Makhana drink powder

 Fox nuts, also widely known as makhana or lotus seeds, offer extensive health benefits due to their high content of antioxidants, plant-based protein, dietary fiber, and essential minerals like magnesium, potassium, and calcium. These nutrient-dense seeds originate from the Euryale ferox plant and serve as an exceptional low-calorie, gluten-free super-food snack.

 Ingredients

Makhana 2 cups dry roast for 6-8 minutes on low flame, remove to cool

 In the same pan add

Almonds 1/4  cup

Cashew ¼ cup

Pistachios ¼ cup

Roasted gram pottukadalai ¼ cup

Roast for 5 minutes on low flame, remove and cool

Once cool, remove add 3 cardamom and powder the nuts and makhana to a coarse/ fine powder as desired

Can be stored in the fridge for a month or more.

Add 1 tbsp of powder or more as desired, 1 tsp of jaggery pdr/ honey , pour hot milk, mix well and enjoy the healthy protein, mineral rich drink.

Protein-rich Home-made Healthy Drink Powder

Ingredients

Almonds 30 gm

cashews 30 gm

pistachios 30 gm

walnuts 30 gm

roasted chana dal / pottukadalai 50 gm

melon seeds 10 gm

pumpkin seeds 10 gm

sunflower seeds 10 gm

roast the above ingredients for 5-6 minutes, stirring continuously till aroma comes,  remove & cool

In the same pan add

makhana/ Fox nuts 50 gm roast it for 3-4 min. on medium flame stirring on low flame

remove and cool completely

rock candy/ kalkandu 30 gm

saffron ¼ tsp ( optional)

Once the roasted ingredients have cooled completely, add rock candy & saffron and grind in a mixer jar to a fine powder.

Cool a bit and store in a clean, air-tight bottle, after 3-4 days, store it in the fridge to last long.

When needed, add 2-3 tbsp as desired, add sugar/ honey to taste, add hot or cold milk, stir well.

Enjoy this protein rich drink to boost your energy .

TIP In case, you don't have dried mint pdr, but have mint chutney, mix it with that, but then eat it at once, or else it will get soggy.

Makhana Ladoo

 Ingredients

  • 100 grams makhana / lotus seeds
  • ½ cup almonds
  • ½ cup cashew
  • 1 cup coconut, desiccated
  • 4 tbsp ghee
  • 2 tbsp cashew, chopped
  • 2 tbsp almonds, chopped
  • 2 tbsp pistachios, chopped
  • 2 tbsp raisins
  • 2 tbsp sesame seeds
  • ½ tsp cardamom powder
  • cup jaggery
  • ½ cup water
  •

  • Preparations
  •  
  • In a large kadai take 100 grams makhana and roast on low flame.
  • Roast until the makhana turns crunchy.
  • Cool completely, and grind to a fine powder. keep aside.
  • In a pan take ½ cup almonds and ½ cup cashew.
  • Roast until the nuts turn crunchy.
  • Cool completely, and grind to a fine powder. keep aside.
  • Also, roast 1 cup coconut until it turns slightly golden brown.
  • Transfer to the same bowl and keep aside.
  • In pan heat 2 tbsp ghee. add 2 tbsp cashew, 2 tbsp almonds, 2 tbsp pistachios and 2 tbsp raisins.
  • Roast until the nuts turn crunchy. transfer to the same bowl.
  • Also, add 2 tbsp sesame seeds and ½ tsp cardamom powder.
  • Mix well making sure everything is well combined. keep aside.
  • To prepare the jaggery syrup, in a large kadai take 2 tbsp ghee, 1½ cup jaggery and ½ cup water.
  • Stir and dissolve the jaggery completely.
  • Boil the syrup until 1 string consistency is attained.
  • Keeping the flame on low, add ladoo mixture and mix well.
  • Mix well making sure the jaggery syrup is well combined with the mixture.
  • When the mixture is still warm, start preparing the ladoo.
  • Enjoy makhana ladoo for 2 weeks when stored in an airtight container.

    Makhana kheer

    Ingredients:  

    • 2 glasses milk
    • 1 cup makhana (foxnuts)
    • 2 tbsp sugar or jaggery 
    • 1 tbsp chopped almonds and cashews 
    • 1 tbsp cardamom powder 
    • 1 tsp ghee  

    Instructions:

    1. In a skillet with heated ghee, roast makhana until crisp.
    2. While leaving the remaining makhanas intact, grind half of them into a coarse powder.
    3. Add the whole and powdered makhana to a pan of boiling milk.
    4. Cook, stirring constantly, until it thickens, 5 to 7 minutes.
    5. Include the dry fruits, cardamom powder, and sugar.
    6. You can serve it cold or heated.
