Protein Mayo Toasties

Ingredients

Method

Add the Greek Yogurt, crumbled paneer, garlic cloves, olive oil, salt and pepper to a blending jar and get a smooth creamy high-protein spread.
Toast the multigrain bread slices using olive oil, and toast until crisp in a pan/ tawa
Spread a generous layer of the high protein spread on the toasts.
Top it with chopped cherry tomatoes. Drizzle some olive oil on them, sprinkle some salt and pepper and finally garnish with some fresh basil leaves.
Serve immediately.

Paneer Ki Kheer

Ingredients

Instructions

Bring milk to a boil on medium flame, making sure not to scorch the bottom. Add cardamom powder and saffron and simmer for 40 minutes till the milk thickens up and reduces to half.
Add sugar and mix well. Add paneer and simmer for another 10-15 minutes.
Switch off the flame and let the kheer cool down. Serve warm topped with chopped nuts.

Peas+ cottage cheese parantha

 INGREDIENTS

green peas blanched 1/2 cup 

paneer/ cottage cheese grated  1 cup

green chilies 3-4 or as per taste

ginger 1" chopped

coriander leaves chopped 2 tbsp

salt to taste

ajwain 1/2 tsp

garam masala 1 tsp

turmeric pdr  1/2 tsp

wheat flour s needed to make dough

oil 2 tbsp to make dough

ghee for frying


METHOD

grind green peas blanched, with green chilies and ginger to a fine paste

add the paste, cottage cheese, salt, turmeric pdr, ajwain, garam masala pdr mix well

add the flour mix well, add oil and knead well for 3-4 minutes to have a soft dough.

Take an orange size ball, roll into round/ square/ rectangle

heat a tawa, put the rolled parantha, keep gas on medium flame, keep turning, once brown spots appear, add little ghee and cook on both sides till brown and crisp

You can serve this parantha with dal, salad, pickle and curd to make a complete meal.

Cottage Cheese Ice Cream

 Ingredients:

  • 2 cups cottage cheese / paneer
  • 1 cup frozen fruit of choice ( I used frozen strawberries)
  • 3 tbsp honey 

Optional –

  • 2 tsp Vanilla extract
  • 2 tbsp peanut butter
  • chocolate chips

Method:

In a high-speed blender or food processor, add all ingredients and blend until smooth. Once smooth, pour the cottage cheese mixture into a freezer-friendly container with a lid. Cover and freeze for at least 4 hours or until frozen. Run an ice cream scoop under warm water to help scoop out your ice cream and enjoy.

Matar- paneer parantha

 Ingredients 

for stuffing

peas blanched 1 cup ( depends on how many people you're going to make)

paneer crumbled  1 cup

green chilies finely chopped to taste  OR red chili pdr to taste

chaat masala  1 tsp

jeera  1 tsp lightly crushed

turmeric pdr  1/4 tsp

ginger finely chopped 1 tsp

garlic finely chopped 1 tsp ( optional)

salt to taste

coriander leaves finely chopped 2 tbsp

oil 2 tbsp 

hing little


wheat flour as needed to make dough like for roti, with salt, chili pdr little, ajwain lightly crushed with palms, ghee as needed to cook paranthas


Method

in a pan, heat oil, add jeera, once it crackles, add hing, add peas, crush them well along with green chilies, ginger and garlic, cook them well for 4-5 minutes stirring well, adding turmeric pdr

then add paneer, add salt to taste and coriander leaves, mix all well for 2 minutes, remove and cool

make dough adding oil / ghee as desired, cover and rest the dough for 10 minutes.

roll out the dough, spread the filling, bring the sides together, covering the stuffing well 

roll it out gently, making sure the stuffing doesn't come out

once light brown on both sides, apply some ghee, cook it till well, remove, serve hot with pickles, curd.

Malai kofta

 Ingredients:

For the Kofta:

  • 2 large potatoes, boiled and mashed
  • 1 cup paneer, grated
  • 2 tbsp cornflour
  • 2 tbsp chopped cashews and raisins (optional)
  • 1 tsp garam masala
  • Salt to taste
  • Oil for frying

For the Gravy:

  • 2 tbsp oil or butter
  • 1 large onion, finely chopped
  • 1 tbsp ginger-garlic paste
  • 2 large tomatoes, pureed
  • 1/2 cup cashew nuts, soaked in water for 30 minutes and then ground to a paste
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1 tsp cumin powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chili powder
  • 1/2 tsp garam masala
  • 1/2 cup heavy cream
  • 1/2 tsp kasturi methi (dried fenugreek leaves)
  • Salt to taste
  • Fresh coriander leaves for garnish

Instructions:

1. Prepare the Kofta:

  • In a mixing bowl, combine mashed potatoes, grated paneer, cornflour, garam masala, and salt. Mix well to form a dough.
  • Divide the mixture into small portions and shape each portion into a ball. If desired, place a few cashews and raisins in the center of each ball.
  • Heat oil in a deep pan over medium heat. Fry the koftas until golden brown. Remove and drain on paper towels. Set aside.

2. Prepare the Gravy:

  • Heat oil or butter in a large pan. Add cumin seeds and let them splutter.
  • Add finely chopped onions and saute until golden brown.
  • Add ginger-garlic paste and saute for another 1-2 minutes.
  • Add tomato puree and cook until the oil separates from the mixture.
  • Add cashew paste and cook for 3-4 minutes, stirring continuously.
  • Add coriander powder, cumin powder, turmeric powder, red chili powder, and salt. Mix well.
  • Add 1 cup of water (adjust for desired consistency) and bring to a boil. Simmer for 5-7 minutes.
  • Stir in heavy cream and kasturi methi. Cook for another 2-3 minutes.

3. Assemble the Malai Kofta:

  • Add the fried koftas to the gravy just before serving and let them simmer for 2-3 minutes to soak up the flavors.
  • Garnish with fresh coriander leaves.

4. Serve:

  • Serve the Malai Kofta hot with naan, roti, or steamed rice.
