Red Lobia ( karamani) - smaller variety of Kidney beans- carrot cutlet

I make chundal, it is basically boiling red lobia/ Azuki beans, then season it with mustard seeds and green chilies, salt. This is good for health, less calories, full of protein. When I made this the other day, husband who like only whole green moong dal chundal, ate little and it was left behind. You're all aware that I'm one who hates wasting food. Was asked him for the last 2 days, shall I make for you cutlet with it, he kept saying NO, so today quickly grated a big carrot, minced the boiled chundal along with a green chili in the mixier. I added rice flour, salt and some left over paneer burji. Mixed all well, shaped into rounds and shallow fried with hardly 2 tsp of oil in a non-stick pan, covered, turning it once the bottom was brown.

INGREDIENTS

left over red lobia boiled  1/2 cup

carrot 1 big grated fine

green chili 1

paneer burji 1/2 cup ( optional) as I had and wanted to use it.

rice flour about 1/2 cup

salt to taste

Mix all well, as I ground lobia in mixer jar without any water along with green chili. Added rest of the ingredients well, then shape as you desire.

Heat a pan/ tawa with little oil, put the cutlets once it is hot, cook on low flame, turn once the bottom is brown, add little oil as you flip over and cook till both sides are brown. Serve hot, can be eaten plain or with ketchup or chutney of your choice.

BEANS MASALA

INGREDIENTS
white beans / lobia/ karamani cooked 2 cups
oil   2 tsp
saunf / fennel seeds    1/2 tsp
cinnamon stick   1/2 "
curry leaves 1 sprig chopped fine
onion  1 big finely chopped
ginger-green chili paste   1 tbsp
tomatoes 2 finely chopped
chili pdr.    1/2 tsp or to taste
coriander pdr.  1 tsp
coriander leaves finely chopped 2 tbsp
capsicum 1 finely chopped
water as needed
salt to taste
hing 1/8 tsp


METHOD

heat oil, add saunf, cinnamon, fry, once aroma comes add curry leaves, ginger- chili paste or you may finely chop them too, add onion fry with wee bit of salt, once light pink, add tomatoes fry for 3-4 minutes on low flame, stirring often.
add spice powders,capsicum, fry for another 3 minutes on low flame, add cooked lobia or karamani with enough water and salt, along with half of the dhania, let it simmer for 4-5 minutes, remove garnish with remaining dhania and serve hot with rice / roti / toast.

Quick & healthy vadai !

for this vadai, I used  all left over things like-
 rice 1 cup
boiled white kidney beans/ lobia 2 tbsp
boiled black chana 2 tbsp
onions 2 big finely chopped
green capsicum 1 ground with green chilies to taste, ginger 2" & curry leaves 2 sprigs
besan/ chick pea flour 2 tbsp
corn flour 2 tbsp
salt to taste
fresh coriander leaves finely chopped 2 tbsp
oil to fry
potatoes 2 small boiled & smashed

Method
I ground kidney beans, chana, rice too, mixed all the rest with salt, don't add any water, add the flours, if sticky add some more flours.
Heat oil, make small flat vadas & deep fry in hot oil, it didn't take in oil at all !
It was really good, we loved it hot in the cold here !


ps- you can make this with left over rice, onion, green chilies, potatoes also, even if you don't have boiled kidney beans or chana, you may need to add some besan & cornflour to get the binding & to get the crispness from the cornflour.

Lobia salad or White kidney bean salad

The best way to make lobia salad is to make sprouts with it. To make sprouts with any whole lentil, wash & soak it over night, drain, tie it in a cloth & keep it covered for 2 days.
Sprouts are very healthy as the Vitamins B complex & Vit. C get enhanced, they're easy to digest too.

One way of making lobia salad is by sprouting, then cutting fine cucumber, onion, tomatoes, carrot  either a combination of all or whatever you like along with salt & pepper pdr to taste or those who like green chilies, you may cut them fine & add it, as green chilies are a good source of Vitamin C & with lime juice to taste.

Or you may pressure cook kidney beans till tender, then add finely cut vegetables of your choice along with salt & seasoning of your choice.

How to cook white lobia/ karamani

To cook white lobia, take the desired amount  that you want, wash & add enough water to cover it, pressure cook it for 3 whistles, drain & use as required. In case you're using for a gravy, then no need to drain off the excess liquid, as it can be used for gravy.

Healthy protein rich roti sandwich

Ingredients
Roti 6-8 or as many as you need     grated cheese 1 cup     butter 1 tbsp

For filling
Onion big 1 chopped fine           green chilies 4-6 chopped fine       ginger 1” cut fine
Carrots 1 big chopped fine         potato 1 boiled & smashed ( optional)
white lobia/karamani/green moong dal/sprouts ( any of this that you’ve or like can be used)
coriander leaves 1 tbsp          salt        oil

method
1)      make rotis as usual & keep aside, make sure they’re real soft, the size can be when you fold the roti into a packet with the filling, it should fit into your sandwich maker.
2)      Whatever protein you’re using- white beans/ moong/ sprouts, cook it & keep it ready, strained.
3)      For filling- heat a pan, add 2 tsp oil, add onion, green chilies, ginger, sauté for a few minutes with wee bit if salt, then add carrots, sauté till carrots are soft.
4)      Then add potato if you’re using it, mix well, along with salt to taste, along with beans. Moong/ sprouts.
5)      Add coriander leaves, check for seasoning & remove.
6)      To make sandwich, take a roti, put a tbsp. of filling in it, put some grated cheese on it, fold it well, in case you’re not able to fold it in such a way it is closed, you may wet the sides of roti, mix some maida with water & apply the paste to seal it, or put a clove to seal it.
7)      In a sandwich maker, put the ready sandwich with wee bit of butter spread on each side.
8)      Lightly brown it on both sides, on low flame, so that cheese will melt also.
9)      Serve hot with ketchup/ plain or with chutney of your choice.
