. Kerala’s Crispy Chakka Cutlet

Ingredients

300 gm raw jackfruit, boiled and mashed

2 potatoes, boiled and mashed

2 green chillies, finely chopped

1 tsp ginger, grated

8-10 curry leaves, finely chopped

½ tsp garam masala

½ tsp black pepper powder

Breadcrumbs for coating

Oil for shallow frying

Salt to taste

Method

Mix mashed jackfruit and potato.

Add green chilli, ginger, curry leaves, garam masala, pepper and salt. Mix well.

Shape into round or oval cutlets.

Coat each cutlet evenly in breadcrumbs.

shallow-fry over medium heat until golden and crisp on both sides.

Serve hot with coconut chutney.

Beetroot Cutlets

 beetroot cutlet recipe from hebbarskitchen.com 

Ingredients 

beetroot grated 2 cups

¼ onion finely chopped

turmeric pdr 1/4 tsp

Kashmir red chili pdr 1 tsp/ red chili pdr

jeera pdr 1/4 tsp

coriander leaves finely chopped 2 tbsp

garam masala 1/2 tsp

amchur pdr 1/2 tsp

potato 1 big boiled and mashed

chaat masala 1/2 tsp

ginger-garlic paste 1/2 tsp 

salt to taste

breadcrumbs 1/4 cup 


other ingredients:

2 tbsp corn flour 

1 tbsp maida / all purpose flour 

pepper pdr 1/2 tsp

salt 1/4 tsp

water 1/4 cup

breadcrumbs 1 cup

oil for frying 

 Instructions

 in a large mixing bowl squeeze off juice from 2 cups of grated beetroot.

add  boiled and mashed potato

also add ¼ onion and all spices.

add in ¼ cup bread crumbs add 2 tbsp coriander leaves.

combine well making sure all the spices are mixed well and dough is formed.

further prepare the patties from beetroot dough.

dip in corn flour batter covering both sides.

then roll in bread crumbs on both the sides.

 deep fry / shallow fry or pan fry the patties in hot oil. alternatively, preheat and bake at 180 degree Celsius for 25 minutes.

flip and fry both the sides on medium flame till it turns golden and crisp.

finally, drain over kitchen paper to remove excess oil and serve beetroot cutlet or beetroot patties with tomato sauce.

Variations

You may add boiled and mashed green peas / grated carrot / soaked and squeezed soya granules. 

You can boiled and mashed green beans, instead of potato, you can either grate or boiled and mashed raw banana.

Spinach-corn cutlets

 Ingredients and Prep

spinach washed and chopped 2 cups

boiled and crushed sweet corn 1 cup

Boiled potato 1 big / 2 small, peeled and mashed

salt to taste

ginger-green chili paste 1 tsp

garam masala 1/2 tsp

chaat masala 1/2 tsp

breadcrumbs 2-3 tbsp

cornflour 2-3 tbsp

oil for shallow frying

 

In a big bowl, add spinach, corn, potatoes, all the spices mix well.

add breadcrumbs mix well, add cornflour 2 tbsp first, mix well

the mixture should be able to hold, for you to flatten as a cutlet, if not add more cornflour

heat 2-3 tbsp oil in a pan , once hot, reduce heat to medium, shallow fry the cutlets, flipping till brown and crisp on both sides.

serve hot with green chutney / tomato chutney as desired

Cabbage cutlets

 Ingredients and Prep

cabbage 1 just cut into big rounds, removing the hard part

heat water in a big vessel, in which you can immerse the slices and cover it , simmer for 15 minutes

drain and chop them fine, keep in a big bowl

onions 2 finely chopped

carrot 2 finely grated

zucchini 1 grated ( optional)

oil 1 tbsp

salt and pepper to taste

you may add some green chilies or chili paste as per your taste

corn flour 2-3 tbsp OR rice flour  3-4 tbsp and some suji 1 tbsp OR use besan if you don't have rice flour

cheese about  100 gm grated

oil for shallow frying

in a pan, heat 1 tbsp oil, add onion, wee bit salt, as it turns transparent

add grated carrot and zucchini, mix add seasoning, cook covered for 3-4 minutes till soft

add the veges to the cabbage, add the flours, salt per taste, cheese, mix well

if you can't get the veges together, add more flour, so that you can shape into small round cutlets

heat oil in a pan, when hot add the cutlets and fry on medium flame till brown and crisp on both sides, drain and serve with chutney or ketchup as you like.

Foxtail Millet Vegetable Cutlet

  

 Ingredients

1/2 

In a vessel, cook foxtail millet by toasting it for a few seconds and cook it in 2 cups of water.
Boil potatoes, carrots and peas separately.
Mix 1 cup of boiled potatoes, carrots and peas to this millet.
Add besan to the mixture and bind it well. Do not add water.

Add the green chili-ginger paste, garlic, coriander leaves, salt mix well

Make round cutlets and shallow fry it till golden brown.

Veges-Spinach Cutlets

Ingredients: 

2-3 medium potatoes boiled and mashed

1 cup spinach finely chopped

1.5 cups mixed finely chopped veggies (anything like carrots, peas, cabbage, onions, beans etc.) 

2 tsp green chili and ginger paste

3 tsp freshly chopped coriander

Salt to taste

2 tsp cornflour 

Oil to shallow fry


Preparations

Take a large mixing bowl, and add the mashed potatoes along with the finely chopped veggies and finely chopped spinach. Now add the chili and ginger paste, salt and fresh coriander. Mix it all very well to get a smooth and uniform mixture. Now gently add some cornflour and mix that well as well. 

