Garlic and Onion Soup
Ingredients
Head of garlic - 1
Olive oil - 1 1/2 tsp (divided)
Leeks - 2 1/2 cups (sliced)
Large onions - 4 (thinly sliced)
Salt - 1 tsp (divided)
Thyme - 2 tsp
All-Purpose flour - 2 tbsp
Dry white wine - 1/3 cup
Vegetable broth - 4 cups
Whole milk - 2 cups
Thyme - 6 stalks (garnish)
Ground black pepper - to taste
Preparations
First, heat the oven to 350°F (180°C) and
line a baking pan.
Now peel the outer shell of the garlic head, but don’t separate the
garlic cloves from each other. Wrap the garlic in aluminum foil, place
it on the pan, and bake for 1 hour.
After baking the garlic, let it cool for about 10 minutes, then peel and
place in a small dish until use.
While the garlic is in the oven, heat 1 tablespoon oil in a large pot
over medium heat, add onion and leek, and cook for about 30 minutes
while stirring occasionally.
Add a little water if the onion starts to
cook too quickly.
Add half a teaspoon of salt to the onion and the teaspoon of thyme and
mix well.
Cook for another 30 minutes or until the onion begins to turn
golden brown. (Here too you can add a little water if the onion starts
to brown too quickly).
Now add the flour to the pot with the onion and stir for about a minute,
pour the wine and the vegetable stock and bring to a boil.
Then lower
the flame and cook for about 30 minutes.
After cooking for 30 minutes, place the peeled garlic into a food
processor, pour in the contents of the pot and the rest of the salt in
the recipe, and blend until smooth (you may need to blend the contents
in two rounds if your food processor is too small).
Once blended, pour the mixture into a large pot, add the milk and cook
for about 8 minutes or until the soup is well heated through.
Transfer
to serving bowls, place thyme leaves for decoration with a bit of
coarsely ground black pepper, and serve.

3 Cheese Fondue
Ingredients
Havarti cheese - 1 cup (shredded)
Cheddar cheese - 1 cup (shredded)
American cheese - 1 cup (shredded)
All-purpose flour - 3 tbsp.
Dry white wine - 1 cup
Garlic powder - 1/4 tsp.
French bread - 6 cups (cut into cubes)
Preparations
Place flour and cheeses in a medium bowl to
mix.
In a 2-quart saucepan, pour the wine and cook over medium heat
until well-heated.
Important: do not boil the wine.
Add the cheese mixture (from step 1), 1/2 cup at a time, stirring until
melted.
Stir in the garlic powder.
Pour the mixture into the fondue pot and keep warm.
Serve with bread

Blue Cheese Fondue
For lovers of the pungent taste of blue
cheese, here's a creamy fondue that will leave you licking your fingers.
If you don't have a fondue pot setup, you can also serve this
camping-style, with a portable stove. Whip up your skewers and enjoy
this fondue with one of our homemade croutons:
Ingredients :
Cambozola cheese - 3/4 lbs. (rind removed; cheese crumbled)
Pungent blue cheese - 3/4 lbs. (rind removed; cheese crumbled)
Cornstarch - 5 tsp.
Dry white wine - 1/4 cup
Fresh thyme - 2 tsp. (minced)
Heavy cream - 3/4 cup
Cayenne pepper - a pinch
Ground black pepper - 1/4 tsp.
Chives - 5 (snipped)
Assorted vegetables - 2-3 lbs (such as blanched green beans, broccolini, asparagus, peeled baby carrots and radishes)
Crusty bread - 1/2 loaf (cut into cubes)
Method of preparing the Fondue:
Combine the cheeses and cornstarch in a bowl.
Add the wine and thyme to a heavy-bottomed saucepan and place on
medium heat.
Leave to simmer for 1 minute, then whisk in the cream,
cayenne, and black pepper.
Reduce heat to medium-low when the mixture starts to bubble.
Transfer the cheese mixture (from step 1) to the saucepan and stir
with a rubber spatula until the cheese has completely melted and is
well-combined with the rest of the ingredients.
Fill a fondue pot with 1 inch of simmering water and place the
ceramic insert over the pot.
Pour in the fondue and add some chives as a
final touch.
Serve alongside the dippers.

Pumpkin Risotto
Making any kind of risotto at home requires
that bit of love you have to add to everything you cook. You can call
it patience or passion, but this dish is not one you can set and forget.
Don't leave the risotto alone for more than 3 minutes. If you forget to
stir it often, it will stick together and form a huge lump.

Ingredients :
Olive oil - as needed
Nutmeg - 1/4 tsp.
Sage - 2 tsp.
Yellow onion - 1/2 (finely chopped)
Kosher salt - 1/4 tsp.
Arborio rice - 8 oz. *
Dry white wine - 1 cup OR apple cider vinegar
Vegetable broth - 1 quart (heated)
Pecorino cheese - 1/2 cup (grated) OR Parmesan cheese
Pumpkin puree - 1/2 cup
Unsalted butter - 2 tbsp.
* Carnaroli, Vialone, Nano or sushi rice. Farro, quinoa, and even steel-cut oats can also work well.
Method of preparation:
Heat 2 tbsp of oil over a medium flame.
Fry the nutmeg and half of
the sage for 30 seconds, then add the onion.
Season with salt and cook
until soft.
Add the rice.
When it starts to be toasted and fragrant, add the
wine.
Continue cooking, stirring occasionally, until nearly evaporated, 2
to 3 minutes.
Reduce heat and add 3/4 cup vegetable broth. Stir often and let
simmer.
When the broth is nearly all absorbed, add the remainder in
small batches over the course of 25-30 minutes until the texture is
thick.
Fold in the cheese, pumpkin puree, butter, and the rest of the sage.
Cook for another 5 minutes. Serve hot.
Tip:
Add turmeric and pepper for a warming effect.
