering sandwich grill 2 large Portobello mushrooms. Spread garlic and pesto. Add mozzarella cheese, basil leaves and tomato slices. 

5. Eggplant and avocado sandwich

Place pieces of eggplant under a broiler for 2 minutes. Remove and cool. Layer tomato, avocado, lettuce and mustard. Cut in half. 

 

 6. Bell pepper sandwich

Cut a bell pepper down the middle and cut off the top. Add strips of avocado, lettuce or seaweed strips and turkey slices. 

7. Halloumi slice sandwich

Grill slices of halloumi cheese until they are firm. Layer cold cuts, tomatoes, shredded lettuce, and roast peppers. Drizzle olive oil and red wine vinegar for added flavor. 

8. Spinach leaves with corned beef and cheese

Lightly steam collard leaves. Wrap these around rolled up corned beef, sauerkraut, and Swiss cheese. You can dip in Russian dressing while eating. 

9. Tofu slices with ham and cucumber center

 Fry slices of tofu in olive oil or butter on both sides until they are a light golden brown. Once cool, spread mayonnaise and add slices of ham and cucumber. 

10. Eggplant stacks with sweet potato filling

Slice eggplant, add salt and pepper and shallow-fry in olive oil. Stir-fry cubes of sweet potato with diced mint leaves and crumbled feta in butter. Layer this in between your eggplant slices. 

11. Chicken salad in a lettuce taco

Grill strips of chicken breasts in balsamic vinegar. Drizzle the chicken strips with tzatziki, and add this to the lettuce tacos. Garnish with tomatoes, red onions, feta cheese, olives, basil, oregano and red wine vinegar.

12. Salami and ham wrap with spinach filling

Wrap sweet ham and salami slices around slices of tomato, spinach leaves, and sliced banana peppers. Dress with mayonnaise, mustard and dried oregano. 

13. Caprese salad sandwich

Layer sliced tomatoes with slices of caprese cheese and asparagus. Dress with olive oil and cut in half.

NOTE- one can always substitute non-veg with veg of your choice, or use lentils, paneer to make filling.

Mango Salad

 Mango Salad (Southeast Asia):  

Ingredients 

ripe mangoes peeled and diced

1 bell pepper diced

cucumber diced

½ red onion thinly sliced

½ cup fresh basil sliced

Homemade Dressing
 
3 tbsp lemon juice
 
 
 
 
tbsp honey if vegan, or maple syrup
 
 
 
 
tbsp avocado oil or olive oil
 
 
 
 
1tbsp fresh ginger root grated or minced
 
 
 
 
¼ tsp red chili flakes
 
 
 
 
¼ tsp salt
 
 
 
 
 
 
Method
 
 
 
 
In a large serving bowl, combine the mango, bell pepper, cucumber, onion and basil. Mix well. 
 In a small bowl, combine the lemon juice, sweetener, oil, ginger, red chili flakes and salt. Whisk until smooth.  

  

 

Pour the dressing over the salad, then toss to coat. Mix and serve at once.

Notes

Alternatively, to save dishes and time, you can just combine all of the ingredients in a bowl and mix until thoroughly combined.

Rainbow Grain Bowl with Cashew Sauce

This colorful grain bowl is packed with nutrient-rich vegetables, providing a variety of vitamins and minerals.

Quinoa and lentils are both great sources of protein and fiber to keep you satisfied longer.

The cashew sauce offers creaminess without dairy.

 

Ingredients

¾ cup unsalted cashews

½ cup water

¼ cup packed parsley leaves

1 tbsp lemon juice or cider vinegar

1 tbsp extra-virgin olive oil

½ tsp reduced-sodium soy sauce 

¼ tsp salt 

½ cup cooked lentils

½ cup cooked quinoa

½ cup shredded red cabbage

¼ cup grated raw beet

¼ cup chopped bell pepper

¼ cup grated carrot 

¼ cup sliced cucumber

1 tbsp Toasted chopped cashews for garnish

Preparations
 
Blend cashews, water, parsley, lemon juice (or vinegar), oil, soy sauce and salt in a blender until smooth. 

