Classic Fruit Cake

  

 Ingredients
 
Fruit Cake


    ¾ cups (170 g) unsalted butter
    ¾ cups (150 g) soft brown sugar
    2 cups (350 g) dried fruits -a combination of sultanas, raisins, currants, red and green glace cherries and citrus peel (see note 1)
    ½ cup (100 g) dates - pitted and cut into small pieces, see note 2
    ⅔ cups (166 g) store bought sweetened orange juice.
    1½ tbsp orange zest - the zest of about 1 medium sized orange. The juice of the orange will be used later in the syrup.
    2 tbsp (36 g) molasses
   1¾ cups (210 g) all purpose flour
   1½ tsp baking pdr
 ½ tsp salt - omit if using salted butter

 1½ tsp cinnamon pdr

 ½ tsp dry ginger pdr
 ¼ tsp nutmeg  pdr
 1 tsp all spice
 ¼ cup (52 g) unflavoured vegetable oil 

 3 large eggs - room temperature
 1 cup (100 g) walnuts - halved

Orange Syrup/Glaze


 3 tbsp (50 g) freshly squeezed orange juice

 1¾ tbsp (20 g) white granulated sugar

Instructions

Boiled Fruit Mixture
In a large saucepan add unsalted butter, soft brown sugar, dried fruits, dates (if using firm dates - see note 2), orange juice, orange zest and molasses. Bring that to a simmer over a medium heat, and once simmering, continue to let it simmer for a few more minutes.

Once done, pour the mixture in a large shallow dish to cool. To speed up the process I like to place the mixture into the freezer for about 45 minutes. Once ready it should have thickened up in consistency. Make sure it's at room temperature (not hot or cold) before moving onto the next step. 

Fruit Cake


Preheat oven to 140 °C (285°F) with the fan on (see note 3 if you don't have a fan function) and grease an 8x3 inch cake tin (I use my homemade cake release), and line the bottom with baking paper.

Sift together your flour, baking powder, salt, cinnamon powder, ground ginger powder, nutmeg and all spice. Mix together with a whisk or fork and set aside for now.
 

In a small bowl combine the unflavoured vegetable oil and eggs. Whisk with a fork and set aside.
    

In a large bowl add in the boiled fruit mixture from earlier (make sure it's at room temperature), and add in the oil/egg mixture. Using a spatula, fold until it's well combined. The mixture is quite thick so may take a bit of mixing to get it all combined properly.

Next add in the walnuts (and dates if you didn't add them to the boiled fruit mixture), and fold until well combined.
    

Next add in the sifted dry ingredients from earlier and fold until just combined. Do not over mix, so only mix until you can't see any more streaks of flour.
 

Pour the batter into the cake tin and spread it out evenly. Drop the cake tin lightly on the counter to remove any large air bubbles, and then bake for 75-85 minutes, or until a skewer or knife inserted into the centre comes out clean.

Allow the cake to cool in the cake tin for 30 minutes and then run a thin knife around the edges of the cake tin to release the cake, and then turn it out onto a wire rack (right side up) to cool. 

Orange Syrup

While the cake is cooling, prepare the orange syrup. Combine the orange juice and sugar in a bowl, and then heat it up (in the microwave or on the stove top) until the sugar is completely dissolved.
    

Using a pastry brush, brush the orange syrup all over the top and sides of the cake while the cake is still warm. Be sure to use all the syrup up.
    

Wrap the cake in two layers of foil  and place it into an airtight container. Leave it in a cool dry place for 48 hours before serving. 

 

Notes

In this recipe I use an oven with the fan function turned on. The fan forced function cooks cakes/cupcakes faster, so if your oven doesn't have a fan option, then you will need to increase the baking temperature to 155°C (310°F) so that the cake/cupcake bakes at the same rate as mine   It is crucial to allow the fruit cake to sit for 48 hours before serving it. This is going to allow the flavours to develop and the cake to become nice and moist. If you cut the cake too early, it may seem a little crumbly. It will still taste nice, but for the perfect texture it's best to wait.

Sweet potato ginger cake

Ingredients
 

1 cup (240g) mashed sweet potato (about 1 medium)

¼ cup (60g) tahini (or other nut/seed butter)

¼ cup (60ml) maple syrup or honey

 2 large eggs

¼ cup (60g) melted coconut oil or unsalted butter

1 tsp vanilla extract

2 tsp  ginger pdr
1 tsp  cinnamon pdr
¼ tsp nutmeg pdr
¼ tsp  cloves pdr
¼ tsp salt
1½ cups (150g) almond flour
1 tsp baking powder
½ tsp baking soda

 2 tbsp chia seeds (optional, for added texture)

 

Preparations

 Preheat the oven to 350°F (175°C) and grease a 9-inch (23cm) round cake pan or line it with parchment paper.

In a large bowl, whisk together mashed sweet potato, tahini, maple syrup, eggs, melted coconut oil, and vanilla extract until smooth. 

Stir in ground ginger, cinnamon, nutmeg, cloves, and salt until the mixture is evenly flavored.

In a separate bowl, whisk together almond flour, baking powder, baking soda, and chia seeds (if using).

Gradually fold the dry ingredients into the wet mixture, mixing until well combined.

Pour the batter into the prepared cake pan and smooth the top. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. Slice and enjoy!

