Avil kolkattai

 Ingredients and Preparations

Thick avil 2 cups, wash well and soak for 10 minutes

Heat 2 tbsp oil, add mustard seeds ½ tsp, urad dal 1 tbsp, chana dal 1 tbsp, hing

Ginger finely chopped ½ tsp, green chilies finely chopped to taste, onion 1 finely chopped, mix all well, add grated carrot ½ cup , beans finely chopped 1-2 tbsp mix well, fry for 2 minutes

Add this to the soaked avil, add grated coconut ¼ cup, salt to taste, coriander leaves mix well, make kolakattai , steam for 10 minutes. Serve hot with chutney of your choice.

Mysore Masala Dosa with red chutney

Ingredients

Parboiled rice 2 cups

Urad dal ½ cup

Avil 2 tbsp

Salt to taste

Methi seeds ½ tsp

 

For red chutney

Red chilies 4-5

Coconut  2 tbsp

Chana dal roasted 1 tbsp

Tamarind paste 1 tsp

Garlic 2 cloves

 

Potato filling

Mashed potatoes 3

Onion 1 sliced

Green chili 1 finely chopped

Mustard seeds ½ tsp

Turmeric pdr ½ tsp

Few curry leaves finely chopped

Oil 1 tbsp

Salt to taste

Coriander leaves

 Preparations

Soak rice, dal, for 5-6 hours, then grind to a fine paste adding washed poha, add salt, mix well.

Let it ferment overnight.

Blend all red chutney ingredients with little warm water to make a thick paste.

For masala

Heat oil, add mustard seeds, once it crackles add hing, onion, green chilies wee bit of salt, fry till light pink, add turmeric, mix well for a minute, add potatoes, salt fry well covered for 2-3 minutes, add coriander leaves and mix well.

Make thin dosa on hot tawa greased with little oil, smear oil all around, cook on medium heat, once it gets brown down, flip over, spread red chutney, add masala on one half, fold into half and serve hot with coconut chutney and sambar if desired.

Barley dosa

 Ingredients and prep

barley 1 cup

urad dal 1/4 cup 

avil 1/4 cup 

methi seeds

wash and soak for 6-7 hours

drain and grind to a smooth batter adding salt

ferment for 4-5 hours

make dosa the usual way, serve hot n crisp dosa with chutney of your choice

Varagu Uttapam

 Ingredients and praparations

varagu rice 1 cup

urad dal 1/4 cup

avil  1/4 cup

methi seeds 1 tsp

wash and soak overnight

grind to a smooth batter adding water and salt 

add grated carrot/ cabbage/ onion and make uttapams as usual.

Thinal/ foxtail millet and Tuvar/ arhar dal uttapams

 Ingredients and preparations

thinai  1 cup

urad dal 1/4 cup

tuvar dal  1/4 cup

avil 1/4 cup

fenugreek seeds 1 tsp

wash and saaok for 6 hours, drain and grind to a fine smooth batter 

add salt, ferment 4-5 hours

make uttapams as usual, adding oil, once crisp on both sides

NOTE- you can add grated carrot/ cabbage/onion, green chilies, curry leaves all chopped fine/ grated.
