Home-made Nutty Ice-cream

 Ingredients and Preparations

full fat milk 1/2 litter boil it, add

almonds 10

cashews 10

 rusk biscuit 5

cardamom 3 

once it all boils, switch off the gas

 add makhana 10-12

sugar 1/2 cup

milk pdr 2 tbsp

mix all well

once cool, add the mixture in a blender jar along with 1/4 cup cream, blend well

pour the mixture in an airtight container, sprinkle some chopped nuts on top

freeze it for 7-8 hours till well set, your home-made healthy ice-cream is ready.

This Is How Ice-Cream Was Made in the 1700s - with Cheese!

 Ice-cream sounds like a typically modern treat, yet did you know there are recipes for our favorite frozen dessert that go back hundreds of years? Here is one unique creation that comes from the 1700s. You only need a few basic ingredients, and it’s wonderfully easy to make. The best thing is that this ice-cream is quite savory, since it is made with Parmesan cheese! Wow, what an idea! According to Mrs. Curtis this ice-cream is a little sweet, luxuriously creamy and slides easily down your throat. Lovely!

So, go on! You know you want to try and taste how your ancestors ate their ice-cream. Here’s the recipe that’s survived the centuries.

Ingredients 

For the custard: 

• 6 fresh eggs 

• 3 oz grated Parmesan 

• 2 cups cream 

For the syrup: 

• 2 cups sugar 

• 1 cup water

Directions  

1. Whisk the eggs in a large mixing bowl, and add the Parmesan. 

2. Make the syrup by heating 2 cups of sugar with 1 cup of water. Simmer until thick and syrupy (about 1 cup). 

3. Now add the homemade syrup to the egg and cheese mix. 

4. Then add 2 cups cream to make a basic custard. 

5. Stir the mixture into a pot on put on a low-medium heat. 

6. Cook until you can pull a wooden spoon out of the thickened custard and make a mark into it with your finger that doesn’t close up.

7. Take it off the fire and let cool for half an hour. 

8. Store it in a container and freeze for about 10 minutes. Then take it out and give it a churn. Repeat 3 times. Then serve, or let it freeze further until you are ready to serve.

Malva pudding with cranberries & ginger

 A traditional South African malva pudding with cranberries & ginger recipe 

 

Ingredients

PUDDING:

  • 1 cup of sugar
  • 1 egg
  • 1 Tbsp smooth apricot jam
  • Zest of an orange/clementine
  • 1 cup / 140gms cake flour
  • 1 tsp baking soda/bicarb
  • pinch of salt
  • 1 tsp butter
  • 1 tsp vinegar
  • 1 cup milk
  • 1 Tbsp finely chopped preserved ginger
  • 50 grams cranberries soaked in boiling water for 20 minutes then drained & cooled
  • Ultra Mel Vanilla custard to serve

SAUCE:

  • ½ / cup cream
  • 75 gm butter
  • 1/2  cup sugar
  • 1/4 cup clementine/ orange juice

Instructions

  • Preheat the oven to 180 C (350F)
  • Using an electric mixer beat the egg, sugar and jam on medium-high for about 5 minutes
  • In a separate bowl sift the flour, bicarb and salt.
  • Melt the butter in the microwave and then add the vinegar.
  • Whilst the mixer is still going on slow alternate between adding the sifted flour and the milk in parts until it’s well combined.
  • Add the butter and vinegar mixture and the chopped ginger and briefly mix.
  • Empty the batter into a greased baking dish approx 20cm in diameter (glass pyrex or ceramic works well) or a small well-greased bundt cake tin or 8 – 10 well-greased mini bundt moulds.
  • Scatter the drained cranberries evenly over the surface of the batter. It is quite runny so it is better to add it in at this stage so as to avoid it sinking to the bottom of the dish. Gently swirl the fruit into the mix or push it in slightly with a skewer.
  • Cover with foil and bake for 45 mins. If you are making it into a bundt cake you will need to increase the cooking time to about 50 – 55 minutes. For mini bundt, the cooking time can be reduced to 35 – 40 minutes.
  • The pudding is ready when it has an even golden brown colour over the top, so bake a bit longer if it is still pale in the middle
  • While the malva pudding is baking, melt all the sauce ingredients in a small pot on the stove and pour this over the pudding as soon as it comes out of the oven. If you are making a bundt shape, pour about a ¼ of the sauce over, wait a few minutes and then tip it out while it is still warm (run a knife around the middle of the tin to loosen it).

