Corn - Coconut Pulao

 Corn Pulao 

Ingredients

250 Gram Basmati rice

80 gram American corn kernels

2 tsp Olive oil

1 Onion

1 tsp Ginger garlic paste

1 tsp Salt

4 Green chilies

1 tsp Cumin seed

1 Bay leaf

1/2 tsp Pepper corn

8 flakes Cloves

2 cups Hot water

3 tbsp Coriander leaves, chopped

2 tsp Lime juice

Bell pepper (Sautéed and diced), chopped

Coconut, grated 

 

Preparations

Rinse basmati rice and soak it in water for at least 15-20mins.

Grind coconut, green chili, coriander leaves to make a fine paste.

Take a pan add olive oil.

Once the oil is hot add cumin seeds, cloves, bay leaf, pepper corn, sliced onion, slit green chilies, ginger garlic paste and the above coconut paste.

Sauté well, and then add corn kernels.

Drain the rice and add it to the pan. Keep stirring.

Add hot water, little salt and cook for 15mins.

Once the rice is 3/4th done add lime juice.

Finally garnish with sautéed diced red and yellow bell pepper, grated coconut and chopped coriander leaves.

Serve with cucumber raita.

No-Cook Black Bean Taco Bowls

 Ingredients

 5 tbsp sour cream

tsp lime zest

3 tbsp lime juice, divided

1 tbsp water

¼ cup extra-virgin olive oil

2 scallions, thinly sliced, plus more for garnish

tsp salt

1 (15-ounce) can no-salt-added black beans, rinsed

4 cups chopped romaine lettuce

4 cups shredded green cabbage

2 cups corn kernels (from 2 large ears)

1 cup chopped drained roasted red peppers

½ cup shredded Cheddar cheese

¼ cup finely chopped red onion

¼ cup chopped pickled jalapeños

4 ounces tortilla chips

 

Preparations

To make cream: Whisk 5 tablespoons sour cream, ⅛ teaspoon lime zest and 1 tablespoon lime juice together in a small bowl until smooth. Add 1 tablespoon water; whisk to combine.  

To make vinaigrette: Combine ¼ cup oil, the sliced scallions, ⅛ teaspoon salt and the remaining 2 tablespoons lime juice in a large bowl; whisk well. Transfer 2 tablespoons dressing to a medium bowl; add the rinsed beans and toss to coat. Set aside for 5 minutes.  

To the large bowl with the remaining dressing, add 4 cups lettuce and 4 cups cabbage toss well. Divide the lettuce mixture among 4 bowls. Top the bowls with the dressed beans, 2 cups corn, the chopped roasted red peppers, ½ cup cheese, ¼ cup red onion and ¼ cup jalapeños. Drizzle with lime juice and, if desired, garnish with more scallions. Serve with 4 ounces tortilla chips on the side.

Corn Appam/ Appe

 Ingredients

rava/ semolina 2 cups

curd 1 cup

water as needed

salt to taste

corn kernels 1 cup

green chilies to taste 

Eno fruit salt 1 tsp 

curry leaves finely chopped 1 tbsp

 

Preparations

mix rava, curd, water well and set aside

boil corn while rava is resting, drain the kernels

add corn, finely chopped green chilies/ chili paste, curry leaves, salt and mix well

just before you fry appam, add Eno, mix well, adding little water if necessary, as the batter should be thick.

grease the "appakarai " with ghee or oil, once hot, put the batter in each hole, cook on medium flame,

turn once the bottom is brown carefully, if need be add little more oil, cook till both sides are brown and  crisp . Serve hot with coconut chutney.

Sweet potato salad

 Sweet Potato Salad

The following recipe will become a favorite in your home because of the tasty and interesting combination of sour and sweet. The thin sweet potato strips along with avocado dressing will change your mind about combining ingredients on different ends of the flavor spectrum.


Ingredients for dressing: 
 
Avocado - 1/2 (peeled) 
 
Lemon juice - 1 lemon 
 
Coriander - a handful 
 
Macadamia nuts - 2 tbsp. (can use walnuts) 
 
Red onion - 1/2 
 
Garlic - 1 clove 
 
Water - 1/4 cup 
 
Salt  and pepper - to taste 
 
 
Ingredients for salad: 
 
Olive oil - 2 tbsp. 
 
Corn - kernels from 1 cob (fresh) 
 
Sweet potato - 1 (peeled and sliced into thin strips) 
 
Water - 2 tbsp. 
 
Black beans - 1 can (strained and washed) 
 
Red onion - 1/2 (diced) 
 
Baby kale - 2 cups 
 
 
Method of preparing the dressing:  
Put all the ingredients in a food processor and blend for a few minutes until all the ingredients are combined well. Set aside in the refrigerator until ready to serve. 
 
Method of preparing the salad: 
Heat a tbsp. of oil in a pan and roast the corn kernels until they become golden, set aside.  
 
Heat the second tbsp. of oil in the same pan and lightly fry the sweet potato strips for about a minute.
 
Add water and cook while mixing until the water evaporates and the strips become soft about 5-7 minutes.  
Add all the ingredients in a bowl, pour in the dressing and toss until all the ingredients are well coated.

Chili Cheese Sweet Potato Casserole

Dig into a fulfilling and yummy delight filled with sweet potatoes, cheese and the tanginess of the tomatoes. A hot casserole is just the dish to woo yourself and your loved ones during the cold nights. 

