Sugar is not for sweetness- Chef's tips

Sugar is as great a seasoning as salt. So add a bit of sugar to a dish with pickled or fresh tomatoes or a tomato paste - the sugar will reduce their natural sourness, making the meal taste better.

3 Things That Happen When You Rest Cookie Dough Before Baking

1. Better Texture

When you place your cookie dough in the fridge to rest, it doesn’t just affect the temperature! While it rests, the moisture from the wet ingredients will continue to saturate the dry ingredients. This effect improves the overall texture of the dough.
This textural difference helps well-rested cookie dough bake and brown more evenly. It also helps ensure your cookies will have deliciously chewy insides and crisp outsides!

2. Better Flavor

In addition to improving the texture of your cookies, resting the dough can make them taste better too! Resting the dough is key to achieving that rich, somewhat butterscotch-y “cookie flavor.”
The flavor changes as a result of the way the ingredients begin to break down during the resting phase. This process contributes to browning and caramelization, which can both affect the flavor in a significant way!

3. Less Spreading

Ever wonder why so many baking recipes call for cold butter? It’s because the way butter melts has a massive impact on the appearance, taste, and texture of the final product!
If the butter melts too early, the dough will spread too much and you’ll end up with flat, crispy, and possibly oily cookies. Taking the time to rest the dough in the fridge can help you avoid most of these issues.

How Long Should I Rest Cookie Dough?

Many cookie recipes provide instructions about how long to rest the dough before baking, but it isn’t necessary to follow that guideline exactly. Chilling the dough for just 30 minutes is enough to make a pronounced difference, but you can leave them in longer if you like.

Which Cookie Dough Should I Rest?

Most varieties of cookie doughs, including molded and drop cookies, will benefit from being rested before baking. With doughs that are particularly sticky, resting is crucial because it makes the dough easier to handle.
On the other hand, if the cookie mixture is more like a batter than a dough, it can typically be baked right away. This includes cake mix cookies, and any that need to be piped onto a tray.
Bonus Tip: Scoop Before Resting
  • Resting cookie dough in the fridge can make it harder to scoop out into individual portions.
  • To counter this, scoop and roll your cookie dough before putting it in the fridge.
  • Scooping freshly mixed dough is so much easier, and you’ll still get the benefits of resting the dough!

Perfect Coffee

This trick will be appreciated by coffee lovers and those who cannot wake up in the morning without a cup of freshly brewed coffee. To make the perfect coffee, add a pinch of salt and cinnamon to some ground coffee before brewing. The salt helps to get rid of the bitterness from any burned beans, and the cinnamon adds an amazing taste.

Some foods taste better when frozen

Avocado
It makes a wonderful afternoon snack with salt and chili powder !when it is frozen, taste like a popsicles.
  Chocolate
Chocolates when frozen, stays longer in your mouth, as it will be cold and hard to bite initially, so, you'll be happy just one small piece than gorging down a whole pack.
Bananas
Freezing bananas removes the odd after taste which puts some people off the fruit totally. Frozen bananas are easier to mash and make milkshakes, and it also tastes like a fruity popsicle.
Peas
Normally we all have frozen peas in our freezer, have you tried eating it straight out of the freezer with out thawing it, if not try, it makes a delicious crunchy snack, you can salt and pepper if you like. It is full of protein and fibre too !
Grapes
Frozen grapes taste even better than candies and more nutritious too, go for it, to eat healthy.
Peanut butter
Make your own peanut butter and chocolate treat, by first melting chocolate in the microwave or over double boiler, add peanut butter, once chocolate is melted, mix well, once cool, roll and store in the freezer, to make your own delicious treat. Or to make it healthier, add some cornflakes too, it give it a crunchy taste.
Strawberries
It is sad to see strawberries getting spoiled quickly when you keep in the fridge, try storing them in the freezer, as the taste remains the same and the crunchiness will delight you.
Cakes
Some like their cakes fresh and warm straight out of the oven, like my children, as it tastes really good. But, some who aren't too fond of cakes, go for the ones that are frozen with icing on it !
Nuts
Some nuts spoil quickly when they're kept out, hence I store my nuts in the fridge, but storing them in the freezer makes them crunchier !
Mangoes
The king of fruits, is sadly seasonal, if you want to enjoy them throughout the year, best make mango puree or take out the pulp, mash it, put it first in your ice-tray, once cubes set, put them in zip-lock bags to store them. It will be easy to use, as you can take out as many cubes as you want each time, whether to make a smoothie or an ice-cream or a cake !

* Boiling eggs in salty water will make sure that even if the eggs break, their insides will not escape, and you will be able to take off the shell with ease.

* To check if the egg is fresh, put it in a bowl filled with salty water. A fresh egg will sink, while a stale egg will float.

* Peeled apples, pears and potatoes won't blacken if you put them in cold, slightly salty, water.

* Have coffee or tea marks in your cups? You can remove them with a moist sponge and some salt water.

* Your glassware can go back to being shiny and transparent if you wash them with hot salt water and then with regular cold water.

* Using salt, you can easily clean the bottom of a burnt pot or pan - just add a thick layer of salt at the bottom, add some water and leave the pot to stand for the night. In the morning - boil the water.
* A combination of salt and baking soda will clean the fridge and remove odors.

* If you add just a tiny pinch of salt to your coffee it will improve the taste and counter the bitterness.

* If you add a tiny pinch of salt to milk it will stay fresh for longer.
