Fig and Almond Custard Tart

Fig and Almond Custard Tart from www.pbs.org

Ingredients

For the Crust:

2 cups old-fashioned rolled oats

1 cup crushed almonds or almond flour

4 tbsp (½ stick) unsalted butter, at room temperature

2 tbsp white sugar

1 tbsp grated orange zest

½ tsp cardamom pdr

¼ tsp fine sea salt

3 large egg whites

For the Custard:

1½ cups mascarpone cheese

1 large egg, plus 3 large egg yolks

½ cup white sugar

½ tsp orange blossom water/ orange essence

Grated zest of 1 orange

¾ cup heavy cream

10–12 Mission figs, pitted and sliced 1/8 to ¼ inch thick

2 tbsp turbinado sugar

For the Whipped cream:

  • 1 cup heavy cream
  • 2 tbsp powdered sugar
  • ¼ tsp orange blossom water
  • ¼ tsp cardamom pdr
  • Fig glaze
  • 1 cup fig jam
  • 2 tbsp white sugar
  •  ¼ cup almond liqueur
  •  2 tbsp fig balsamic vinegar

Instructions

To make the crust, grind the oats and almonds in a food processor until broken down but still a little flaky. Add the butter, white sugar, orange zest, cardamom, and salt. Pulse several times until the butter is evenly incorporated into the oat mixture.Add the egg whites and pulse until a slightly wet and crumbly dough is formed.

Press the dough ¼ inch thick into the bottom and up the sides of a 10-inch nonstick tart pan with a removable bottom. There may be a little bit of excess dough. Set the tart on a rimmed baking sheet and place in the freezer until ready to bake.

To make the custard, preheat the oven to 350 degrees F.

In a bowl, whisk together the mascarpone, whole egg and egg yolks, white sugar, orange blossom water, and orange zest until smooth. Add the cream and whisk until fully incorporated. Pour the batter into the frozen tart crust. Bake the tart for 30–35 minutes, or until it is partially set.

Carefully remove the tart from the oven and decoratively place the fig slices on top. Sprinkle the entire top with the turbinado sugar. Return the tart to the oven, being careful not to disturb the filling, and bake for another 15–20 minutes, until the filling is set and firm. Remove from the oven and let cool completely.

To make the topping, whip the cream, powdered sugar, orange blossom water, and cardamom together until soft peaks form. Set aside.

To make the fig glaze, in a small saucepan, bring the fig jam, white sugar, liqueur, and vinegar to a boil and allow to thicken, about 5 minutes. Set aside.

To assemble, remove the cooled tart from the pan by pressing up on the bottom and removing the rim. Cut into 8–10 slices. Place a slice of tart on each plate. Spoon a dollop of whipped cream on top of the tart. Drizzle on a little bit of fig glaze. If desired, garnish with a flower on top.

150 gm / 3/4 cup  sugar

140 gm / 1 cup all purpose flour

lemon zest of 1 large lemon

veg oil 120 ml / 1/2 cup

vanilla essence 1 tsp

eggs 2 large

baking pdr 2 tsp

salt 1/4 tsp

60 ml/ 1/4 cup full fat milk

60 ml  / 1/4 cup yogurt

Mascarpone cream frosting

1/2 cup thickened / heavy cream

1/2 cup mascarpone cheese

vanilla essence 1/2 tsp

blackberry jam 2-3 tbsp

Instructions

Pistachio cake

Preheat oven to 180 C (350 F) standard / 160 C (320 F) fan-forced. Grease and line an 8" cake pan with baking / parchment paper.

Pulse pistachios till they becomes fine crumbs, don't over mix to become a paste.

In a large mixing bowl, add pista crumbs, sugar, flour, lemon zest, baking pdr and salt, combine briefly.

In another bowl add oil, vanilla, eggs, milk and yogurt, whisk briefly just to break up the egg yolks.

Add wet ing. to dy ing. and gently mix with a spatula until combined- be careful, don't over mix.  Spoon the batter into the prepared pan.

Bake for 30-35 minutes or until the skewer inserted in the middle comes out clean. Transfer to a wire rack to cool completely.

Mascarpone cream frosting
  1. In a medium mixing bowl, add cream, mascarpone and vanilla. Beat using an electric mixer on medium speed until mixture thickens.
  2. Dollop a couple of teaspoons of blackberry jam into the cream and gently swirl using a spoon. Spoon frosting over cake and use a small spatula to spread it out into one even layer.
  3. Add a few extra teaspoons of jam and swirl it into the frosting.

Notes

Pistachios: You can use either raw or toasted pistachios as long as they are NOT salted. Blitz them into small crumbs using a food processor. Don’t over-grind them or they will turn into a paste. See photo for visual reference.

Lemon zest: Or you can use orange zest if you prefer.

Thickened cream: Look for a cream that is at least 35% fat and it should say on the product that it is suitable for whipping. Do not use light or low fat cream.

Mascarpone cream: If you don’t have access to mascarpone cheese, creme fraiche is the next best thing. Or you can leave it out entirely and just have a whipped cream frosting.

Storage: Once frosted, this cake is best kept covered in an airtight container in the fridge. Without frosting, the cake itself can be kept in an airtight container at room temperature.

