Carrot cake

 Cake recipes:  

Carrot cake is such a wonderful dessert that even people who dislike the funny-shaped root vegetable can't resist it. And this has got to be up there as one of the best-ever carrot cake recipes. Make this classic favorite for a crowd and you definitely won't have any leftovers to bring home. But you'll certainly be the most popular baker in your town!
Ingredients: Cake: 
 
• 4 large eggs 
 
• 1 1/3 cup vegetable oil 
 
• 2 1/4 cup sugar 
 
• 2 1/4 cups all-purpose flour 
 
• 2 tsp baking soda 
 
• 2 tsp baking powder 
 
• 1/2 tsp salt 
 
• 2 tsp cinnamon pdr
 
• 1/2 tsp cloves pdr
 
• 1/2 tsp nutmeg pdr
 
• 20 oz. carrots, finely chopped (about 3 1/4 cups) 
 
• 1/2 cup chopped walnuts 
 
• 1 cup crushed pineapple, well-drained 
 
White Chocolate Cream Cheese Icing  
 
• 1 1/2 pounds cream cheese, room temperature 
 
• 2 cups white chocolate chips, melted 
 
• 3/4 cups (1 1/2 sticks) unsalted butter, room temperature 
 
• 2 tsp grated lemon rind 
 
• Chopped walnuts, for garnish 
 
 
Method For the Cake  
1. Preheat the oven to 350℉. Line the bottom of three 8-inch round cake pans with parchment paper. Leave sides of pans dry - no cooking spray needed. 
 
2. Combine eggs and oil in a large mixing bowl and beat for 2 minutes with a mixer on medium speed. Add 1 cup of sugar and continue mixing for 2 minutes. Add the remaining sugar and mix 3 to 4 minutes. 
 
3. Combine flour and the next 6 ingredients (flour through to nutmeg); add to the egg mixture, beating on low speed until blended, about 1 minute. Add carrots, walnuts, and pineapple; mix until well combined.
 
4. Divide the batter evenly among pans. 
 
5. Bake for 60 minutes, or until a wooden pick inserted in the center comes out clean. 
 
6. Cool to room temperature on a wire rack. Run a knife around the edge of the cakes and remove from pans. Wrap in plastic wrap and refrigerate overnight.

Carrot Cake

Ingredients: 
Cake:

To Prepare Icing 
 
Place cream cheese in mixing bowl; beat with a mixer on medium speed until smooth. Add melted chocolate a little at a time, continuing to beat at medium speed. Add butter a little at a time. Scrape down sides of bowl; add lemon rind and beat until combined. 
 
Remove cakes from the fridge. Ice top of one layer. Places the second layer on top; ice top. Place the third layer on top; ice top and sides of cake. Press chopped walnuts into sides of cake.

Pineapple cake

 Ingredients:
2 cups all-purpose flour
2 cups sugar
1 tsp. baking soda
2 large eggs
1 tsp. vanilla
1 - 20 oz can Dole crushed pineapple (with juice)


For the Topping:
1/2 cup butter
2/3 cup evaporated milk
1/2 tsp vanilla
1 cup sugar
1 cup chopped pecans or walnuts
1 cup coconut flakes


Method

Preheat oven to 350 degrees.
Grease or spray with baking spray a 13 x 9-inch baking dish. In a large bowl, mix together flour, sugar, baking soda, eggs, vanilla, and crushed pineapple (with juice) until well combined.
Pour batter into prepared pan and bake for 40-45 minutes or until golden brown.
While cake is baking, heat butter, evaporated milk, vanilla, and sugar in a medium-sized saucepan until it begins to boil over medium-high heat.
Stir in pecans or walnuts and coconut and continue cooking on medium heat about 5 minutes, stirring constantly. The mixture will thicken slightly.
Remove baked cake from oven and poke holes all over the top using a wooden chopstick or the tines of a large serving fork.
Spread topping evenly over the top of the warm cake and let cool.
Slice and serve!

Cornstarch, 1 1/2 tbsp
Crushed pineapple (with juice), 8 oz
Water, 2 tbsp


For the Whipped Cream Frosting:

Heavy whipping cream, cold, 3 1/2 cups
Powdered sugar, 1 1/2 cups
Vanilla extract, 1 tbsp
Dried pineapple slices for decoration


 Instructions:

 
Bake the Cake: Mix dry ingredients, cream butter with oil and sugar, then add eggs, crushed pineapple, and dry ingredients alternately. Divide into 3 pans and bake.


Prepare the Filling:
Cook sugar, cornstarch, pineapple with juice, and water until thickened. Chill completely.


Whipped Cream Frosting
: Whip heavy cream with powdered sugar and vanilla until stiff peaks form.


Assemble the Cake:
After cakes cool, layer with pineapple filling and whipped cream frosting. Decorate with whipped cream swirls and dried pineapple slices.

Southern Pineapple Cake

 Ingredients:

For the Cake:


2 cups all-purpose flour
2 tsp baking soda
1 tsp salt
2 cups granulated sugar
2 eggs
1 can (20 oz) crushed pineapple in juice, undrained
1 tsp vanilla extract


For the Frosting:


1 package (8 oz) cream cheese, softened
1/2 cup unsalted butter, softened
4 cups powdered sugar, sifted
1 tsp vanilla extract
1/2 cup chopped pecans or walnuts (optional)
Additional pineapple slices or chunks for garnish (optional)


Instructions:

Preheat Oven and Prepare Pans: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or one 9x13-inch pan.

Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.

Combine Cake Ingredients: In a large bowl, mix the granulated sugar, eggs, crushed pineapple with its juice, and vanilla extract until well combined. Gradually add the dry ingredients to the pineapple mixture, stirring just until blended.

Bake the Cake: Pour the batter into the prepared pans. Bake for 25-30 minutes for round pans or 35-40 minutes for a 9x13-inch pan, or until a toothpick inserted into the center of the cake comes out clean. Remove from the oven and cool the cakes in the pans on a wire rack.

Prepare the Frosting: In a large bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, beating until creamy and smooth. If using, fold in the chopped nuts.

PINEAPPLE CAKE with PINEAPPLE Cream Cheese Frosting

   

Ingredients:

 
For the Cake:
2 cups all-purpose flour 

1 1/2 cups granulated sugar 

1 tso baking soda 

1 tsp baking powder 

1/2 tsp salt 

1 cup crushed pineapple, undrained

1/2 cup vegetable oil 

2 large eggs 

1 tsp vanilla extract


For the Pineapple Cream Cheese Frosting:

8 oz cream cheese, softened

1/2 cup unsalted butter, softened 

4 cups powdered sugar 

1/2 cup crushed pineapple, well-drained 

1 tsp vanilla extract 

 

Preparation Steps:


 Prepare the Cake:

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

In a large mixing bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.

Add the crushed pineapple (with juice), vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.

Divide the batter evenly between the prepared cake pans.

Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.

Remove the cakes from the oven and allow them to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.
