Watermelon Smoothie

 I had a lot of cut watermelon, but this one wasn't very tasty. I hate throwing food in the bin. Not that it wasn't eatable, just that it lacked a bit taste. So, I decided to make it into a healthy smoothie, by blending it with 2 bananas, pinch salt and wee bit sugar. It was yummy, the first time, I made like this. Earlier, I have made just watermelon juice by simply blending watermelon pieces in the mixer jar. 

Yesterday, this watermelon smoothie was my dinner, felt light and full.

Classic Banoffee Pie!

The classic and much loved recipe calls for a golden caramel mix topped over a crushed biscuit base. Your guests will surely be wowed by this incredibly delicious dessert.

Ingredients

For the base: 

• 7 tbsp (100g) butter, melted 

• 250g graham crackers or digestive biscuits, crushed 

For the toffee

• 7 tbsp (100g) butter 

• ⅔ cup (100g) dark brown sugar 

• 1 can (14 oz/397g) sweetened condensed milk 

For the top: 

• 3 to 4 bananas 

• 1¼ cup (300ml) heavy cream, lightly whipped 

• Cocoa powder

Directions

1. Crush the crackers/biscuits in a food processor or by hand, as finely as possible. Mix it with the melted butter and spread it around the base of an 8-inch (20 cm) springform pan. If you wish, you may grease the pan beforehand to make it easier to remove the pie later. Leave it in the freezer for ten minutes. 

2. Melt the butter and brown sugar in a non-stick saucepan over low heat, stirring all the time with a silicon spatula or whisk, until the sugar has dissolved. Add the sweetened condensed milk and bring to a boil, always mixing. Let it boil for about a minute and spread over the biscuit base. Let it cool for a few minutes and then chill it for at least 1 hour in the fridge, until firm. 

3. Slice the bananas and place them over the toffee. Top with whipped cream and decorate with cocoa powder. Leave it in the fridge until it’s time to serve.

High-Protein Peanut Butter, Banana & Blueberry Overnight Oats

Ingredients

  • 2 ripe medium bananas, divided

  • 1 cup nonfat plain strained (Greek-style) yogurt

  • ½ cup unsweetened soy milk

  • ¼ cup natural peanut butter

  • 1 tablespoon pure maple syrup

  • Pinch of salt

  • 1 cup old-fashioned rolled oats

  • 1 cup blueberries, plus more for garnish

Directions

  1. Place 1 banana in a large bowl; mash with a fork until smooth. Add 1 cup yogurt, ½ cup soy milk, ¼ cup peanut butter, 1 tablespoon maple syrup and a pinch of salt; stir until combined. Stir in 1 cup oats and 1 cup blueberries. Cover and refrigerate until the oats have softened, at least 8 hours.

  2. Before serving, slice the remaining banana. Top the oats with banana slices. Garnish with more blueberries, if desired.

To make ahead

Refrigerate oats, covered, for up to 3 days. Top with banana just before serving.

Healthy Baked Kiwi Oats bread

 Ingredients and Prep

Oats 1 cup pdr

Add 150 ml milk, mix well

Eggs 2 pinch of salt, mix well

Peel and mash 2 bananas, add to the oats mixture

Lime juice 1 tsp

Kiwis 3 peel, cut into ½, then cut into slices

Grease a baking dish well, spread the oats mixture

Place keep pieces on top

Bake @ 18o C/ 360 F for 30 minutes

These brownies don’t contain any refined sugar, flour, butter, or even eggs. In fact, this recipe only requires 2 ingredients: overripe bananas and unsweetened cocoa powder!

At first glance, it’s hard to imagine how these two ingredients can be turned into a brownie, but keep in mind that bananas are often used as an egg substitute in vegan baked goods. Cocoa powder, on the other hand, is a popular replacement for flour in flourless cakes and brownies. So, when mixed together, these two ingredients make a very fudge brownie with a rich chocolate taste. 
 
If you want to keep the brownies as healthy as possible, you can skip the frosting. However, if you want to indulge in something sweeter, you can top the brownies with an easy three-ingredient chocolate frosting made of melted coconut oil, unsweetened cocoa powder, and maple syrup. Not only are these brownies a healthier substitute for regular brownies, but they are also quite easy to prepare, and are sure to satisfy your chocolate craving.


Ingredients: 
 
Bananas - 4 large (mashed) 
 
Cocoa powder - 6 tbsp. (unsweetened) 


Preparations
 
Preheat the oven to 350°F (180°C). Line an 8x4-inch loaf pan with baking paper. 
 
Whisk the cocoa powder with the mashed bananas until a smooth batter forms. 
 
Pour the batter into the prepared loaf pan. Spread the batter evenly across the pan using a spatula. 
 
Bake for 20-25 minutes or until a dry crust forms, and a toothpick inserted in the middle comes out moist. 
 
Let the brownies cool completely in the pan. 
 
Chill in the fridge for 1-2 hours or until firm enough to cut.

Apple-Banana Milk Pudding with Caramelized Bananas

 Ingredients and Preparations

 

Peel an apple, chop it into small pieces

Heat 20 gm butter in a pan, add the apple piece, mix well add 30 gm pdr sugar, mix well

Cook it stirring till sugar has melted

Take 2 bananas, peel, chop and add it to the apple mixture, mix well, remove mash it we;;

Heat 800 ml milk add 100 gm condensed milk, mix well, add 150 gm cornstarch, mix well

Add the mashed fruits, whisk well, add food colouring, optional ( green/ yellow)

Cook it stirring well, cook till thick, pour into a pan, level it, cover with cling film, the film should be touching the pudding.

Let cool and refrigerate it till set, 

peel 2 bananas, chop into thin rounds

Heat 100 gm sugar in a pan to caramelize stirring well, once brown add banana slices, mix well to coat them, add 50 ml water, mix well cook till it is thick and bananas get mashed, remove

Remove the set mixture, remove the cling film, spread desiccated coconut all over and around, slice into pieces and serve with caramalised banana.
