Singhada Aloo Ki Pakodi | Vrat Ki Pakodi

 Rainy evenings and pakoras are a classic Indian combination. For fasting days, pakoras can be prepared using ingredients like singhara flour, potatoes and permitted spices for a warm snack. 

Ingredients

3/4 cup Water chestnut Flour/ Singhada Aata *

medium Potatoes boiled

Green Chillies finely chopped

tsp Amchoor Powder

1 1/2 tsp White sesame seeds

tsp Cumin Seeds /

tsp Peppercorns

Rock Salt to taste

1/4 cup Fresh Coriander leaves chopped

Enough Cooking oil for frying

Instructions Peel the boiled potatoes and roughly mash them. Take a big wide bowl and add singhoda atta and all the dry spices in it and mix. Now add chopped green chilies, chopped fresh coriander and the mashed potatoes and mix again. Add just enough water and mix to make a medium thick batter of dropping consistency. Heat enough oil in a wide pan on medium temperature for deep frying the pakora Drop small pakora in the hot oil either using a spoon or with your fingers. Don't make big pakora else they may remain raw from inside or not become so crisp and crunchy. Deep fry pakora from all the sides till golden and crisp. Drain on a paper napkin when done. Serve hot pakora with mint chutney and aam papad chutney or just with plain curd and tea.

Notes
  1. you can use boiled raw banana instead of potato.
  2. you can also use rajgiri atta or kuttu atta instead of singhoda atta and follow the recipe.
  3. Use of green chilies and fresh coriander is optional , you can easily skip these if you don't use these during fasting.

Ridge Gourd -paneer sabzi

 Ingredients

ghee 1 tbsp

jeera 1/2 tsp

ginger grated/ paste 1 tsp

tomatoes chopped fine 1 small cup

ridge gourd peeled and chopped 1 big bowl

chili pdr to taste

salt to taste

hing little 

turmeric pdr 1/4 tsp 

paneer cut into small pieces 1 cup

coriander leaves finely chopped 1 tbsp

 

Preparations

heat ghee in a pan

add jeera, once it crackles , add hing, chili pdr

saute for few seconds, add ginger and tomatoes fry till tomatoes are soft

then add gourd pieces, turmeric pdr, wee bit water, mix well, cover and cook almost done

now add paneer , coriander leaves, mix well, cook for another 2 minutes on low flame, stirring often,

remove, serve hot with roti/ rice.

Aloo Makhana

  

 Ingredients

1

Heat 1 tbsp ghee in a pan.
Add phool makhana and roast it on medium to low heat until it is crisp. Once done, remove it from the pan and keep it aside.
Add the remaining ghee into the same pan. Add cumin seeds and let it splutter.
Add chopped green chilies and saute it for about 20 seconds.
Add red chilli powder, turmeric powder, salt and immediately give it a mix.
Add the boiled potatoes into the pan and toss it well. Once the potatoes are coated well with the spice mix, add the roasted makhana and toss again.

Lower the flame and keep tossing the aloo and makhana mix using a spatula. Cook it for 3 to 4 minutes.

Serve it hot, garnished with coriander leaves.

Biryani Masala Recipe

Ingredients

3 kashmiri red chilli, dried

  • 7 bay leaves / tej patta
  • 2 tbsp coriander seeds / dhaniya seeds
  • 1 tbsp cumin / jeera
  • 1 tbsp caraway seeds / kala jeera / shah jeera
  • 3 mace / javitri
  • inch cinnamon stick / dalchini
  • 1 nutmeg / jaayaphal
  • 1 tsp cloves / lavang
  • 3 black cardamom / badi elachi
  • 3 star anise / chakkar phool
  • 10 cardamom / elachi
  • 1 tbsp pepper / kali mirch
  • 1 tsp fennel / saunf
  • ½ tsp turmeric pdr
  •  
  • Instructions
     
