Home-made Nutty Ice-cream

 Ingredients and Preparations

full fat milk 1/2 litter boil it, add

almonds 10

cashews 10

 rusk biscuit 5

cardamom 3 

once it all boils, switch off the gas

 add makhana 10-12

sugar 1/2 cup

milk pdr 2 tbsp

mix all well

once cool, add the mixture in a blender jar along with 1/4 cup cream, blend well

pour the mixture in an airtight container, sprinkle some chopped nuts on top

freeze it for 7-8 hours till well set, your home-made healthy ice-cream is ready.

Kutchi Dabeli

Preparations

For dabeli masala, heat a pan and add all the whole spices, and a pinch of salt and sauté them on low heat.
Add the coconut and continue roasting all the ingredients until the spices are fragrant.
Cool the roasted spice and add them to a blender.
Add the powdered spices, sugar and blend to a smooth prefer.
Add salt to taste, blend again and keep aside.
For spicy chutney, soak the red chillies in hot water for 10 to 15 minutes.
Cool the soaked chillies and deseed them if you want the chutney to have a smoother consistency and be less spicy.
Add all the ingredients to the blender, with required amount of salt and water and blend to a semi thick, smooth paste.
For sweet chutney, heat some water enough to soak the tamarind and let it soak for 15-20 minutes.
After the water is cooled, squeeze the tamarind to separate the pulp.
Heat oil in vessel and saute the powdered spices briefly without burning.
Add the water with the tamarind pulp and the remaining ingredients and add some more water enough to boil the ingredients.
Let it boil on low heat till it become semi thick.
Remove the pieces of the date and set aside.
For dabeli filling, boil the potatoes very well, peel and mash them.
Heat oil in a vessel, add the cumin seeds and asafoetida and sauté it quickly.
Add the dabeli masala and saute it.
Add the mashed potatoes, sweet chutney and mix well.
Add the chopped coriander leaves and mix well.
Set the dabeli filling in a plate, cover the top with grated coconut, masala peanuts and pomegranate arils and press them well.
For assembling the Kutchi Dabeli, cut the pav in half alongside the width.
Toast it lightly.
Spread the sweet chutney on inner side of one half of the pav and the spicy chutney on inner side of the other half.
Add the dabeli filling in generous amounts on one half of the Fresho pav and place the other half on top.
Dip the pav sideways in the nylon sev, and the Kutchi Dabeli is ready to serve.

Jackfruit khichdi

Ingredients

Tender raw jackfruit – 1 kg
Basmati rice – ½ kg
Moong dal – ½ kg
Ginger juice – 1 tbsp
Peppercorns – 1 tsp
Shahjeera – 1 tsp
Cardamoms – 4 pods
Cinnamon – 1 stick
Mace – 1 blade
Cloves – 4
Bay leaves – 2
Dry mango powder – 1 tbsp
Thick cream – ¼ cup
Rosewater – 1 tbsp
Saffron strands – a few
Ghee 1 kg
Salt to taste 
 
Preparations 

1.Prepare the jackfruit: Cut the jackfruit into cubes and boil until tender. Drain well, squeeze out excess water, and spread on a dry cloth to absorb any remaining moisture.

2.Marinate: Combine the jackfruit with salt, turmeric, coriander, and mango powder. Mix well to coat evenly.

3.Fry: Heat oil and fry the remaining spices; remove and set aside. In the same oil, fry the marinated jackfruit pieces until they turn a deep reddish colour.

4.Cook the khichdi: Sauté the rice and dal with the spices until aromatic. Gradually add all the fried ingredients, one by one, to the boiling water. Cover and cook until the khichdi is soft and well blended. Finish with a garnish of fresh cream and saffron steeped in rosewater.

Corn Palak Khichdi

 Corn Palak Khichdi 

 Ingredients

4 Cups roughly chopped palak (spinach)

1 cup basmati rice

1/2 tsp split yellow moong dal

2 cup sweet corn

Turmeric powder

Salt to taste

2 ½ tsp ginger garlic paste

1 cup onions, finely chopped

1/2 cup tomatoes, finely chopped

Chili powder

Garam masala

Coriander powder

cinnamon stick

1 cloves

2 cardamoms

2 tbsp cumin powder

Curry leaves

2 tbsp garlic , finely chopped

2 tbsp green chilies, finely chopped

 

Preparations

In a bowl, soak rice and dal for 30 minutes. Drain it well and keep it aside.
 
Take a pressure cooker and dump the drained rice and dal, along with turmeric powder, salt, 2 cups of sweetcorn, and 2 cups of water. Mix it well.

Pressure cook the concoction for 15 minutes or three whistles.

Meanwhile, prepare the spinach puree by blending it in a mixer along with four tablespoons of water. Blend it till it is smooth.

In a non-stick pan, heat four tablespoons of ghee or any oil of your choice and add the ginger-garlic paste to it.

Add chopped onions and tomatoes to the same pan and cook on a medium flame for three minutes or until its rawness is gone. Now add the sweet corn to it.

Next, add the palak (spinach) puree along with other spices like chili powder, garam masala and coriander powder, and mix well.

After the pressure is reduced in the pressure cooker, add the cooked dal-rice concoction along with salt and 2 cups of water. Cook the mixture for 3-4 minutes while stirring occasionally.

In another pan, take one tablespoon of ghee or oil of your choice and add the remaining spices like cloves, cumin powder, cardamom, cinnamon, and curry leaves. Mix well before adding the chopped garlic and sliced green chilies.

Add this mixture to the piping hot Palak Corn Khichdi and mix well. Serve it hot with coconut chutney if desired.

Instant Kalakhand

 Ingredients and Preparations

Paneer 2 cups/ 250 gm knead well, keep aside

Pdr ¼ cup sugar and 2 cardamoms, fine pdr add to paneer

Add ¼ cup milk pdr, add to paneer, mix well

Divide dough into 2, 1 add pink colour, mix well

In a small flat cup/plate, grease, spread the pink mixture, level, spread the white on top

Garnish with chopped nuts

Nutty Saffron Rolls stuffed with Kulkhand- NO COOK


 Ingredients

Cashews 10

Almonds 10

Sugar ½ cup

Cardamom 4 grind fine

Desiccated coconut 1 cup grind

Transfer to a bowl, saffron pdr  2 pinch

Milk pdr 1/2 cup I added,  mix well add 1-2 tsp milk as needed

Roll , keep in the fridge, cut decorate

I stuffed with kulkhand and rolled it, put almond slivers.