To make small tikkis out of it, use your palm, grease it slightly and roll out small coin-sized tikkis. Try to ensure no cracks are formed in the process, or else the tikkis may split inside the oil pan. 

Now take a thick pan and add some oil to it and heat it. Once the oil is hot enough, gently place the tikkis on it. Flip it on either side till it is golden brown. 

Remove and place on some absorbent paper to remove any extra oil. 

Serve with a mint and coriander chutney or tomato ketchup.

Bottle Gourd / Lauki Cutlets stuffed with figs !

 Bottle gourd is another vegetable which many don't like, it is supposed to be very good for diabetics, especially cook with skin they say, of course if the skin is tender only, else peel lightly. This vege can be made into nice halwa, once during Covid, I had made the halwa, then left it in the hot pan itself, it had become crisp, hubby loved it, said to always make like that only !

Ingredients

lauki/ bottle gourd 1 medium size peeled and grated

onion 1 big finely chopped

potatoes 2-3 boiled, peeled and mashed

green chilies finely chopped as per taste OR add only chili pdr

turmeric pdr 1/8 tsp

hing little

salt to taste

roasted besan 1/4 cup

jeera pdr

oil for shallow frying

figs 6-8 finely chopped

 

Method

in a pan roast the besan stirring till nice aroma comes , remove and cool

boil the lauki in just enough water till done, strain well and keep aside 

In a big bowl, mash the potatoes, add the onion chopped along with green chilies and other spices, mix well

add the drained lauki mix well, add besan mix well

shape into small cutlets stuff with figs, cover well, shallow/ deep fry as you wish.

Serve hot with green and tamarind chutneys.

Corn potato cutlets


 Yesterday evening I was hungry. I had kept some boiled corn in the freezer, after defrosting, I seasoned it but as I find it difficult to swallow the fibrous food, wondering what to do. As always, the boiled potatoes which I keep handy in the fridge came to my rescue, resulting in this simple cutlets.

Ingredients

boiled corn 1 cup

boiled potato 1 big

green chilies 1

salt and chili pdr to taste

rice flour 1-2 tbsp as needed

suji 1 tbsp

oil for frying 

 

Preparations

I crushed the corn in the mixer jar along with green chili.

I mashed the potato, added the corn mixture along with salt, chili pdr mixed well.

Felt it needed some binding added some rice flour, then to get  some  crispiness added some suji/ rava last, mixed all well.

Heated oil, made small cutlets, enjoyed it hot and shared it with my close friend.

Cabbage poha cutlets

 Ingredients

poha 1 cup

ginger-green-chili-garlic paste 1 tbsp 

coriander pdr 1 tbsp

jeera pdr 1 tsp

red chili pdr to taste

turmeric pdr 1/2 tsp

besan 3-4 tbsp as needed to bind

onion finely chopped 1 cup

cabbage finely chopped  1 cup

sesame seeds 1 tbsp 

salt to taste

for slurry

maida 2 tbsp

salt

water to make thick slurry 

oats crushed/ suji/ breadcrumbs salt, pepper pdr , sesame seeds 1 tsp

oil for shallow frying

 

Preparations

wash and soak poha in just enough water to soften it

once poha is soft, add the ginger-chili-garlic paste, onion, cabbage, spice powders, salt to taste mix well

add besan, sesame seeds, coriander leaves as needed to get the dough to bind 

heat oil 1-2 tbsp in a pan

make small cutlets with the above mixture

dip in slurry, then coat the cutlets well in crumbs/ rava to which salt, pepper pdr, sesame seeds are mixed well.

once well coated, shallow fry the cutlets on medium heat till crisp on both sides.

serve hot with chutney of your choice.

Ragi Cutlet


 

Preparations

Finely chop the onion and grate the carrot. Collect them in a bowl. Now peel the boiled potato and mash it roughly. Mix the mashed potato with the chopped veggies.

Now add ragi flour, salt, red chili powder, coriander powder, garam masala and garlic paste. Mix well to prepare a thick mixture. Add 3-4 tbsp water and again mix well.

Place the breadcrumbs in a plate. Make small cutlets from the mixture and roll them in breadcrumbs. Ensure that the cutlets are properly coated.

Heat oil in a pan and place the cutlets in it. Shallow fry the cutlets until golden brown from all sides.

Serve the cutlets with mint chutney or tomato ketchup.

Tips
  1. You can add spices as per taste you make the cutlets more delicious as per your taste buds.
  2. You can also air-fry the cutlets and add more veggies to make them more nutritious

Ragi pumpkin cutlets

 Ragi is an extremely nutritious millet. It is packed with calcium, iron, good carbs, amino acids and heaps more. Sprouting ragi not only boosts the nutritional profile, it is another easier way to incorporate this magic millet in diet and what better than making some healthy cutlets for tea time snack. It can be guilt-free, as it is not deep fried.

Ingredients

 
2 tbsp Ragi ( finger millet) Flour 

1/2 Diced Cup Pumpkin

1 tbsp Suji 

1tsp Ginger Garlic Paste

1 tsp Coriander Leaves 

1/4 tsp Red Chili pdr

1/4 tsp turmeric pdr

1/4 Tsp(1.0 gm) Salt

2 tsp Oil 

120 ml Water

 

Preparations

Boil 1/2 cup diced pumpkin.
In a bowl, add cooked pumpkin, 2 tbsp ragi flour, 1 tbsp suji, 1 tsp ginger garlic paste, 1/4 tsp
salt, 1/4 tsp turmeric pdr, 1/4 tsp red chili powder and mash the mixture well.
Add 1 tsp coriander leaves to the mixture and shape them into cutlets.
In a pan, heat 2 tsp oil and shallow fry till light brown.
Serve with sauce or chutney.