Place lentils and quinoa in the center of a shallow serving bowl. Top with cabbage, beet, pepper, carrot and cucumber. Spoon 2 tablespoons of the cashew sauce over the top (save extra sauce for another use). Garnish with cashews, if desired.

Anti-Inflammatory Farro & White Bean Salad

Ingredients

2 cups water

¾ tsp salt, divided

1 cup pearled Italian farro, rinsed ( whole grain)

¼ cup extra-virgin olive oil

¼ cup white-wine vinegar

1 tbsp Dijon mustard

1 tsp dried oregano

1 tsp lemon zest

1 tbsp lemon juice

¾ tsp honey

1 clove garlic, grated

1⅓ cups chopped red bell pepper

1⅓ cups chopped cooked peeled red beets

2 (15-ounce) cans no-salt-added great northern beans, rinsed

4 cups packed baby arugula

4 tbsp roughly chopped fresh mint

4 tbsp unsalted roasted sunflower seeds

½ cup crumbled feta cheese

Directions

Bring 2 cups water and ¼ teaspoon salt to a boil in a medium saucepan over high heat. Add rinsed farro; reduce heat to medium-low, cover and simmer, undisturbed, until the farro is tender and the water is absorbed, 20 to 30 minutes. Fluff with a fork, then spread the farro evenly on a large rimmed baking sheet; refrigerate, uncovered, until completely cool, about 30 minutes.

Whisk ¼ cup each oil and vinegar, 1 tablespoon mustard, 1 teaspoon each oregano and lemon zest, 1 tablespoon lemon juice, ¾ teaspoon honey, grated garlic and the remaining ½ teaspoon salt in a small bowl until well combined. Divide the mixture among 4 (1-quart) Mason jars (about 2 tablespoons each).

Divide red pepper (about ⅓ cup each), beets (about ⅓ cup each), beans (about ¾ cup each) and cooled farro (about ¾ cup each) among the jars. Top each with 1 cup baby arugula; add 1 tablespoon each mint and sunflower seeds. Divide feta evenly among jars (about 2 tablespoons each).

Cover the jars and refrigerate. When ready to eat, shake the jar until the vinaigrette is evenly distributed; stir to combine the ingredients, if needed.

 Crispy Peanut Tofu With Sugar Snap Peas And Peppers 

Ingredients

  • 1 cup long-grain white rice

  • 1 1/2 tsp kosher salt, divided

  • 14 oz extra-firm tofu, drained

  • 3 tbsp canola oil

  • 3 cups sugar snap peas

  • 1 bell pepper, cut into 1/4-inch strips

  • 3 tbsp creamy peanut butter

  • 2 tsp maple syrup

  • 2 tsp rice vinegar

  • 1 tsp sriracha

  • toasted sesame seeds, for topping

 

Preparations

Cook rice according to package directions, using 1/2 teaspoon salt.

Meanwhile, cut tofu into 1-inch cubes. Place on a baking sheet or cutting board lined with 2 layers of kitchen towels; cover with 2 more layers and press to squeeze out excess water. Sprinkle tofu with 3/4 teaspoon salt.

Heat 1 tablespoon oil in a large nonstick skillet over medium high until shimmering. Add tofu; cook until golden brown and crisp, about 5 minutes per side. Transfer to a towel-lined plate.

Add 1 tablespoon oil to skillet. Add peas; cook, stirring occasionally, until beginning to brown, 1 to 2 minutes. Add bell pepper; cook, stirring occasionally, until bell pepper is lighter in color and crisp-tender and peas are blistered, 3 to 4 minutes. Sprinkle with remaining 1/4 teaspoon salt, tossing to coat.

Mix peanut butter, syrup, vinegar, and sriracha in a medium bowl. Gradually stir in 2 tablespoons warm water to make sauce pourable. Add tofu and toss until well coated. Serve tofu and vegetables over rice. Sprinkle with sesame seeds.