    in a thick bottomed pan dry roast 3 red chilli and 7 bay leaves till they turn crisp. keep aside.
    then dry roast 2 tbsp coriander seeds, 1 tbsp cumin and 1 tbsp caraway seeds till they turn aromatic. keep aside.
    next dry roast 3 mace, 2 inch cinnamon stick, 1 nutmeg, 1 tsp cloves, 3 black cardamom, 3 star anise, 10 cardamom, 1 tbsp pepper and 1 tsp fennel / saunf.
    once the ingredients are cool, transfer to a blender and allow to cool completely.
    also add in ½ tsp turmeric.
    blend to fine powder and transfer to the airtight container.
    Finally, store biryani masala powder in airtight container and use to prepare biryani.

    Matte Ke Aloo ( Potatoes in Buttermilk gravy)

    Matthe ke aloo 

    Ingredients

    1 litre mattha (buttermilk)

    250 grams boiled potatoes

    5-6 green chillies, slit

    1 tsp grated ginger

    1 tsp cumin seeds

    1 bay leaf

    1 black cardamom

    4-5 whole black pepper

    2 whole red chillies

    1/2 tsp red chilli powder

    1/2 tsp turmeric powder

    1 tsp coriander powder

    1/2 tsp black salt

    Salt to taste

    1 tbsp roasted kasturi methi

    1 tbsp fresh coriander leaves, chopped

    Directions

    1. Cook The Whole Spices

    Heat mustard oil in a pan and add cumin seeds along with the bay leaf, cardamom, pepper and other whole spices. Once they start crackling, add whole red chillies, grated ginger and slit green chillies. Cook them on a low flame for about 2 minutes.

    2. Cook The Powdered Spices

    In a small bowl, mix the powdered spices with 2-3 teaspoons of water to form a paste. Add this paste to the pan once the whole spices are ready. Cook on low flame and stir carefully to avoid burning. If needed, switch off the flame while stirring to prevent the spices from sticking.

    3. Add The Potatoes

    After 2 minutes, add the boiled and lightly mashed potatoes. Mix well with the masala, adding a little water so that the flavours coat the potatoes evenly.

    4. Add The Buttermilk

    Keep the flame low and slowly pour in the buttermilk, stirring continuously so it blends smoothly with the potato and spice mix. Cook gently on low flame until the colour of the curry changes.

    5. Season And Finish

    When the curry begins to boil, add both black salt and regular salt. Stir in roasted kasuri methi and fresh coriander leaves. Allow the curry to simmer for a few minutes until it reaches the desired consistency.

    Sial masala for Bhatinda aloo

    Ingredients and Preparations  

    coriander seeds 1 tbsp
    saunf 1/2 tsp
    jeera 1 tsp
    peppercorns 1/4 tsp
    kalonji 1/2 tsp
    roast and pdr  coarse
    potatoes boiled 1/2 kg 
    hing
    garam masala 1/2 tsp
    ginger 1 tsp
    garlic 1 tsp
    green chilies
    red chili pdr to taste
    dhania pdr 1 tsp
    amchur pdr 1/2 tsp 
    oil 2 tbsp
    jeera 1/2 tsp
    kalonji 1/2 tsp
    ginger, garlic green chilies fry
    add potatoes turmeric pdr 1/2 tsp, hing 1/4 tsp, salt to taste, mix and fry well
    add the powdered masala about 2 tsp, if more can be stored, mix well.

    Quick No ferment Suji Idlis

     Ingredients

    suji 1 cup
    curd 1 cup
    water 1/2 cup
    baking soda 1/2 tsp
    oil 1 tsp
    jeera 1/2 tsp
    mustard seeds 1 tsp
    green chili 1  finely chopped

    Preparations
    heat  oil, add mustard seeds, once it crackles, add jeera and green chili, stir, pour over the batter.
    roast suji for 2-3 minutes, add curd, water, add all the spices, just before steaming, add baking soda, mix well adding wee bit water over the soda.
    pour the batter in greased idli plates, steam for 10 minutes. Serve hot with sambar/ chutney/ milagai podi.
     