Cake pan size: You can use this recipe to make a one layer 8-inch cake, or a two layer 6-inch cake.

Dutch baby pancake

What is a Dutch baby pancake?

Dutch baby pancakes are basically puffed up pancakes cooked in the oven in a skillet/frying pan or sometimes a baking dish. They also go by a few other names including a German pancake and a Dutch puff.

If the names have you confused on their origin, that's no surprise. But in fact "Dutch" is the one that's wrong. Apparently an American restaurant serving them corrupted the word "Deutsch" in their menu (which is "German" in German). While generally agreed to be German in origin, the Dutch name has stuck.

These pancakes are a bit like a large popover or Yorkshire pudding. You cook then in a similar way, adding the batter to a hot cooking vessel with hot fat in it.

These are generally cooked in a skillet, though, rather than muffin/popover tins, and you use butter rather than oil or drippings. How you serve them is also generally a little different - these are generally sweet (though they can be savory, too).

This version is, as you might expect, sweet and has such a wonderful flavor. You can, of course, add other toppings but the cherry compote complements the chocolate flavor perfectly and is so, so good.

Making cherry compote

small dish with cherry compote and cherries to side and lemon above

The cherry compote might sound fancy but it's really easy to make. It's basically a chunky sauce, similar to a pie filling but maybe a little less thick sauce and more fruity.

It doesn't take long to make and you can cook it up as the pancake cooks. You could also make it ahead of time if you prefer. Just store it in an airtight container in the fridge - it will keep up to a week. I would highly recommend making extra, too, as it's so tasty and would be great on top of a cheesecake, over ice cream and with a plain cake.

You can use frozen cherries for this (which are pitted) but it's easy enough to pit fresh and they would be my preference. You can use a cherry pitter, or else simply cut them in half around the middle, twist and then remove the stone. I usually cut the halves once more to give quarter pieces which feels a nice size.

You add a little lemon juice, as with jams, in part for flavor and also for a little pectin to help the mixture thicken. But you don't cook this as long as a jam and can either leave it with more of a syrup, or as here, use a little corn starch (corn flour) to thicken the liquid a bit.

Strawberry Bruschetta

 Strawberry Bruschetta

This classy and delicious dessert only takes minutes to prepare, but it is an unforgettable taste and luxury in your mouth. A great snack or dessert, the Strawberry Bruschetta is one of the best, and healthiest, snacks around.

Ingredients:

Whole wheat bread - 4 thick slices

Brown sugar - 6 tbsp. (light brown )

Lemon zest - 1 tsp. (grated)

Lemon juice - 2 tsp.

Strawberry - 3 cups (sliced or diced hulled)

Mascarpone cheese - 4 tbsp. *

Preparation:
Toast the bread in the toaster. While you’re waiting, heat a large skillet over high heat.

Add the sugar, lemon zest, and lemon juice and cook, stirring until the sugar melts and the mixture begins to bubble – 30 seconds to 1 minute.

Add the strawberries and stir until juices begin to exude and the berries are heated through – a further 30 seconds to 1 minute.

Spread 1 tablespoon of mascarpone on each piece of toast. Top with the warm berries.

*For a suitable substitute for mascarpone cheese, consider a blend of cream cheese, heavy cream, and sour cream. This combination mimics the rich, smooth texture and slightly tangy flavor of mascarpone. Other options include crème fraîche, ricotta, or Greek yogurt, though these may have slightly different textures or flavors.

Thandai Tiramisu

Thandai Tiramisu is a delightful fusion dessert that combines the traditional Italian tiramisu with the aromatic spices of thandai, a popular Indian beverage. This innovative treat layers thandai-soaked ladyfinger biscuits with a creamy mascarpone mixture, offering a unique twist on the classic tiramisu.

Ingredients

For the thandai syrup:

  • 1/2 cup thandai powder
  • 1 cup warm milk
  • 2 tbsp sugar

For the mascarpone cream:

  • 1 cup mascarpone  cheese, softened
  • 1 cup heavy cream
  • 1/2 cup sugar pdr
  • 1 tsp vanilla

For assembly:

  • 1 packet of ladyfinger biscuits
  • Cocoa pdr, for dusting
  • Chopped pistas and dried rose petals for garnish

Method

  1. In a bowl, mix the thandai powder with warm milk until fully dissolved. Add sugar to the mixture and stir until dissolved. Allow it to cool to room temperature.
  2. In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form. In another bowl, whisk the mascarpone cheese with vanilla extract until smooth. Gently fold the whipped cream into the mascarpone mixture until well combined.
  3. Briefly dip each ladyfinger biscuit into the cooled thandai syrup, ensuring they are moist but not soggy. Arrange a layer of soaked ladyfingers at the bottom of a serving dish. Spread half of the mascarpone cream over the ladyfingers. Repeat the layers with the remaining ladyfingers and mascarpone cream. Cover and refrigerate for at least 4 hours, preferably overnight, to allow the flavours to meld.
  4. Before serving, dust the top with cocoa powder and garnish with chopped pistachios and rose petals. Serve chilled and enjoy the fusion of Italian and Indian flavours.
