The recipes posted here are very simple, with no hard & fast rule, as I love to cook a variety but with ease. My dishes are such that it is nutritious & easy to cook. Of course one can always change the ingredients according to one's taste & availability. Do let me know which type of recipes are preferred, or in case you've any queries too. Feel free to comment.

Bjara flr 1 cup
Wheat flr ½ cup ( optional)
Sesame seeds 2 tbsp
Ghee 1/3- ½ cup
Jaggery ¾ cup
Water 2-3 tbsp
Cardamom pdr ½ tsp
Nuts chopped 2 tbsp
Preparations
In 2-3 tbsp ghee, add both flours, roast on low flame till nice aroma comes, add sesame seeds and nuts, roast for another 3 minutes, remove
In a pan add gur, water 2-3 tbsp, cook till gur when dropped in water forms a ball, add cardamom pdr, mix well, pour over roasted flours, mix well adding remaining ghee
Once cool enough, grease your palms, and form small ladoos
Ingredients for 6-8 cheelas
1 cup bajra flour (pearl millet flour)
1/4 cup rice flour (optional, for crispiness)
Half a cup finely chopped onions
Half a cup grated carrots
2 tbsp chopped coriander leaves
1 green chili, finely chopped (optional)
1/2 tsp cumin seeds
Salt to taste
Water as needed
Oil or ghee for cooking
Method
Batter
In a mixing bowl,
combine bajra flour and rice flour. Add chopped onions, grated carrots,
coriander leaves, green chili, cumin seeds, and salt. Gradually add
water and whisk to form a smooth, pourable batter. The consistency
should be similar to dosa batter- not too thick, not too runny.
Let the batter rest for 10-15 minutes. This helps the flours absorb moisture and improves texture.
Cook the Cheelas
Heat a non-stick or cast-iron tawa (griddle) on medium flame. Grease it lightly with oil or ghee.
Pour
a ladleful of batter onto the hot tawa and spread it gently in a
circular motion to form a thin pancake. Drizzle a few drops of oil
around the edges.
Cook for 2-3 minutes on one side until
golden brown, then flip and cook the other side for another 2 minutes.
Press gently with a spatula to ensure even cooking.
Repeat with the remaining batter.
Serving Suggestions
Serve bajra cheelas hot with:
Fresh coriander chutney
Mint yoghurt dip
Pickle or tomato chutney and a bowl of curd

1 tbsp Whole Black Peppercorns, pounded
Preparations
Combine the bajra, wheat flour and 3 cups of water in a saucepan and place it on medium heat. Stir to make sure there are no lumps.
Stir in the jaggery, ginger powder and allow the mixture to come to a boil stirring constantly. Continue to stir until the mixture begins to thicken slightly for about 5 to 8 minutes.
Heat the ghee in another small pan; add the ajwain (or cumin), black pepper and allow it to roast for a few seconds.
Pour the ghee into the hot Raab Mixture. Check the taste and add more jaggery or ginger to suit your taste. You can adjust the consistency by adding water if required.
Serve Raab as a side dish along with Rajasthani meal.

Method
heat ghee, melt gur while stirring constantly
dry roast bajra atta till flavour comes
to the atta add the melted gur, dry fruits( reserve some nuts to garnish) and cardamom pdr, mix well
let the mixture cool, shape into small balls
garnish with some chopped nuts and serve.
