Mixed Fruit Jelly

Ingredients

gelatin  6 1/2 tsp
citric acid  1 1/4 tsp
sugar  6 1/2 tbsp
water  2 1/2 cups
mixed fruit 1 small tin ( 450 gm)
cherry essence  1/4 tsp
mixed fruit essence
those who don't mind using food colours, may use lemon and cochineal colours

Method

take gelatin, citric acid, sugar, add water, mix well, keep aside for 5 minutes
heat to melt sugar and gelatin, remove from heat and cool
divide this mixture into2 parts- 1/3 and 2/3
in 1/3 part add cherry essence and cochineal colour, set in the fridge to semi-set
in the 2/3 part add yellow colour and mixed fruit essence and half of the fruit from the tin, put in a bowl to semi-set in the fridge
in amould, first pour the semi-set red jelly put in the fridge to set completely
take out, pour over it the mixed fruit jelly
set in fridge to set completely
unmould in a serving plate, by dipping the mould in hot water
decorate with mixed fruit pieces and serve at once

ps- word of caution, food colours are carcinogen, so I stopped using them, so instead of using colours, in one part, you can add some fruits to semi-set , the other plain, then pour carefully one above the other to set completely, decorate with remaining fruits

CHILLED SAGO( SABUDANA) COCONUT MILK DRINK

INGREDIENTS

sago soaked and cooked till soft, but each round piece can be seen individually
curd 1/2 cup
brown sugar syrup as needed
strawberries few chopped
rice chikki broken or peanut chikki broken into small pieces
blueberry jam  2-3 tsp
mixed fruit jam 1-2 tsp
coconut milk as needed

 to serve
mix blueberry jam with curd well
in a glass, with mixed fruit jam, make small stripes all around
add broken chikki pieces,sago  2-3 tsp
then add some curd and jam mixture, coconut milk till it comes to 3/4 glass, add some brown sugar syrup, mix well, add some chopped strawberries, some more chikki pieces on top, serve at once

Homemade mixed fruit jam

Ingredients:

2 ripe apples (peeled and chopped)
2 ripe bananas (peeled, cored and chopped)
2 oranges (peeled, cored and chopped)
6 plums (peeled, cored and chopped)
4 cups of seedless black grapes
6-8 strawberries (chopped)
1 full pineapple (peeled, cored and chopped)
1 1/2 cups of sugar or more if required
1/2 tbsp lemon juice

Method:

1. In a blender or mixer add all the fruits and blend until smooth to form a puree.
2. In a pan, add the puree along with sugar and cook on medium flame stirring continuously till it comes to a boil.
3. Slow flame and let it simmer until the puree thickens. Stirring on regular intervals.
4. Once the puree starts to thicken it will become like semi-solid jam. Then add the lemon juice and mix well.
5. Cook until jam becomes thick. Keep stirring on intervals. It will takes about 1 1/2 hours on low flame.
6. You can stop cooking once the desire consistency reached.

Tips:

1. Make sure to cook in slow flame only and stir regularly.
2. If you want to check whether or not your jam is ready, pour jam in a plate, when you slant it, it should not move/ run.
3. Once ready remove from heat, allow to cool slightly and then store in sterilize jar.

YOGHURT FRUIT TRIPHAL

INGREDIENTS
sponge cake  6 slices
mixed fruit jam  2 tbsp
apple, banana, grapes, orange cut together  2 cups
thick hung curd  2 cups
castor sugar 3/4 cup or less
black currant soaked in water for 2 hours 1 tbsp
 for custard 
milk  1 cup
custard pdr.  1 tbsp
sugar 2 tbsp
vanilla essence  1 tsp

METHOD
mix thick curd, cooled custard, vanilla, castor sugar to prepare thick sauce.
take a flat serving bowl
arrange half of the surd sauce, spread 1/2 of the jam
rest of the jam, spread on cake pieces, put them over mixed fruits.
pour the remaining sauce over them, level it
decorate the top with fruit pieces.
chill in fridge till serving time.

Mixed fruit whip

Ingredients

Apple 1 chopped      
 banana 1 chopped     
guava 1 chopped (seeds removed)
Orange 1 skinned    
Milkmaid 1 tin     
cream ½ cup ( optional)    
juice of 1 lemon

Method
1)      mix together all the chopped fruits, lemon juice.
2)      Keep aside 2 tbsp of the chopped fruit & blend the remaining fruit in a mixie with Milkmaid till smooth. Add the cram if you like.
3)      Add the chopped fruit & serve chilled.
4)      For variety, you can make single fruit whips using any seasonal or favourite fruit in season.

Mixed fruit rabri


Mixed fruit rabri

Ingredients
Milk 2litres            sugar 8 tbsp  
mixed fruits ( apple, banana, strawberry, pineapple, pomegranate) 2 cups     cardamom pdr 1 tsp

method
1)      boil the milk in a thick bottomed pan.
2)      Add sugar & keep stirring on low flame until it reduces to 1/4th its quantity.
3)      Add cardamom pdr. Mix well.
4)      Remove & allow it to cool.
5)      Add the fruits, mix well. Serve chilled.