    Tip
    to make it healthier you may add some finely grated carrot, peas, finely chopped spinach or any vegetable of your choice to the batter, before steaming.

    Watermelon rind Kuttu- Gravy made with lentils

     People buy watermelon, cut the red part and throw away the white part, which is as nutritious as the fruit. To make the most of it, cut the white part, chop into small pieces,pressure cook along with arhar/ chana/ moong/ masoor dal. The quantity of the dal will depend how much rind you got, and for how many people you want to cook for.

    Once the dal and rind are pressure cooked along with water and turmeric powder, keep it aside.

    In a kadai/ pan, fry urad dal 1 tbsp, jeera 1 tsp, green / dry red chilies as per taste. You can dry roast or fry with wee bit of oil till dal turns golden, remove, cool a little, grind with a cup of coconut to a fine paste. Add this ground paste to the cooked dal and rind, add salt to taste, mix well, let it boil well on low flame for 2-3 minutes. If the gravy is too thin, mix some atta / rice flour with little water, add the boiling gravy/ kootu, mix well, let it boil well for another 2 minutes, along with finely chopped coriander leaves. Season with urad dal, jeera and curry leaves in little oil, pour over the kuttu, serve hot with roti/ rice. It goes well with adai also.

    Mango Chutney

    Ingredients

    2 raw mangoes approx. 1.5 lbs or 3 cups diced

    tbsp oil

    ½ tsp mustard seeds

    ½ tsp cumin seeds / jeera

    ½ tsp fenugreek seeds / methi dana

    ½ tsp nigella seeds / kalonj

    ½ tsp fennel seeds 

    ⅛ tsp asafoetida(hing)

    tsp kosher salt

    ½ cup water

    ½ cup jaggery approx. ¼ lb, chopped or grated

    1 to 2 tsp Kashmiri red chili pdr or as per taste

    tsp chaat masala

     

    Method

    Rinse, dry, peel, and dice the raw mangoes into ¾-inch cubes.

    In a medium pan, heat oil on medium heat. Add mustard seeds and let them splutter. Then add cumin seeds, fenugreek seeds, kalonji, fennel seeds, and hing. Sauté for 30 seconds until the fenugreek turns light golden.

    Add diced mangoes, salt, and water. Mix well, cover, and cook for 8-10 minutes or until the mango pieces are soft but still hold their shape.

    Stir in jaggery, Kashmiri chili powder, and chaat masala. Cook uncovered just until the jaggery melts and the chutney begins to gently boil.

    StorageRefrigerator: Store in the fridge for up to 2 weeks. The flavors deepen over time, and it tastes even better the next day. Note: Always use a clean, dry spoon to avoid introducing moisture or contaminants.Freezer: You can also freeze it in small portions for up to 2 months. Thaw overnight in the refrigerator before using. Instant Pot Method
    Set the Instant Pot to Sauté (Normal) mode.
     
    Once hot, add oil. Add mustard seeds and let them start to pop. Then add cumin seeds, fenugreek seeds, fennel seeds, kalonji, and hing. Sauté for 30 to 45 seconds until the spices are fragrant and the fenugreek seeds start to change color.
     
    Add diced mangoes, salt, and water. Mix well, then cancel sauté mode. Secure the lid and set the Instant Pot to Pressure Cook for 2 minutes.
     
    Once the cooking cycle is complete, do a Quick Release. Open the lid carefully and check the mangoes-they should be tender but not mushy.
     
    Turn the Instant Pot back to Sauté (Low) mode. Add jaggery, Kashmiri chili powder, and chaat masala. Stir and cook just until the jaggery melts and the chutney comes to a gentle simmer. This should take about 2 to 3 minutes.
     
    Turn off the Instant Pot. Let the chutney cool completely before transferring to a clean glass jar. Store in the refrigerator for up to 2 weeks.
