Paneer Kurma

 2 tbsp cashew nut paste

 

Preparations

Knead paneer properly and mix it with maida, garam masala, cumin powder, salt and little water.
Divide in equal portion and make small balls from it.
Deep fry the balls on low flame, in a kadai.
Once done, keep it aside.
In a pan, add ghee, a little oil and bay leaves in.
Now add ginger paste, ground cashew nut paste, curd and coconut milk. Fry it well.
Add garam masala, red chili powder, salt and sugar. Mix it properly.
Put little water in it and cook it for a while.
Now, add the fried paneer balls to it.
Mix it well and after 2 to 3 minutes, the paneer  kurma will be ready to serve.

Paneer Kurma

 Ingredients

Once done, keep it aside.

In a pan, add ghee, a little oil and bay leaves in.

Add garam masala, red chili powder, salt and sugar. Mix it properly.
 
Put little water in it and cook it for a while.
 
Now, add the fried paneer balls to it.
 
Mix it well and after 2 to 3 minutes adding half the coriander leaves, the paneer kurma will be ready to serve. 
 
Garnish with the remaining coriander leaves , serve hot with roti/ rice, dosa.

CAULIFLOWER MALAI KURMA

INGREDIENTS

cauliflower   750 gm
onion  2 medium
ginger 1"
cloves 2
green chillies to taste finely chopped
cinnamon  1/2"
cardamoms 2 crushed
bay leaves  2
milk powder  3 tbsp
salt & sugar to taste
oil  4-5 tbsp
garlic  2 cloves crushed

METHOD

cut the cauliflower into floweretes, wash thoroughly, steam in a little salted water so that water dries up completely.
make a paste of milk pdr. with 3/4 cup water.
heat 2 tbsp oil, fry the cauliflower, keep aside.
fry crushed garlic, crushed garam masala.
add onion, ginger, garlic, fry till oil separates.
add milk pdr. mixture, cook till the mixture looks like crumbled paneer( cottage cheese)
add cauliflower & 1 cup water.
simmer for 4-5 minutes or until the gravy thickens.
remove from fire.
serve hot with rice or roti.

SPICY VEGETABLE KURMA IN MICROWAVE

Ingredients
potato 1 large
carrots 2 medium
turnip chopped  1/4 cup
cauliflower  2 cups chopped
French beans chopped  1/2 cup
milk  1/4 cup
garam masala 1/2 tsp
pepper pdr 1/4 tsp
salt 1 tsp or to taste
cardamom 2
fresh coriander chopped  1 tsp
almonds sliced for garnishing

for the butter sauce
ghee/butter  2 tsp
tomatoes  400 gm"
ginger 2"
salt to taste
chilli pdr 1 tsp
garam masala pdr 3/4 tsp
cumin pdr  3/4 tsp
cream 1/2 cup
milk  1/2 cup

Method
in a microwaveable dish, add the prepared vegetables & milk.
cover & micro high for 10 minutes or till done.
prepare the sauce by blending tomatoes, spices, milk & butter in a mixie.
cook the sauce in the microwave on high power covered for 10 minutes.
mix with the cream.
to the vegetables, add garam masala, pepper pdr & salt. mix with the sauce.
micro high for 4 minutes. garnish with chopped coriander leaves & sliced almonds.
serve hot with cooked rice.

Easy Vegetable kurma



Ingredients
Cauliflower 1 small        peas 1 small cup       onion 2 big       cashew nuts 10
Poppy seeds/ kaskas 1 tbsp          ginger-garlic paste 1 tbsp       cumin/ jeera 1 tsp
Green chilies 4-6 or to taste       salt to taste        oil 2 tsp     1 potato 
coriander leaves little

Method
1) wash & cut cauliflower into small florets & blanch & keep aside
2) in pan add onion sliced long, boil it with 1/2 cup water for about 5 minutes, last 1 minute add cashew nuts, cover & keep it aside to cool.
3) roast kaskas/ poppy seeds & add to cooked onion as once cooled grind all together to a smooth paste.
4) in a heavy pan, add oil, once hot, add cumin/ jeera, as it crackles,  add chilies cut fine, ginger-garlic paste, saute well, add about a tbsp of water, let it simmer.
5) now after about 2-3 minutes, add peas, cauliflower &  potatoes chopped fine, add enough water to cook them along with salt to taste.
6) as it is getting cooked, add the ground paste, mix well, let it boil & cook till the vegetables are done. Or you may use also boiled & peeled potato, chopped fine later, once peas & cauliflower are done.
7) remove, garnish with fresh coriander leaves.
8) serve it hot with bread, roti, puri, paranthas or pulao.

ps- this is my easy way of making kurma. You may use other vegetables of your choice too, like carrots, broccoli, broad beans etc.Unlike the normal gravy, which is red, this gravy will be white. Those who aren't calorie conscious, may use some cream last.
