Jalebi

 Fafda Jalebi


Ingredients:

1 cup maida + 2 tbsp cornflour

1 tbsp curd

½ tsp baking powder

1 tbsp ghee

water as needed 

Sugar syrup: 

1 cup sugar,

½ cup water,

saffron, cardamom, lemon juice

 

 

Method:

Make thick batter, ferment overnight.

Prepare sticky sugar syrup with saffron, cardamom, lemon.

Pipe spirals into hot oil/ghee, fry crisp.

Dip in warm syrup for 30 sec.

In Gujarat, Jalebi is served with Fafda, the recipe in the previous post.

Jalebi

  

Ingredients

The first step is to get the sugar syrup ready. In a saucepan, add the sugar and water just enough so that the sugar is covered. Put it on medium flame, and allow it to boil, until the sugar syrup forms a 1-string consistency. Once the required consistency is achieved, add the lemon juice, cardamom powder and saffron and allow it to cool.
 
To make the batter for jalebi, take a mixing bowl, add the maida, corn flour, and turmeric and mix well. Now add the curd and gently mix to get a lump-free smooth batter. For better results whisk the batter to make the batter nice and airy.
 
Heat some oil/ghee for frying the jalebis and complete the final preparations in the meantime. Add the lemon juice, and baking soda and mix quickly. Now transfer the contents into a whipping bag or a used plastic milk bag, or even in the bottle will do (poke a hole in the cap of the bottle.). Just before frying the jalebis, if you are using a milk bag cut a very small cut at the edge of the packet.
 
Now very gently pour the batter into the hot oil or ghee, try making concentric circles of the batter as you fry them. Once they are crispy fried on both sides, remove from the oil and immediately dunk into the sugar syrup that was prepared earlier.
 
Dip it for no longer than a minute and remove and relish it while it is hot and crispy.

Palm sugar Rabadi with Jalebi

   

 

Ingredients

Boil the milk well, stirring in between, until it reduces to half of its quantity.
 
 Add cardamom powder and palm jaggery to the milk. Boil it for a few more minutes. Rabdi is ready.
Make a thick batter of maida, rava, gram flour, baking powder, salt and orange food colour.
Heat oil and deep fry the jalebis on medium heat.
Make a sugar syrup with sugar and a little water, dip the jalebis in it for 2 to 3 minutes and then take out.
Cool it to room temperature and serve it with chilled rabdi.

Jalebis



Ingredients
1 cup all-purpose flour
2 tbsp yogurt
1/2 tsp baking soda
1/2 tsp turmeric/ kesar  powder
1/2 cup water (adjust for batter consistency)
2 cups sugar
1 cup water (for syrup)
1/4 tsp cardamom powder
Oil (for frying)
 
Method
In a mixing bowl, combine all-purpose flour, yogurt, baking soda, turmeric powder, and gradually add water to form a smooth, thick batter. Let it rest for 30 minutes.
Meanwhile, prepare the sugar syrup by boiling 2 cups of sugar with 1 cup of water until the sugar dissolves completely. Add cardamom powder and simmer for 5 minutes.
Heat oil in a deep frying pan over medium heat.
Fill a piping bag or squeeze bottle with the batter.
When the oil is hot, pipe the batter into swirling shapes (spirals) into the oil, frying until golden brown on both sides.
Remove jalebi from the oil, allowing excess oil to drain, then immediately immerse them in warm sugar syrup for about 30 seconds.

Transfer to a serving plate and enjoy the warm, crispy jalebis!

 

ps- if you don't have squeeze bottle or piping bag, just take a thick plastic bag, add the batter, make a small hole in a corner, through that make circles, then keep it in a glass to prevent it falling down.

Falahari Paneer Jalebi

Ingredients:

  • 200 g soft and creamy paneer (cottage cheese or chenna)
  • 1/4 cup water chestnut flour
  • 1 tbsp buckwheat flour
  • 1 cup sugar
  • 1 cup water
  • 1 tsp cardamom powder
  • Oil or ghee, for frying

Method:

  1. Crumble the paneer and blend it in a grinder to make a smooth paste.
  2. Add water chestnut flour and buckwheat flour to the paneer paste and blend again. Transfer the mixture to a bowl and add water to make a thick batter.
  3. For the sugar syrup, boil sugar and water together until you achieve a slightly sticky consistency (no need for string consistency).
  4. Heat oil or ghee in a pan. Fill a piping bag with the batter and pipe the batter into the hot oil to form jalebis. Fry until golden brown on both sides over low flame.
  5. Dip the fried jalebis in warm sugar syrup for 2 minutes. Garnish with silver vark (optional) and sliced pistachios. Serve and enjoy your falahari paneer jalebi!

