Banana Peel Burger

 Ingredients

2 banana peels

1 tbsp butter

2 burger buns

2 lettuce leaves

 For the marinade

1 1/2 tbsp olive oil

1/2 tsp red chili flakes

1/2 tsp chili powder

1 tsp mustard paste

1 tsp onion pdr.

1 tsp garlic pdr

1/2 tsp cumin pdr

 For the coleslaw

1/2 cup shredded green cabbage

1/2 cup shredded red cabbage

1/2 cup shredded carrot

2 tbsp mayonnaise

1/2 tsp red chili flakes

1 tbsp English mustard

1 tsp garlic pdr

1/2 tsp black pepper powder

1 tbsp  apple cider vinegar

1/2 tsp salt or to taste

 For the BBQ sauce

1 cup tomato ketchup

3 tbsp brown sugar

2 tbsp apple cider vinegar

2 tbsp Worcestershire sauce

2 tbsp English mustard

2 tsp onion pdr

2 tsp garlic pdr

1 tsp red chili flakes

1 tsp black pepper powder

salt to taste

To begin, prepare the barbeque sauce. In a pan, mix together tomato ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, English mustard, onion powder, garlic powder, red chili flakes, black pepper powder, and salt. Mix well.

Switch on the heat, bring it to a boil, and let it simmer for a few minutes until it thickens. Remove and keep aside.

Wash and peel the bananas. Scrape off the white part from the peels. Shred them with a fork and cut them into 2-3 inch long pieces.

Transfer to a bowl. Marinate with olive oil, red chili flakes, chili powder, mustard paste, onion powder, garlic powder, and cumin powder. Marinate for 10-15 minutes.

In the meantime, prepare the coleslaw. Add the shredded cabbage and carrots to a large bowl. Add in mayonnaise, red chili flakes, English mustard, garlic powder, black pepper powder, apple cider vinegar, and salt. Mix well and keep aside to soak in the flavor.

Heat a pan on medium heat. Add in the marinated banana peels. Add a bit of water and cook until they are tender but not mushy. The cooking time will depend on the rawness of the peels.

Once cooked, add in 2 tbsp barbeque sauce. Cook on low heat for 30 seconds to a minute so that the sugar does not burn. Remove from heat and allow it to cool a bit.

To assemble, slice the buns into two. Butter the insides and toast them lightly.

Place a slice or two of the lettuce on the bottom half of the bun. Top it with the barbeque pulled banana peels. Add some cole slaw for crunch and top it with the toasted other half.

The BBQ Pulled Banana Peel Burger is ready to serve. Serve it with dips of your choice.

keep it aside for 15 minutes to rise & prove.
mix maida with salt, sugar, milk powder well.
add butter, mix well, add yeast solution once proved, slowly add water little by little to mix.
the dough shouldn't be too soft, once you feel it is dry a bit, the more you knead, it will be fine.
roll it, keep it aside for 15 minutes to rise.

For filling
butter  2 tbsp
onion  1 big chopped

keep it in the closed oven for 15 minutes to prove ( don't switch on the oven at this stage)
once it is proved, then at 180 deg. C, bake it for 15-20 minutes, till it is golden brown all over.
this will make a good breakfast, or can be served with high tea.

ps- for filling, you may substitute, mushroom instead of capsicum, add carrots finely chopped, or along with capsicum, those who are fond of potatoes, can add it, after boiling, peeling & chopping potatoes into small pieces. Or those who are fond of spinach, can have with onion, spinach, cottage cheese, chilli flakes can also be used instead of chillies. So, just let your imagination run wild & experiment, you're bound to relish it.

Apple-raisin bread/ bun !

photo.JPG

Ingredients
1 apple, peeled, cored, cut into very fine pieces
 some raisins,
all spice ( nutmeg, cinnamon, clove pdr.)  1 tsp (or if you've all spice pdr. all the better)
dry yeast roughly 3/4 tsp
pinch of salt,
6 heaped tsp of sugar,
1 heaped tbsp of butter
1 1/2 cups + self-raising flour
milk around 1/4 cup

Method

mix all dry ingredients, except apple & raisins.
warm milk & butter, add to dry ingredients mix well.
once you're able to knead it, this can be done with hand itself, add apple & raisins, if it is too sticky, add some more flour, to that you'ld be able to roll it easily.

If you're lazy like me, instead of making small buns by rolling them into nice rounds, by flattening the top slightly, well n good, just spread the dough into a nicely greased tray if you don't have bread baking pan, cover with a cling film, leave it aside in a warm place to rise double its size.

Pre-heat an oven at 180 deg. C, then bake the bread/ bun if you've shaped it for about 10-1 5 minutes, till the top is nice brown, when pierced in the middle , the knife should come out clean. If you like, you can glaze it by mixing butter 1 tsp  with 1 tsp of sugar while still hot to give it a shining look, or if calorie conscious like me ( bah) , then forget it, just cut & devour them while still warm.

While  baking make sure that your neighbours aren't around, as it has strong aroma, so that you may not get enough to eat for the yourself n your family ! My daughter-in-law loved it, almost finished half the tray ! while still warm with her cup of tea !
