Chocolate Eclairs

 Chocolate Eclairs  

Ingredients for Chocolate Eclairs: 
 
Unsalted butter - 1/2 cup 
 
Water - 1 cup 
 
All-Purpose flour - 1 cup 
 
Salt - 1/4 tsp. 
 
Eggs - 4 
 
Vanilla pudding mix - 1 5-oz. packet 
 
Whole milk - 2 1/2 cups (cold) 
 
Heavy cream - 1 cup 
 
Confectioners’ sugar - 1 1/4 cups 
 
Vanilla extract - 2 tsp. 
 
Butter - 2 tbsp. (for the chocolate ganache) 
 
Hot water - 3 tbsp. 
 
Dark chocolate - 2 oz.


Method of preparing the Chocolate Eclairs: 
 
Preheat the oven to 450°F (230°C) and grease a cookie tray. 
 
In a medium saucepan, combine 1/2 cup butter and 1 cup water. Bring to a boil, stirring until the butter melts completely. Reduce to low heat, and add the flour and salt. Stir vigorously until the mixture starts to form a stiff ball. 
 
Remove from the heat. Add the eggs, one at a time, beating well to incorporate completely after each addition. Using a spoon or a pastry bag fitted with a No. 10 (or larger tip), spoon or pipe the dough onto the cookie sheet in 1 1/2 x 4-inch strips. 
 
Bake for 15 minutes in a preheated oven, then reduce the heat to 325°F (165°C) and bake for 20 minutes longer. Leave to cool completely on a wire rack. 
 
For the filling, combine the pudding mix and milk in a medium bowl according to the package directions. In a separate bowl, beat the cream with an electric mixer until soft peaks form. Beat in 1/4 cup confectioner’s sugar and 1 teaspoon of vanilla extract. Fold the whipped cream into the pudding mixture. 
 
Cut the cooled pastry shells in two lengthwise and fill the shells with the pudding mixture. 
 
For the icing, melt the chocolate and 2 tablespoons of butter in a medium saucepan over low heat. Stir in 1 cup of confectioner’s sugar and 1 teaspoon vanilla. Stir in the hot water, one tablespoon at a time, until the ganache is smooth and has reached the desired consistency. 
 
Remove from the heat, cool slightly, and drizzle over the top of your filled eclairs. Refrigerate until it’s time to serve.

Eggnog Cheesecake Bites

Ingredients for Eggnog Cheesecake Bites:  
 
Oreo cookies - 24 (cookie part only) 
 
Unsalted butter - 3 tbsp. (melted) 
 
Confectioners’ sugar - 1 cup 
 
All-Purpose flour - 2 tbsp. 
 
Eggs - 2 
 
Nutmeg - 1 tsp. (ground) 
 
Eggnog - 3/4 cup 
 
Rum - 1 tbsp. 
 
Cream cheese - 3 (8 oz) packages (softened at room temperature) 
 
 
Method of preparing the Eggnog Cheesecake Bites:  
 
Preheat the oven to 325°F. Grind up the cookie pieces in a food processor. Combine with the melted butter and press into the bottom of a 7”x11” baking dish. Bake for 10 minutes and set aside. 
 
While the crust is cooling, preheat the oven to 425°F. Blend the remaining ingredients in a food processor until it’s completely smooth. Once the crust has cooled, pour the batter on top of the crust and bake for 10 minutes. 
 
Decrease the temperature to 250°F and bake for 30 minutes. The inside should be slightly jiggly and the outer rims should have puffed up. Remove from the oven and allow to cool completely before cutting and serving. You can top these with dollops of whipped cream if desired.

Chocolate Pistachio Delight

 Ingredients:
2 cups all-purpose flour
3/4 cup unsweetened cocoa powder
2 cups granulated sugar
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 large eggs
1 cup buttermilk
1 cup strong black coffee, cooled
1/2 cup vegetable oil
2 tsp vanilla extract
 

For the Pistachio Cream Filling:

1 cup shelled pistachios, finely ground
1/2 cup unsalted butter, softened
3 cups confectioners' sugar
1 tsp almond extract
4 tbsp heavy cream
 

For the Pistachio Glaze:

1 cup powdered sugar
2 tbsp unsalted pistachios, finely ground
4 tbsp milk
1/2 tsp almond extract


Directions:

Preheat your oven to 350°F (175°C) and grease three 9-inch cake pans before flouring them.
Whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt in a large bowl.
Beat in eggs, buttermilk, coffee, oil, and vanilla extract until the mixture is smooth and well combined.
Evenly distribute the batter among the prepared cake pans. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
For the pistachio cream filling, cream the butter until it's light and fluffy. Gradually mix in the confectioners' sugar, ground pistachios, and almond extract. Add the heavy cream one tablespoon at a time until the desired consistency is reached.
Let the cakes cool for 10 minutes, then remove them from the pans to cool completely on wire racks.
Once cooled, spread the pistachio cream filling between the layers and over the top of the cake.
For the pistachio glaze, sift the powdered sugar and ground pistachios together in a medium bowl. Gradually whisk in the milk until the mixture is smooth. Stir in the almond extract for added flavor.
Drizzle the glaze over the cake just before serving for an extra touch of elegance.