Wonderful Kitchen Hacks

1) Easy way to remove egg-shells
just wet your fingers to easily remove egg shells from yolk and white

2) Easy way to make hash browns-
Use a waffle iron, easy without much mess !

3) Easy way to make omelette
Use a panini maker to  omelette fast and without any mess.

4)To make your kids eat eggs- make them as stars !
Put a star shaped cookie cutter in your fry pan and pour the eggs in it, voila ! you get star shaped eggs! 

5) Easy way to know if your egg is fresh or stale
In a glass or bowl of water, when you put the egg gently, fresh egg will sink, stale egg will float ! that easy.

6) You don't have to spend to buy equipment to make pancake or Indian dessert jalebi
All you need is your old, empty, clean ketchup bottle with a nozzle.

7) Easy way to cut a cake , cheese or other soft food
Take a thick thread, hold from both sides and when you slide on the side of the cake, there it cuts in exact shape without a mess or even for cheese. Go ahead and try it, you'll find it easier than using a knife !

8) To prevent ice-cream getting ice crystals forming in your ice-cream tub

By dropping ice cubes in the dish from which you want to remove fat, as all the fat will stick to the ice cubes, so easy to remove.

22) To prevent water or any liquid from boiling over-
place a wooden spoon across the pan, it will prevent liquid from boiling over.

23) Easy way to peel a ginger
All you need is a teaspoon as opposed to a peeler or a knife to avoid wastage.

24) To prevent banana from over ripening
Wrap cling film or plastic bag over the stalk, it will not over-ripe.
Don't worry, if your bananas are over-ripe, you can use it in stead of eggs when you bake, or you can use it to make pancake or Indian dessert appam/ kuli paniyarams ! or banana bread too !

25) Suppose you want your banana / papaya to ripen
wrap the fruits in a paper-bag or paper for a day or two.

26) Simple way to store tomatoes
just spread your tomatoes in bowl or rack. They remain good for a month too, if they're nice and firm.

GHIAR, A TYPICAL RAJASTHANI SWEET

INGREDIENTS

for sugar syrup
sugar  1 1/2 cup
water  1 cup
make one string syrup, keep it warm, adding whole cardamoms opened when you cook to get the flavour, you can add some saffron to get the rich colour too

for batter
maida  1/2 kg
curd  1 cup
water  2 cups
mix all well without any lumps, keep aside covered for 2 hours
then add besan 2 tbsp, 4 tbsp maida, kesar pdr. 1/4 tsp mix well
heat oil/ ghee in a kadai, to get the typical shape, you've to use your hands, keep a round rim, dip your hand in that batter, keep moving around within the rim, up and down then draw line horizontal and vertical, remove the rim, cook till it is crisp and golden on both sides, drain well, dip in syrup on both sides, remove, make all in the same way   OR
in case, you don't want to use your hands, you can put them in a thick sev mould & make design.

after all who is bothered about the shape, but taste should be good, isn't it ?!

this taste somewhat like jalebi and sweet sev.

Jalebi kulfi

Ingredients
Milk 1lt
Sugar  150 gm
Cardamom powder  1tsp
Khoya   200 gm
Saffron  A pinch
Pista chopped  2 tbsp
Jalebi 10 nos
Method
Mix all the ingredients together except jalebi and bring it to a boil. 
Simmer and cook till reduced to half. 
Remove and cool completely.
Break the jalebi and add to the kulfi mixture. 
Put this mixture in earthen pots or kulfi moulds.
Place the moulds in deep freezer for 5 hours. 
Remove and serve immediately.

Jalebi With Pudding

INGREDIENTS
Milk   1 cup 
Cream  1 cup 
Kewra essence  2 tsp 
Egg yolk  7-8nos 
Sugar   ½ cup 
Jalebi   2 nos

Method
Mix milk, cream and kewra together in a pan and bring to a boil; simmer for 2-3 minutes. Remove from fire.
Separately mix yolks and sugar in a bowl and whisk till all the sugar is dissolved. Now gently pour the milk over whisked eggs and keep whisking.
Now pour back the contents in the pan and simmer for 2-3 minutes.
 Keep stirring all the time. Remove from fire.
Strain the contents and pour in oven proof bowls. 
Drop jalebi in each of the bowls. 
Place these bowls in a deep roasting tray filled with hot water up till 3/4th mark of the cups.
Bake in a preheated oven at 160 deg. c for 35minutes or till it gets firm. 
Remove from oven and allow to cool. 
Now keep in refrigerator to completely chill it.
Serve chilled.
