Crispy Corn Zucchini Fritters- Baked- Air Fryer

  

Ingredients

Preparations

Shred the Zucchini in a shredder with large holes.
Place the zucchini into a strainer and place a couple of paper towels on top, and press down hard to squeeze out all the excess water.
Place the shredded zucchini in a large bowl. Add corn and almond butter.
In a separate small bowl, combine the oat flour, garlic powder, onion powder, salt, pepper and smoked paprika and stir until well mixed.
Add the dry mixture to the zucchini mixture and stir for a couple of minutes until it all comes together. Press with the back of the spoon to make it stick.
Divide into 4 sections and form balls, and then flatten out into patties 1/2 inch thick. Place on parchment paper and chill in the fridge for 30 minutes.
Preheat the oven to 200°C, and bake the patties for 25 minutes. Carefully flip them over and bake for another 10-15 minutes until golden brown. Cool for about 10 minutes before serving.
Serve with lemon pepper sauce.

Almond Butter & Chocolate Banana Smoothie

Ingredients

1cup unsweetened soy milk

 ¼ cup non-fat plain strained (Greek-style) yogurt

 1ripe medium banana

1tbsp almond butter

 tsp unsweetened cocoa powder

¼ tsp vanilla extract

½ tsp honey (optional) 

 

Instructions

Combine 1 cup soy milk, ¼ cup yogurt, 1 banana, 1 tablespoon almond butter, 1½ teaspoons cocoa powder and ¼ teaspoon vanilla in a blender. Add ½ teaspoon honey, if desired. Blend until smooth and creamy, about 30 seconds to 1 minute.

Blueberry Cobbler Energy Balls

Ingredients

1 cup plus 2 tablespoons unsweetened dried blueberries, divided

¾ cup old-fashioned rolled oats

¾ cup smooth natural almond butter or sunflower seed butter

½ cup chopped dried figs

½ cup chopped pecans, toasted (see Tip)

3 tbsp chia seeds

2 tbsp honey

tsp vanilla extract

¾ tsp cinnamon pdr

tsp salt

¼ cup white chocolate chips


Preparations

Finely chop 2 tablespoons blueberries; set aside. Combine the remaining 1 cup blueberries, oats, almond butter (or sun butter), figs, pecans, chia seeds, honey, vanilla, cinnamon and salt in a food processor. Pulse until finely chopped, 10 to 20 pulses; then process until the mixture is crumbly but can be pressed to form a cohesive ball, about 1 minute, stopping to scrape down the sides as needed.

Using wet hands to prevent the mixture from sticking, squeeze and roll the mixture into 32 balls (about 1 tablespoon each); place in a single layer on a parchment-paper-lined baking sheet.

Place white chocolate chips in a small bowl; microwave on High in 30-second intervals, stirring after each interval, until melted and smooth, about 1 minute, 30 seconds total. Drizzle the melted white chocolate over the energy balls; sprinkle with the reserved chopped blueberries.

Ingredients

1 cup frozen strawberries

1 cup chopped fresh pineapple

¾ cup chilled unsweetened almond milk, plus more if needed

1 tbsp almond butter

Preparations

Combine 1 cup strawberries, 1 cup pineapple, ¾ cup almond milk and 1 tablespoon almond butter in a blender. Process until smooth, adding more almond milk, if needed, for desired consistency. Serve immediately.

High-Protein Strawberry & Almond Butter Overnight Oats

 Ingredients 

  • 1 ripe medium banana

  • cups unsweetened almond milk

  • 1 cup whole-milk plain strained (Greek-style) yogurt

  • ½ cup smooth natural almond butter, divided

  • 2 tbsp ground flaxseed (flaxmeal)

  • 1 tbsp pure maple syrup

  • ¼ tsp salt

  • 1 cup old-fashioned rolled oats

  • 1 cup chopped fresh strawberries, plus more for garnish


Directions

Mash banana in a large bowl with a fork until smooth. Add 1½ cups almond milk, 1 cup yogurt, ¼ cup almond butter, 2 tablespoons flaxseed, 1 tablespoon maple syrup and ¼ teaspoon salt; whisk until smooth. Stir in 1 cup oats and 1 cup strawberries.

Cover and refrigerate until the oats have softened, at least 8 hours or up to 3 days. Stir before serving; top each serving with 1 tablespoon almond butter. Garnish with additional strawberries, if desired.


To make ahead

Refrigerate in an airtight container for up to 3 days. Stir before serving.

Brownie Protein Bites

 Ingredients

1/2 cup / 48 gm almond flour 

1/4 cup chocolate protein pdr

3 Tbsp. / 18 gm unsweetened regular cocoa pdr

3/4 tsp. kosher salt

1/3 cup almond butter

2 Tbsp. almond milk

2 Tbsp. maple syrup

1 tsp. pure vanilla extract 

6 oz. dark chocolate (60% cacao; good-quality chips or chopped bars)

1 Tbsp. refined coconut oil

2 Tbsp. mini rainbow coloured chocolate chips


Preparations

 In a large bowl, whisk almond flour, protein powder, cocoa powder, and salt. Add almond butter, almond milk, maple syrup, and vanilla and, using a rubber spatula, fold until well combined.

Scoop heaping Tbsp. of dough (about 20 g. each) and roll into balls (you should have 12 total). Arrange on a parchment-lined baking sheet. (If balls seem sticky or inclined to slump at this point, freeze for 15 minutes before proceeding.)

In a medium heatproof bowl, microwave dark chocolate and oil in 30-second increments, stirring between each, until melted and smooth, about 90 seconds total.

Working one at a time, drop brownie bites into melted chocolate and spoon chocolate over. Using a fork, lift bite out of chocolate, letting excess drip off, and return to baking sheet. Allow chocolate to set for a few minutes, then sprinkle with rainbow chocolate chips.

Refrigerate bites until chocolate is hardened, at least 30 minutes, then store in an airtight container in the refrigerator up to 1 week.

Banana Oat Energy Bites

Ingredients: 
 
2 ripe bananas 
 
2 cups rolled oats  
 
¼ cup almond butter (or peanut butter) 
 
¼ cup honey 
 
2 tbsp chocolate chips  
 
½ tsp cinnamon pdr

Directions: 
 
1. In a large mixing bowl, mash up the bananas, then stir in the oats, almond butter, honey, chocolate chips and cinnamon. 
 
2. Next, form the balls using about 2 tablespoons of the mixture. Repeat until all the mixture has been used up. 
 
3. Refrigerate for 2 hours until the oats have softened and keep stored in the refrigerator.

Kellie Bright’s Raw Vegan Bajadera Cake- No-bake/ no -cook easy dessert

  

A no-bake festive dessert

Ingredients

Base layer

½ cup almonds

½ cup hazelnuts

¾ cup dates

1 tbsp almond butter

Middle layer

1 cup cashews, soaked overnight

½ cup almonds

1 tbsp almond butter

3 tbsp coconut oil

½ cup maple syrup

Top layer

3 tbsp organic cacao

1 cup coconut oil

3 tbsp maple syrup

Method

Blend base ingredients into a thick paste and press into a cake tin. Freeze for 20 minutes.

Blend middle-layer ingredients until smooth. Spread over base and freeze for 30 minutes.

Mix top-layer ingredients, pour over the cake, and chill until set. Slice and serve.

Almond Butter (Natural/Organic)
