 Hummus, a thick creamy food dip made primarily from mashed chickpeas, is both nourishing and extremely versatile - it's filling enough to be enjoyed by itself, or it can be used as a spread in sandwiches or wraps.

The basic recipe contains 6 healthy ingredients: chickpeas, olive oil, garlic, lemon juice, sea salt and tahini, which have been shown to be highly anti-inflammatory, and thus can help lower inflammatory-causing chronic diseases such as rheumatoid arthritis, Alzheimer's disease, cancer, cardiovascular disease and diabetes.

Chickpeas

Also known as garbanzo beans, chickpeas are high in plant-based protein and fiber, which improves digestion and aids heart health. They are also exceptionally filling. Additionally, chickpeas are a good source of three nutrients that help reduce symptoms associated with PMS: magnesium, manganese and vitamin B6. 

Olive Oil
In hummus, olive oil is used in its natural state. Research has shown that when heated repeatedly at a very high level, olive oil can oxidize and become hydrogenated. To prepare this recipe, opt for an extra virgin, pure olive oil free from fillers. Olive oil has been found to reduce the risk of type 2 diabetes and may help prevent strokes. It is also good for the heart. In fact, a diet rich in olive oil may slow down the aging of the heart. 

Garlic
Raw garlic contains an impressive amount of nutrients, including flavonoids (plant compounds found in most fruit and vegetables). Consuming raw garlic frequently has been found to reduce risk factors associated with heart disease and various cancers. Garlic also acts as an anti-fungal, anti-oxidant, anti-inflammatory and anti-viral, and also has a number of other medicinal health benefits. 

Lemon Juice

1. Hummus is a good source of plant-based protein The main ingredient in hummus, chickpeas, provides a substantial source of protein, enabling you to feel full after consuming it. In fact, you're less likely to snack in between meals due to their satiety effect. As hummus is often eaten with pita bread or other type of whole grain, it offers what is known as a 'complete protein', meaning it contains all the essential amino acids necessary for the body.

Chickpeas have been shown to help balance cholesterol levels, reduce hypertension and protect against heart disease. Hummus is also a good source of fiber, preventing weight gain and fat around the organs, and has been known to help keep the arteries clear from plaque buildup, reducing the chances of cardiac arrest and stroke. Backing this idea, studies have shown that a daily serving of cooked beans (3/4 cup) can help reduce the chances of a heart attack and help balance 'bad' LDL cholesterol. Chickpeas have also been shown to have protective properties against cancer, particularly colon cancer - primarily because chickpeas have the ability to keep the digestive system and the colon free from harmful bacteria and toxic buildup. The beans found in fiber help keep waste moving out of the body quickly. Furthermore, a diet rich in beans has been shown to reduce hyperglycemia, helping to balance blood sugar levels. Consequently, this decreases the chance of developing diabetes or insulin resistance.

Inflammation is the body's natural defense to get rid of toxins. Bean & Pasta Salad

Ingredients

4 ounces whole-wheat fusilli

tbsp extra-virgin olive oil

1 tbsp lemon juice

1 tbsp red-wine vinegar

1 tsp dried oregano

¼ tsp ground pepper 

 tsp salt 

½ cup rinsed canned no-salt-added kidney beans

½ cup rinsed canned no-salt-added chickpeas 

½ cup halved grape tomatoes

½ cup chopped English cucumber (about ¼ cucumber)

½ cup diced bell pepper (about ½ medium pepper) 

½ cup diced red onion (about ½ medium onion)

½ cup crumbled feta cheese


 Preparations

Bring a large pot of water to a boil. Add 4 ounces pasta; cook according to package instructions. Drain and rinse under cold water.

Whisk 2 tablespoons oil, 1 tablespoon lemon juice, 1 tablespoon vinegar, 1 teaspoon oregano, ¼ teaspoon pepper and ⅛ teaspoon salt in a large bowl. Add ½ cup kidney beans, ½ cup chickpeas, ½ cup tomatoes, ½ cup cucumber, ½ cup bell pepper and ½ cup onion; mix until combined. 

Add the pasta to the bowl; mix until evenly distributed. Fold in ½ cup feta.

