Mix Veg Sizzling Platter

Tikki ingredients

1 cups boiled pees
1 cups blanche spinach (finely chopped)
4 green chilies, chopped
1 onion , finely chopped
1 cups coriander leaves, finely chopped
4 tbsp khus khus
4 tbsp peanut pdr
1 tsp jeera pdr, roasted
1 tsp dry mango pdr

1 tsp red chili pdr
Salt to taste

 

Chutney Ingredients

1 raw mango
1 cups fresh coconut
2 green chilies
1 piece of ginger
3 cloves of garlic
1/2 tbsp jeera pdr
1 tbsp salt

Stir fry

200 gram Paneer
1 cups broccoli
3 tbsp butter
3 garlic cloves
1 small onion
1 celery stick
2 large tomatoes
1 capsicum

salt to taste 

How to Make Mix Veg Sizzling Platter Tikki

1.Take all ingredients in a big bowl
2.Smash with hands, knead it to make thick dough
3.Make small tikkis out of the dough
4.Stir fry in non stick pan (use ghee or olive oil)

Chutney

1.Blend all ingredients in a mixer to make a fine paste.
2.Add water as per preferred consistency and blend again
3.Chutney is ready

Stir Fry Paneer

1.Take 1 tbsp butter in a pan
2.Add paneer & all veggies and stir fry on high flame for a min till goldenish brown
3.Add salt & pepper

For the gravy

1.Take 1 tbsp butter in a pan.
2.Add chopped onions, celery, garlic & tomatoes and saute on high flame till goldenish brown.
3.Add salt (to taste) and blend everything to make a thin paste

RECIPE NOTES  Serving Instructions

Cook gravy in pan for 1 min on high flame and transfer in sizzling plate.
Add the stir-fried paneer and veggies on it.
Place the tikki on the side and chutney along side in a separate bowl.

Sabudana Ki Tikki

 Khasta Sabudana Ki Tikki 

Ingredients

125 gm sabudana

130 gm potato

5 gm green chili, chopped

cashews chopped 1 tbsp

1/2 tsp cumin powder

1/2 tsp dry mango powder

sendha namak to taste

300 ml oil for frying

 

Preparations

Soak the sabudana for overnight and drain the next day.

Boil the potatoes and mash them. Mix in the sabudana pearls and add green chili, cashew nuts, cumin powder along with dry mango powder and sendha namak.

Make small equal size patties out of the mixture and fry until golden brown in hot oil.
 
Serve hot with green chutney.

Bread Masala Idli

Ingredients:

• 7-8 Bread Slice

To making potatoes mixture:

• 2-3 Mashed Boiled Potatoes
• ½ tsp red chili powder
• ¼ tsp dry mango powder
• 1 tsp grated ginger
• Green chilies finely chopped as per your taste
• 1 tsp garam masala
• ½ tsp cumin powder
• Fresh chopped coriander leaves
• Salt as per taste

To Make Curd Mixture:
• ½ cup curd
• Red chili powder
• Salt as per taste

To Making Tempering:
• 1-2 tsp oil
• 1 tsp mustard seeds
• Curry leaves finely chopped
• 2 tbsp fresh coriander leaves finely chopped
 

 Method:
1. Take mashed boiled potatoes in a deep bowl add all the spices red chili powder, mango powder, grated ginger, chopped green chili,  garam masala, cumin powder, now add fresh chopped coriander leaves ,add salt as per taste.
2. Mix all ingredients until well combined.
3. Cut bread slice into round shape with the help of katori, in the same way cut all the bread slice into round shape.
4. Now take a one roundel bread slice.
5. then spread potato mixture on top of the roundel bread, apply it evenly on one side of roundel.
6. Make all bread slice in the same way.
7. Now take curd in a bowl mix and make it smooth.
8. Add salt as per taste and red chili powder mix it.
9. Heat non-stick pan on a medium flame and spread oil in the pan.
10. Once the pan gets little hot place the potato side of the roundel bread on pan.
11. Now spread curd mixture on top of the side of bread.
12. Then cover the pan and cook on a low flame for 5-6 mins.   
13. After cooked bread uncover the pan then take out from the pan.
14. Now make all the bread idli in a same way.
15. Then we will make tempering, take a sauce pan add oil and heat for few mins, then  add mustard seeds let it crackle.
16. Now add curry leaves and chopped coriander leaves sauté for few mins.
17. Put little water so that tempering does not get burn.
18. Now turn of the flame and pour the tempering on the top of the breads idli to garnish. Serve hot, can be eaten plain or with chutney of your choice.

Onion kachori

Ingredients

4 onion very finely chopped

1 bowl all-purpose flour

1 tsp kasturi methi

1 tbsp besan/gram flour

1/2 tsp carom seeds / ajwain/ omam

1 tsp red chili powder

1 tsp dry mango powder

salt to taste

oil for frying 


Method

Mix flour, carom seeds, oil and salt to make semi-soft dough by adding little water. Cover and rest the dough.

In a kadhai, heat a  tbsp of oil. Add onion and sauté. Add besan.

After you roast the besan, add salt, dry mango powder, coriander powder, red chili and kasturi methi in it. Now let it cool.

Heat enough oil to fry the kachoris in a kadai.

Make small balls from the dough. Take one ball and make a small puri.

Fill the stuffing and roll it again.

Fry all kachoris on low flame till they turn crisp and golden in colour. Serve hot with imli and green chutney, along with sweetened curd.