Elegant Pistachio Delight Cheesecake Bars

Ingredients:

1 1/2 cups graham cracker crumbs
6 tbsp unsalted butter, melted
1/4 cup granulated sugar
1/4 tsp salt
2 cups pistachios, shelled and unsalted
16 oz cream cheese, softened
1 cup granulated sugar
1 cup sour cream
4 large eggs
2 tsp pure vanilla extract
Green food coloring (optional)


For the topping:

1/2 cup pistachio paste
1/4 cup confectioners' sugar
Whole pistachios for garnish
Edible silver leaf for decoration (optional)


Directions:

Preheat oven to 325°F (163°C).
Combine graham cracker crumbs, melted butter, sugar, and salt. Press into the bottom of a lined 9-inch square baking pan.
Bake crust for 10 minutes. Remove from oven and let cool.
Finely grind 2 cups of pistachios and set aside.
Beat cream cheese and sugar until smooth. Add sour cream, then eggs one at a time, followed by vanilla extract. If desired, add green food coloring to reach your preferred hue.
Fold in ground pistachios and pour over crust. Bake for 40-45 minutes until set but slightly wobbly in the center.
Let cool, then chill for at least 4 hours.
For the topping, mix pistachio paste and confectioners' sugar until smooth

Spread over the chilled cheesecake.
Garnish with whole pistachios and silver leaf before serving.

Jam Cake

Ingredients
 butter    1 1/2 cups
sugar  2 cups
eggs  6
all purpose flour/ maida  3 1/2 cups
baking soda   2 tsp
ground allspice  2 tsp
cinnamon  pdr.  2 tsp
buttermilk   6 tbsp
strawberry jam   2 cups
Method 
Cream soft butter. Add sugar slowly, beating until creamy. 
Add eggs (room temperature) one at a time. Beat well after each egg. 
Sift all-purpose flour and measure. Then sift again with baking soda and spices. 
Add flour mixture alternately with buttermilk. Mix to blend well. 
Mixing this cake requires about 25 to 30 minutes. 
Last of all fold in strawberry jam. If berries are quite large chop fine. 
Take four square 8-inch layer cake pans 2 inches deep and brush bottom of pans lightly with  oil. Flour well. 
Pour batter into pans and level the batter with spatula. Tap the pans lightly against the counter to remove any air bubbles.
Bake in moderate oven (375 degrees F) about 30-40 minutes or until done. 
Cool on cake rack 5 minutes, then turn out onto cake rack to cool completely before icing. 
Frost with Uncooked Caramel Icing. 
Uncooked Caramel Icing 
butter 1 1/2 sticks
cream  1/2 cup 
dark brown sugar  2 cups 
vanilla essence  2 tsp
salt   1/2 tsp
Confectioner's sugar (enough to make spreadable consistency) 
Melt butter and cream together. 
While hot, stir in brown sugar. 
Cool and stir in vanilla. 
Stir in salt and sifted confectioner's sugar, as needed.
This cake tastes better, when eaten after 1/2 days ! if you've the patience to wait ?

Peach and Blueberry Cake

INGREDIENTS


METHOD

  1. Heat oven to 200 Deg. C. 
  2. Whisk together the flour, baking powder, and salt in a medium bowl; set aside.
  3. In a separate bowl, beat the butter and brown sugar with an electric mixer on medium-high until light and fluffy, 2 to 3 minutes.
  4.  Beat in the egg and vanilla, scraping down the sides of the bowl as necessary.
  5. Reduce mixer speed to low.
  6.  Add half the flour mixture, then the sour cream, and then the remaining flour mixture, mixing well between additions. 
  7. Fold in the peaches and blueberries. (Don’t worry if there seems to be too much fruit in proportion to batter. The batter will rise around it while baking.)
  8. Transfer the batter to a baking dish and sprinkle with the almonds. 
  9. Bake until a toothpick inserted in the center comes out clean (aim for the batter, not the fruit), 1½ hours to 1 hour, 45 minutes.
  10.  Let cool slightly. Dust with the confectioners’ sugar and serve warm.

Lemon Clove Cookies

INGREDIENTS
flour   2 cups
cloves ground 1/4 tsp.
butter softened   3/4 cup or 1 1/2 sticks
egg   1
pure lemon extract   1/2 tsp
salt  1/8 tsp
granulated sugar  1 cup

LEMON GLAZE
confectioner's sugar  1 1/2 cups
water 1 tbsp+ 1 tsp
pure lemon extract  1/4 tsp

METHOD

mix flour, cloves, salt, set aside.
beat butter & granulated sugar in a large bowl using an electric mixer at medium speed, until the mixture becomes light & fluffy.
Add egg & lemon extract, beat till well blended.
Gradually add flour mixture till well mixed.
Divide dough into 1/2.
Form each half into a log about 1 1/2" in diameter & 9" long.
Warp in wax paper, refrigerate for an hour or until firm.
Pre-heat oven to 350 deg. F. 
Cut dough into 1/4" thick slices.
Place on non-greased baking sheets
Bake for 12-15 minutes or until lightly browned.
Cool on baking sheets for 1 minute.
Remove to wire racks, cool completely.
For the lemon glaze, mix confectioner's sugar, water, lemon extract in a small bowl until blended.
Drizzle over cooled cookies.
Let the cookies stand until the glaze is set.