Quick Hummus: The Protein-Packed Spread

Store-bought hummus costs ₹200 for a tiny tub and somehow tastes nothing like the real thing. Homemade hummus costs ₹30 and tastes like what you'd get in a good Mediterranean restaurant. It's creamy, nutty from the tahini, slightly tangy from the lemon, and has that earthy chickpea flavour that's both comforting and sophisticated. The texture should be silky smooth, almost like whipped butter, making it perfect for spreading thick on bread without tearing it. Plus, chickpeas bring protein and fibre, so you're actually eating something nutritious while enjoying what feels like an indulgent spread.

Ingredients:

  • 1 can (400g) chickpeas, drained (save the liquid)
  • 3 tbap tahini (sesame paste)
  • 2 tbsp olive oil
  • 2 cloves garlic
  • Juice of 1 lemon
  • ½ tsp cumin powder
  • Salt to taste
  • 2-3 tbsp reserved chickpea liquid (for consistency)

Method:
Rinse chickpeas. Add everything to the blender. Blend until smooth, adding chickpea liquid gradually until you reach the desired consistency. Taste and adjust salt/lemon.

Pro Tips:

  • Peel chickpeas for ultra-smooth hummus (time-consuming but worth it for special occasions)
  • Add roasted red peppers for red pepper hummus
  • Add beetroot for pink beetroot hummus
  • Drizzle with olive oil and sprinkle paprika before serving

Uses:
Veggie sandwiches, falafel wraps, and a dip with vegetables

Baked Chickpeas Patties

Ingredients

Cooked chickpeas 5 cups/   750 gm

Fresh parsley/ coriander leaves ¼ bunch / 30 gm chopped

Onion 100 gm

Garlic cloves 4

Frozen sweet corn ½ cup / 65 gm

Frozen green peas ½ cup / 65 gm

Carrot  medium 1 / 130 gm diced

Red  pepper ½ cup/ 70 gm diced

Ground flaxseed 3 tbsp

Paprika 2 tsp

Cumin 2 tsp

curry pdr 1 tsp

Salt 2 tsp/ to taste

 

Preparations

Preheat the oven to 350 deg. F/ 180 C

Place the frozen peas , corn and diced carrot in a saucepan with ½ cup / 120 ml water. Bring to a boil and cook for 10 minutes. Once ready, drain the water.

Meanwhile, put onion, garlic and cooked chickpeas and chopped parsley in a food processor. Pulse for a few minutes. You may need to scrape down the sides from time to time. Do this until everything is well mixed. Put the mixture in a large bowl.

Add the cooked and drained corn, peas and carrot and the diced red pepper to the bowl as well. Season with paprika, cumin, curry pdr and salt. Add the ground flaxseed and stir everything well.

Take about a full tsp of the mixture and toll into small balls or patties. Place them on a baking sheet lined with parchment paper. Bake for 20 minutes.

Enjoy the baked patties with chutney/ sauce of your choice.

NOTE-

If you use dry chickpeas, you’ll need about 2 cups/ 360 gm. Soak them overnight, then cook in a pressure cooker till soft. Drain and use as shown above.

Lentils sweet potato baked with dressing

 Sheet Pan Cheeseburger Vegetable Bake 

Ingredients

 2 cups cubed sweet potatoes OR you may add potatoes 

  • 7 oz firm tofu, pressed and cubed into 3/4 inch cubes
  • 15 oz can chickpeas or lentils, drained. Or any other beans, or 1.5 cups cooked
  • 1 red bell pepper, chopped into 3/4 inch thick
  • 1/2 red onion, coarsely chopped
  • 1/2 to 1 cup veggies of choice, such as broccoli, butternut squash, any seasonal veggies, etc
  • 3-4 tbsp sunflower seeds
  •  
  • For Cheese Burger Dressing
  •  
  • 1 tbsp oil
  • 2 tsp soy sauce
  • 2 tsp vegan Worcestershire sauce
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp oregano
  • 3 tbsp bbq sauce or tomato ketchup+ curry powder
  • 1 tsp prepared mustard
  • 2 tbsp ketchup
  • salt to taste
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 1/2 tsp garlic powder
  •  
  • For Mayo Dressing
  •  
  • 1/3 cup cashew cream, which is 1/4 cup of cashews blended with 1/4 cup water, or use vegan Mayo
  • 1 tsp vinegar
  • 1/4 tsp garlic powder
  • 1/4 tsp ground mustard
  • 1/4 tsp salt
  •  
  • Preparations