Peas Kachori

Ingredients

for dough:

  • 2 cup maida
  • ¼ tsp ajwain
  • ½ tsp salt
  • ¼ cup oil
  • water, for kneading

for stuffing:

  • 3 cup peas / matar, frozen / fresh
  • inch ginger
  • 4 green chilies
  • 2 tbsp oil
  • pinch hing
  • 1 tsp cumin
  • ½ tsp fennel/ saunf
  • 2 tbsp besan / gram flour
  • ½ tsp turmeric pdr
  • ½ tsp cumin powder
  • 1 tsp coriander powder
  • ½ tsp garam masala
  • 1 tsp kasturi methi
  • ½ tsp salt
  • 1 tsp sugar
  • 1 tsp dry mango powder
  • oil, for frying

Instructions 

  • Firstly, on a large plate take 2 cup maida, ¼ tsp ajwain, ½ tsp salt, and ¼ cup oil.
  • Crumble and mix well making sure everything is well combined.
  • Add water as required and knead to a smooth dough.
  • Grease the dough with oil, cover, and rest for 30 minutes.
  • Meanwhile, prepare the stuffing by sauting 3 cup peas.
  • Saute until the peas turn aromatic and soften.
  • Cool completely, and transfer to the mixer jar.
  • Add 1 inch ginger, 4 chili, and grind to a coarse paste. Keep aside.
  • In a pan heat 2 tbsp oil, add pinch hing, 1 tsp cumin, and ½ tsp fennel. Saute until the spices turn aromatic.
  • Further, add 2 tbsp besan and saute till the besan turns aromatic.
  • Now add prepared peas paste and cook for a minute.
  • Keeping the flame on low, add ½ tsp turmeric, ½ tsp cumin powder, 1 tsp coriander powder, ½ tsp garam masala, 1 tsp kasturi methi, ½ tsp salt, 1 tsp sugar, and 1 tsp dry mango powder.
  • Mix well making sure all the spices are well combined.
  • Matar stuffing is ready. Allow to cool completely.
  • Knead the dough again, pinch a small ball-sized dough, and tuck well.
  • With your fingers, press the sides gently and make a cup shape.
  • Place a small ball-sized prepared matar stuffing.
  • Start to pleat and seal tight. Pinch off excess dough.
  • Now flatten gently, having a uniform thickness.
  • in hot oil, keeping the flame on low.
  • Do not touch until the kachori starts to float by itself. Takes approximately 3 minutes.
  • Carefully flip over and fry both sides on low flame.
  • Fry until the kachori turns golden brown and crisp.
  • Drain off the kachori over kitchen paper making sure to remove excess oil.
  • Finally, enjoy Matar Kachori Recipe with imli chutney.

Aloo ka Paratha- dhaba style

 

Ingredients  

  • 2 tbsp Coriander Leaves fine chopped
  • 2 tsp Coriander Powder
  • 1 tsp Dry Mango Powder
  • 1 tsp Cumin Seeds
  • ½ tsp Red Chili Powder
  • ½ tsp Garam Masala Powder
  • Salt according to taste
  • ½ cup Whole Wheat Flour
  • 4 Potato boiled & grated
  • Oil
  • Water

Instructions  In a mixing bowl take atta, add oil and add salt. Mix well and add little water at a time and knead soft, smooth and elastic dough. Knead the dough for at least 8-10 minutes so that it can become soft and elastic once dough is ready, cover it and let it rest for 15 minutes. Meanwhile take grated potatoes and add red chili pdr, cumin powder, amchur powder, garam masala, coriander powder and salt. Mix everything well and make 5-6 balls out of it. Now take out the dough and knead it once again. Take small amount of dough and make small size balls. Dough balls should be same size as of potato balls. Now take one dough ball, dip it in dry flour and roll it to a small circle. Put the potato ball in center and cover it from all the sides. Do same with the other dough balls. Now take one ball dip it in dry four and roll it to big circle. Make sure to roll it with very gentle hands. Put the rolled paratha on medium high heat pan. Let it cook till you see bubbles on top. Now turn the paratha and apply some oil on it. Flip it again and apply oil on this side to. Press the paratha gently so that it can puff up. Cook paratha from both side till it gets brown spots. Once paratha is ready take it out of the pan and serve it hot with chutney and yogurt.    Notes Always grate potatoes so that they won't come out while rolling. Chop coriander very fine so that it also won't come out while rolling. Knead soft , elastic and smooth dough so that it did not break while rolling. Make same size dough and potato balls. Make sure stuffed dough balls should rest  for few minutes before rolling. Roll parathas with very gentle hands .Cook them on hot pan till they become crisp and golden brown.

kaddu Bhat ( Spiced Pumpkin with Rice)

   

Sweet and spicy, soft and tasty, Kaddu Bhat is a melt-in-the-mouth dish of Bihar. It is a pleasant dish made especially during the festive season. The flavours and texture leave you with a warm and gooey feeling after every bite. Enjoy this recipe with your family and friends during this festive season.

Ingredients

Cooking Method

Place a medium-sized pan or kadai on a high flame.
Add oil and let it heat. Toss in mustard seeds and fry till it splutters.
Add asafoetida, fenugreek seeds, turmeric powder, coriander powder, red chili powder and mix.
Add ginger garlic paste and sauté till the raw aroma fades.
Pour 1/2 cup of water. Fry till the ingredients blend well and the water comes to a boil.
Toss in the diced pumpkin and add salt to taste. Mix well.
Cover with a lid and cook on a medium flame for about 8-10 minutes.
During this period, keep checking with a spoon or spatula to see if the pumpkin’s cooked well. When the pumpkin dice can be cut or mashed easily that means it has been cooked.
Take a masher and gently start pressing the dice to a puree form.
Mix in a pinch of black salt, sugar, and dry mango powder to enhance the flavour further.
Add the chopped coriander and mix for the final touch.