Notes

  • If you are not using one large flat dish for this malva pudding its quite difficult to pour all the sauce over in one go so I keep some aside to pour over later. Just keep drizzling it over until you can’t any more. Its important that it is kept warm though.

Quick Rolls NO COOK

 Ingredients and Preparations

Oreo cookies 15, separate and remove the cream in a bowl

break the cookies and powder them fine

knead it to a smooth dough, shape however you want

In case you're not able to shape it, then add little ghee

to the cream add 1 tsp veg. oil, mix well

pipe over the shapes . 

Nice contrast dark brown to white piping.

Creamy Almond Cauliflower

  

 Ingredients

1 large head cauliflower (about 1 1/2 pounds; 680 g), halved, cored, and cut into 3-inch florets (see note)

1/4 cup (60 ml) vegetable oil, divided

Kosher salt and freshly ground black pepper to taste

2 medium yellow onions (about 1 pound; 450 g), finely chopped

1 cinnamon stick, broken in half

4 cloves

1 star anise pod

1 (1-inch) piece ginger, peeled and grated (about 1 ounce; 30 g)

5 medium cloves (25 g) garlic, grated or minced

2 tsp  cumin pdr

2 tsp coriander pdr

1 tsp dried chili flakes

1 tbsp garam masala

1/4 cup ground almonds (30 g; can be ground in a food processor from about 1/3 cup slivered raw almonds)

1 cup (240 mlGreek yogurt

1 cup (240 ml) homemade quick veg. stock ( see my next post)

1/2 cup (120 mlheavy cream

1/2 cup (75 ggolden raisins

1 tbsp light brown sugar

1/4 cup (45 g) toasted slivered almonds, for garnish

Coriander leaves and tender stems, for garnish

Directions

Preheat oven to 450°F (230°C) and place rack in middle position. Place cauliflower on a rimmed baking sheet and toss with 2 tablespoons (30ml) oil. Season with salt and pepper. Roast until golden brown on one side, about 10 minutes. Turn and roast until brown on second side and just tender, 7 to 10 minutes longer. Remove from oven and set aside.

In a large cast iron skillet or stainless steel sauté pan, heat remaining 2 tablespoons (30ml) oil over medium-high heat until shimmering. Add onions, cinnamon stick, cloves, and star anise and cook, stirring, until onions are soft and lightly browned, 5 to 7 minutes. Stir in ginger, garlic, cumin, coriander, chili flakes, garam masala, ground almonds, and 1/2 cup (120ml) water. Cook, stirring often, until water is absorbed and ground almonds begin to look and smell toasted, about 5 minutes.

Stir in yogurt, stock, cream, raisins, and brown sugar. Season lightly with salt, then lower heat and simmer until sauce thickens to a creamy glaze, about 10 minutes. (If it gets too thick, stir in a little more water or stock.) Stir in roasted cauliflower and toss until cauliflower is warmed through and coated in sauce, 2 to 3 minutes. Remove cinnamon stick pieces and star anise. Transfer to a warmed serving dish and scatter with toasted slivered almonds and coriander. Serve with roti, rice, jeera rice, puri.

Almond milk pudding with caramelized almonds

 Ingredients and Prep

 

250 ml condensed milk add almond milk 1 liter mix well

Add 1tsp almond essence

In a small bowl add 150 ml water over 10 gm agar agar, mix well

Pour the almond milk in a pan to cook, stirring continuously, after 3-4 minutes, add agar agar mixture, continue cooking stirring continuously for 5-7 min. cool and refrigerate for 2-3 hours

Powder coarsely 50 gm almonds

In a pan add 100 gm sugar, caramelize it , stirring continuously add 20 gm butter, keep stirring and  50 ml cream and cook add almonds, keep stirring till well mixed

Remove it in a bowl, serve it with the cooled almond milk pudding

Daulat ki chaat

 A picture of step 4 of Purani dilli special Daulat ki chaat. 

Ingredients

2 liters full cream milk

2 cups cream

1 tsp cream of tartar 

1 tsp caster sugar

1 tsp rose water 

few saffron strands soaked in 2 tbsp warm milk

chopped dry fruits 1 tbsp


Preparations

Combine the milk cream cream of tartar saffron strands soaked in milk in large bowl and refrigerate overnight.

Then blend with hand blander or electric blender, till it gets frothy. 

Now remove the froth in small bowl sprinkle castor sugar. 

Now our Daulat ki chat is ready to serve garnish with pistachio and saffron milk.