    Chop all of your veggies if you haven't already. Line or grease a large baking dish. Preheat the oven to 400 degrees F (205 c) In a bowl, mix in all of the cheeseburger sauce ingredients until well combined. Reserve 1 1/2 – 2 tbsp of this mixture to use later to drizzle on top. Add the chickpeas, tofu, chopped veggies, and toss well to coat with the cheeseburger sauce mixture, until evenly coated. Drop this mixture into the prepared baking dish, and spread it out. You don't want the mixture to be thicker than double. I like to keep a single layer of the veggies and beans etc, it will give you the best result in terms of crispiness of the big veggies. Bake at 400 degrees F for 35-45 minutes, or until the sweet potatoes are tender to preference, and everything else is starting to get gold and crisp. Sprinkle sunflower seeds on top in the last 5-10 mins of baking To make your Dressing: blend all the ingredients until well combined, taste and adjust flavor by adding more vinegar, salt, etc. You can also use already prepared non-dairy cream, or 1/4 cup vegan mayo instead. To serve, serve individual portions of the veggie tofu bean mixture, and drizzle the mayo on top. Thin out the reserved cheeseburger sauce with a tsp or two of water, and drizzle that as well. Top with some red pepper flakes, and fresh herbs of choice, and serve. You can also serve the tofu veggie mix over a bed of fresh lettuce!

    Chickpeas Shakshuka

     Ingredients

     

    Preparations

    Take a medium-sized flat skillet, and put it on medium flame. Add some olive oil and once it is heated, add the chopped garlic, and then the onions.
    Cook the onions until they are golden brown. Now add the chopped tomatoes and add the seasonings, like salt, chili powder and cumin powder.
    Cover for a minute, until the tomatoes are soft and mushy. Now add the boiled chickpeas and mix well.
    Once everything is well cooked, make small impressions on the tomato base, and crack the eggs one by one inside the created impressions. Do not stir or mix the eggs.
    Cover with a lid and let it cook for a minute or two. The eggs must be cooked in a way where the white is cooked, but the yolk is slightly runny.
    Now sprinkle some pepper powder over it. Garnish with fresh coriander and enjoy with pita bread or naan.

    Roasted Chickpea Salad

      

     Ingredients

    Chickpeas 1 can  drained

    olive oil 2 tbsp

    cumin 1/2 tsp

    turmeric pdr 1/2 tsp

    cinnamon pdr 1/2 tsp 

    ginger chopped 1/2 tsp 

    salt to taste

     lettuce chopped 6 cups or as desired

    pumpkin seeds 1/4 cup

    walnuts 1/4 cup

    dried cranberries1/4 cup

    pomegranate arils 1/2 cup 

    apple cider vinegar 1/4 cup 

    Preparations


    1. Preheat the oven to 200 °C.
    2. Combine the chickpeas, olive oil, cumin, turmeric, cinnamon, ginger and salt together.
    3. Spread the chickpeas on a baking sheet and roast for about 20-30 minutes until golden brown and crispy.
    4. In a big bowl toss the chopped lettuce, pumpkin seeds, walnuts, pomegranate arils, dried cranberries and apple cider vinegar.
    5. Add the roasted chickpeas, toss and enjoy.

    Chickpea, Potato, and Spinach With Spicy Coriander Chutney

     Ingredients

    1 pound russet potatoes, peeled and cut into rough 1 1/2-inch chunks

    salt to taste

    3 tbsp vegetable oil

    1 medium onion, grated on the large holes of a box grater

    3 cloves garlic, grated fine

    1 tbsp ginger, grated fine

    green chilies as per taste

    1 small red pepper, finely diced

    8 stems coriander, leaves roughly chopped, tender stems finely minced and reserved separately

    1 tsp turmeric pdr

    1/2 tsp coriander pd

    1/4 tsp cumin pdr

    1 tsp red chili pdr

    2 small plum tomatoes, peeled, seeded, and roughly chopped (a canned tomato is fine)

    1 (15-ounce) can chickpeas, with their liquid

    8 ounces curly spinach, roughly chopped

    2 tbsp juice from 2 limes

    For the Coriander Chutney:

    2 cups picked fresh coriander leaves and tender stems

    1 clove garlic

    1 small green  or to taste

     

     Preparations

    Place potatoes in a large saucepan and cover with water by 1-inch. Season to taste with salt. Bring to a boil and simmer until potatoes are tender but not falling apart, about 10 minutes. Drain and set aside.