Aate ki Pinni / Wheat ladoo

  

Ingredients 1 cup=100 gms

2 cups wheat flour

1-2 cups ghee

1/4 cup edible gum

1 cup sugar

2 tbsp cashews chopped

2 tbsp walnuts chopped

2 tbsp almonds chopped

2 tbsp raisins

1 tbsp melon seeds

1 tsp cardamom pdr

1 tsp dry ginger pdr


Method

Take a small pan and bring to heat in a low to medium flame 

Add 3/4 cup ghee and heat

Add the edible gum to it and gently sauté till the crystals start to puff

Transfer to a plate and let it cool. Then grind it to powder

Pinni dough:

Take a large heavy-bottomed pan and place over medium flame. Pour the remaining ghee into it

Once the ghee melts, add wheat flour and mix

Sauté and continue to stir till the colour of the mixture turns golden brown. Over time, the wheat dough will hold shape and the ghee starts to separate 

Mix it well again and move it to a plate. Set it aside to cool

Use a mixer or a hand blender to powder the sugar and set it aside

Chop all the dry fruits into small pieces and set aside

When the dough becomes warm enough to hold, sprinkle the cardamom powder and ginger powder. Mix and let them blend in

Add the prepared edible gum to the dough and mix again

Lastly, toss in the powdered sugar and chopped dry fruits. Combine it well into the dough

Creating the shape:

Take a scoop of the dough and press it between your fingers and palm, creating a long oval-like shape (pinni).

Repeat for the rest of the dough.OR you can roll it round like a ladoo, if you prefer the round shape.

PUMPKIN BANANA NUT BREAD

 INGREDIENTS

 2-½ cups all purpose flour/ maida

1-¾ cups pumpkin puree

1-½ cups or 4 medium ripe bananas, mashed

1/4 cup vegetable oil or 4 tablespoon unsalted butter, softened

2 large eggs, room temperature

1 cup light brown sugar lightly packed

1-½ tsp pumpkin pie spice

1 tsp cinnamon pdr

¼ tsp dry ginger pdr

1-¾ tsp baking soda

½ tsp salt

1 tsp vanilla extract

1 cup walnuts or pecans, chopped

baking spray or butter to grease the tin

 

INSTRUCTIONS Preheat the oven to 350° Fahrenheit. Grease two 8-by-4 inch loaf pan with baking spray. Set aside. In a medium bowl, combine flour, baking soda, pumpkin spice, ground cinnamon, and salt. Whisk with a wire. Set aside. In a large bowl, add oil, and sugar and beat at a medium speed until incorporated. Add eggs, pumpkin puree, mashed bananas, and vanilla extract, and beat at medium speed until incorporated. Scrape down the sides of the bowl. Add flour mixture and blend at low speed until combined. Do not over-mix. Fold in nuts. Pour batter into loaf pans and bake on the center rack for 50 minutes, or until a toothpick inserted in the center comes out clean. Remove the pans from the oven and place them on a cooling rack. Allow the pans to cool for at least 20 minutes, before slicing the bread. Enjoy warm, and nutty, pumpkin banana nut bread with a cup of piping hot coffee / tea.

Kashmiri Pulao

 Ingredients

1 cup basmati rice (pre-soaked) 

1 piece cinnamon (1 inch)

1 tsp shahi jeera 

1 bay leaf

3 cloves

1 whole black cardamom

½ tsp dried ginger powder (saunth) 

1 tsp fennel seeds( saunf) powder

 8-10 strands of saffron

½ cup ghee

Salt to taste

1 small onion thinly sliced

12-15 cashews 

¼ cup fresh pomegranate seeds 

 

Preparation

Wash and strain the rice and keep aside. 

In a heavy bottom vessel, melt some ghee and add the whole spices to it, like cinnamon, cloves, black cardamom, shahi jeera, and bay leaf and allow them to sizzle on low flame.

Now add the fennel seed powder and dried ginger powder. Mix well. 

Finally, add the soaked basmati rice and mix well. Add water measured about double the quantity of rice, adjust the salt seasoning cover and allow it to cook. 

Once the rice is completely cooked and the water is dried out, transfer it to a serving plate. 

In a small kadhai, add some ghee, fry the cashews and keep aside. Garnish the rice with strands of saffron, fried cashews and fresh pomegranate seeds and serve hot.

Multipurpose Gravy Premix

 Ingredients

cashew  1/4 cup

melon seeds  1 tbsp

cloves  6 

cardamom  4

black cardamom 2

cinnamon  2 " 

jeera    1 tsp

bay leaf  3-4

star anise 1

milk pdr  1/2 cup

corn flour  1 tbsp

besan  1 tbsp

garlic pdr  1 tsp

onion pdr   1 tbsp

dry ginger pdr  1 tsp

kasturi methi  1 tbsp

black pepper  1 tsp

turmeric pdr  1 tsp

Kashmiri red chili pdr  2 tbsp

pdr sugar 1 tsp

coriander pdr 2 tbsp

salt 1 tsp

 

Method

heat a pan  add cashew and melon seeds. fry well stirring n medium flame for 2-3 minutes, remove in a plate.

add all the other dry masalas to the pan- cloves, cardamoms, bay leaf, star anise, jeera, cinnamon  fry well in medium flame stirring till are well roasted, remove and cool in a plate

powder the cooled dry ingredients well. In a bowl add the pdr masala, mix with rest of the ingredients well, mix all well, put in a Zip lock bag or in an air-tight container.

NOTE- the masala will last outside in room temperature for 10-15 days, in the fridge for 3-4 months.
