German Steamed Dumplings- Dampfnudel

dampfnudel recipe authentic german steamed yeast dumplings traditional dampfnudeln vanilla sauce vanillesosse swabian bavarian

Ingredients

For the Dampfnudeln:

cups all-purpose flour

tsp active dry yeast, or instant yeast

1/4 cup sugar

1/2 tsp salt

cup milk, at room temperature

tbsp unsalted butter, melted

large egg, room temperature

For the Pan:

1/2 cup milk

1/2 cup sugar

tbsp unsalted butter

German vanilla sauce, for serving (click link for recipe)

browned butter, optional (drizzle over the dumplings followed by the vanilla sauce)

Preparations

Place the flour, sugar, yeast, salt, egg, melted butter and milk in the bowl of a stand mixer. (Active dry yeast nowadays does not need to be dissolved first.)

With the dough hook attached, mix the dough until it comes together (add a little more milk if needed) and then continue to knead for about 4 minutes. You should have a soft and pliable dough. Spray the bowl with some oil, shape the dough into a ball and place it in the bowl. Cover with plastic wrap and set it in a warm place to rise for 60-90 minutes, or until the dough has doubled in size. Punch down the dough. Place it on a lightly floured work surface and cut it into 8 roughly equal pieces. I often weigh the pieces, added a little more dough from the larger ones to the smaller ones just because I like them to be as uniform in size as possible (they'll be approximately 140grams/5 ounces each). Shape the dough into individual balls, squeezing the seams together at the bottom and then lay the balls on the lightly floured work surface, seam side down, and spread apart to give them room to expand. Cover with a kitchen towel and let them rise in a warm place for another 30-60 minutes or until puffy. Place the milk, butter and sugar in a large non-stick pan with high sides (non-stick is a must). I use a 5 quart 12" ceramic saute pan that fits 8 Dampfnudeln perfectly. Heat the milk to a low simmer, stirring until the butter and sugar is melted. Place the Dampfnudeln in the pan. Don't smash them together, they need to have some room to expand. Return the milk to a very low simmer. Dampfnudeln are cooked not by boiling but by steaming them.Place the lid on the pan. Let the dumplings cook for about 30 minutes. Whatever you do, do NOT open the lid while the dumplings are cooking. The release of the built up steam and introduction to cooler air will cause the dumplings to collapse. I like to use a pan with a glass lid so I can see what's going on inside. After about 30 minutes the dumplings will have risen beautifully and will be cooked through. Their interiors will be soft and fluffy. At this point the final step is to remove the lid, increase the heat just a little, and cook for just a few minutes longer allow any remaining liquid to evaporate while simultaneously allowing the bottom of the dumplings to brown. Just be careful not to let them burn. Serve the Dampfnudeln drizzled with some browned butter (optional) and homemade German vanilla sauce. ( for the sauce, kindly see my next post)

Brazilian Sweet Corn Bake

A baked custard, a savoury-sweet pie, or a corn pudding with flair—call it what you like, but Pamonha Doce is Brazil’s way of showing off corn’s creamy side.

Traditionally steamed in corn husks, this baked version is fuss-free yet indulgent. A blend of corn, eggs, milk, and mozzarella creates a fluffy, golden bite that’s best served warm. Slightly sweet, slightly savoury, and incredibly satisfying—it’s the kind of dessert that works just as well at a brunch table as it does after dinner.

Ingredients

4 cups Fresh Corn Kernels

1 cup Milk

1 cup Sugar

2 Eggs

2 tbsp Melted Butter

1/2 tbsp Salt

1 tsp Baking Powder

1 cup Mozzarella Cheese

Method

Preheat the oven to 180 degrees Celsius.

Grease a baking dish of 8-inch square.

Cut the corn kernels from the cobs, husked.

In a blender, combine kernels, milk, sugar, eggs, melted butter and salt.  Blend until smooth.

Stir in the baking powder, most of the cheese.  Reserve some for the topping.

Pour the batter into the greased baking dish.

Sprinkle the remaining cheese on top.

Bake for 50-60 minutes until golden brown and set in the centre.

Let cool for 15-20 minutes and serve warm or at room temperature.

Egg-less Mango Cake

I made this egg-less Mango cake in microwave in 3 minutes 30 seconds. I had about 1/4 cup mashed banana, I chopped 1 mango in small pieces, added both to milk about 200 ml, along with 2-3 tbsp of sugar, 1 tsp of baking pdr, 1/2 tsp of baking soda, a pinch of salt, maida as needed, soaked raisins in warm water with 1/4 tsp of baking soda to remove toxins, washed it well twice, drained and added it to the batter, along with 1 tbsp of sunflower seeds. I add 2 tbsp of coconut oil. The batter was of pouring consistency, greased 2 microwave safe plates, spread them, baked each for 3 1/2 minutes. It was super soft and yummy. I added almond essence little.

Açai bowl

Acai powder is made by freeze-drying and grinding nutrient-dense acai berries, offering a shelf-stable alternative to frozen puree. It's celebrated for its high antioxidant and healthy omega-fatty acid content.

Ingredients

1 frozen açai packet or 2 tbsp açai powder

1 frozen banana

1/2 cup mixed berries

1/4th cup milk

Fresh fruit, granola and chia seeds well soaked for topping

How to make it:

Blend the açai, banana, berries and milk until thick and smooth. Pour into a bowl and top with fresh fruit of your choice (mango, pineapple, kiwi, blueberries), granola and chia seeds before serving.

Chia seeds should be soaked at least for 30 minutes before eating, or else it is not good for digestions.