    In a large heavy-bottomed saucepan or Dutch oven, heat oil over medium-high heat until shimmering. Add grated onion, garlic, ginger, chilies, coriander stems, and red pepper, and cook, stirring frequently, until most of the moisture has evaporated and mixture is beginning to brown, about 10 minutes. Add turmeric, coriander, cumin, and chili pdr, and cook, stirring constantly, until fragrant, about 1 minute.

    Add chopped tomatoes, chickpeas, spinach, 1/2 cup of water, and cooked potatoes. Stir until spinach wilts. Add half of lime juice and season to taste with salt. reduce heat to lowest setting, cover, and keep warm while making chutney.

    For the Chutney: Combine coriander leaves, garlic, chili and remaining lime juice in a blender or in the cup of a hand blender and add 1/3 cup water. Blend until smooth, scraping down sides and adding water as necessary. Season to taste with salt.

    Add more liquid to gravy if necessary and serve with chutney and steamed basmati rice or naan.

    Chickpeas Chocolate Barks

     Ingredients

     1 Cup Chickpeas
    1 tbsp Olive Oil
    Sea salt to taste
    1 cup Chocolate


    How to Make 

    1.Soak chickpeas in water overnight.
    2.Once soaked, remove and Let them dry completely.
    3.After they are completely dry, add olive oil and sea salt. Give it a good mix and bake these at 200 degree Celsius for 30-40 mins.
    4.Melt chocolate in another bowl, once the chickpea are roasted add them in the melted chocolate bowl.
    5.Spread the above on a parchment paper and let it set in the fridge for 2-3 hours.
    6.Using a knife, cut into barks and serve!

    Hummus

     Ingredients

     chickpeas 2 cans

    garlic clove 1peeled

    raw sesame seeds 1/4 cup

    olive oil 1 tbsp

    lime juice 1/4 cup

    cumin 1 tsp

    sea salt to taste 

     

    Preparations

     Drain and rinse chickpeas can, reserving 1/4 cup liquid.

    Place all the ingredients in a blender and blend well.

    Add more water or olive oil to get the desired consistency.

    For best results, drizzle with olive oil when storing.

    5 Bean Salad

    Ingredients

    5 tbsp lemon juice (from 2 lemons)

    5 tbsp extra-virgin olive oil

    ¼ cup finely chopped fresh tender herbs (such as parsley, basil or mint), plus more for garnish 

    2 cloves garlic, minced (about 2 teaspoons)

    1 tsp Dijon mustard

    tsp salt

    1 tsp Italian seasoning

    ½ tsp  pepper pdr

    1 (15-ounce) can no-salt-added kidney beans, rinsed

    1 (15-ounce) can no-salt-added chickpeas, rinsed

    1 (15-ounce) can no-salt-added black beans, rinsed

    1 (15-ounce) can no-salt-added pinto beans, rinsed

    1 (15-ounce) can no-salt-added cannellini beans, rinsed

    1 small (8-ounce) orange bell pepper, chopped (about cups)

    ½ cup chopped red onion


    Preparations
     
    Combine 5 tablespoons lemon juice, 5 tablespoons oil, ¼ cup chopped herbs, the minced garlic, 1 teaspoon mustard, 1¼ teaspoons salt, 1 teaspoon Italian seasoning and ½ teaspoon pepper in a large bowl; whisk well. 
     
    Add rinsed kidney beans, chickpeas, black beans, pinto beans and cannellini beans and the chopped bell pepper and chopped onion; stir to coat evenly. 
     
    Cover and refrigerate for at least 30 minutes, stirring occasionally, to allow the flavors to meld. Garnish with additional herbs before serving, if desired.