 

 

Ingredients:

3 sweet potatoes (peeled and chopped) 

1onion  (peeled and finely chopped) 

1 red capsicum (seeded and chopped) 

2 spring onions (finely chopped) 

400 gm red beans

5 tomatoes (chopped) 

1 cup fresh or frozen corn kernels

10-12 tbsp tomato sauce

2 cups cheddar cheese (shredded) 

1 cup sour cream

2 cloves garlic (finely chopped) 

1 tbsp chili pdr or to taste

1 tbsp cumin / jeera  (crushed) 

1 tsp dried oregano

4-5 tbsp oil (preferably vegetable oil)

Salt to taste

 

Method:

While you prep the veggies, preheat the oven to 400°F / 220 C

Grease a 12×12 or 13×9-inch baking dish with oil.

Place a baking sheet on top, add potatoes, 2 tbsp oil, and sprinkle 1/2 tsp salt. Roast potatoes for 15 to 20 minutes till they turn golden brown. Set it aside to cool.

Reduce the oven temperature to 350° for the next baking.

Meanwhile, take a large pan and heat 2 tbsp oil. Toss in onion and some salt and sauté till they turn light and soft.

Add bell pepper, garlic, chili powder, cumin, and oregano and continue to sauté and cook for a few minutes.

Toss in beans, tomatoes, tomato sauce, corn, and salt to taste. Mix and cook for 2-3 minutes.

Pour half of the above mixture into the prepared dish which contains the baked potatoes. 

Layer that with some more potatoes on top and repeat layering with the mixture and potatoes.

Cover the dish with foil and bake the casserole for 20-25 minutes until it starts bubbling around the edges.

Remove the foil, sprinkle the cheese on top, and continue to bake until the cheese melts.

Garnish with scallions and serve with sour cream on the side.

Savory Clafoutis With Corn and Swiss Chard

 Clafoutis are baked French pancakes, usually filled with sweet cherries. This savory version calls for corn, Swiss chard and leeks instead of fruit, and includes plenty of Gruyère for a salty depth. It will emerge from the oven puffed and golden, then quickly deflate. Fear not, it still tastes wonderful after it flattens out, though for the best presentation, try to time it so your guests are at the table when it is ready. Serve it for brunch or a light dinner with a tomato salad on the side, if you’re making this in tomato season. In winter, sliced oranges drizzled with olive oil and salt are nice, too.

 Ingredients

  • ¾cup whole milk
  • ¾cup crème fraîche- a thick cultured cream-Combine buttermilk and heavy cream in a non-reactive container. Cover and allow to rest at room temperature until thickened to desired texture, about 12 hours.
  • 4large eggs
  • tbsp all-purpose flour
  • 2tbsp chopped fresh parsley leaves
  • 2tbsp chopped fresh dill leaves
  • ¾tsp kosher salt, salt to taste
  • ½tsp ground black pepper, more as needed
  • 1cup coarsely grated Gruyère or Cheddar (about 4 ounces)
  • 2tbsp extra-virgin olive oil
  • 2large or 3 small leeks (white and light green parts), halved lengthwise and thinly sliced
  • 2cups corn kernels (from 2 to 3 ears, or frozen and thawed)
  • 1large garlic clove, grated on a Microplane or minced
  • 1large bunch Swiss chard, stems removed, leaves coarsely chopped (8 cups)
  • ¼cup grated Parmigiano-Reggiano
  • Fresh lemon juice, for serving
  • Red pepper flakes, for serving
  •  
  • Preparations

    Heat oven to 375 F/ 180 C. In large bowl, whisk together milk, crème fraîche, eggs, flour, parsley, dill, ½ teaspoon salt and ½ teaspoon pepper until smooth. Whisk in ¾ cup Gruyère.


  • Heat olive oil in a 9-inch oven-safe skillet over medium heat. Add leeks and sauté until they are soft and golden, about 10 minutes. Stir in corn, garlic and a pinch of salt; cook until garlic is fragrant and corn is tender, 2 to 3 minutes. Add chard leaves a handful at a time, and cook until they are wilted and tender, about 4 minutes. Season the mixture with ¼ teaspoon salt and a few grinds of black pepper.


  • Pour crème fraîche mixture over the corn and chard mixture, and then sprinkle the remaining Gruyère and the Parmigiano on top. Transfer skillet to oven and bake until custard is lightly set, about 40 minutes. Serve topped with a sprinkling of lemon juice and a pinch of red pepper flakes.

Corn Palak Ki Tikki

Ingredients of Corn Palak Ki Tikki

  • 200 Gram Corn kernels
  • 2-3 Cups Milk
  • 2 tsp Lemon juice
  • 1 tsp Chaat masala
  • 800 Gram Spinach
  • 1 Cup Potato, boiled
  • 1 Cup Paneer, grated
  • 1 tsp Red chili powder
  • 1 tsp Black pepper powder
  • 1 tsp Garam masala powder
  • 1 tsp Cumin powder
  • 1 tsp Kasturi methi powder
  • 1 tsp Salt
  • 1 tsp Ginger, chopped
  • 2 Nos Green chili, chopped
  • 1/2 Cup coriander leaves, chopped
  • 1 Tbsp Cornflour
  • 1/2 Cup Ghee/oil (to shallow fry)

 

How to Make Corn Palak Ki Tikki

Blanch spinach in water and chop.

Now blanch corn in milk to soften it. Grind and keep aside for a while.

Take the ground corn and mix in lemon juice along with chaat masala to balance the sweet flavour of corn.

Add blanched palak, boiled potato and grated paneer to mix with corn.

Add all the spices in the ingredients along with the salt, ginger, cornflour and chopped coriander leaves. Mix well prepare the tikki paste.

Make round tikkis of the mixture and shallow fry in ghee or oil till crisp.

Serve hot along with a coriander chutney or tomato ketchup.
