Carrot Flatbread

 

Ingredients - 
1 small raw cauliflower head, plus the stem
1 large raw carrot, peeled 
100 g / 1 cup almond flour/ground almonds 
4 eggs 
1/2 tsp. sea salt and black pepper 
Optional - 1 tsp. of any dried herbs (e.g. oregano, thyme, lemon pepper)

Serving suggestions
 
Make sandwiches: Add whatever you want between two brilliant slices of bread. Some great fillings could be mashed avocado, hummus, cheese, or whatever vegetables you have at hand. 
 
Make mini-pizzas: Spoon a layer of tomato puree, or pesto onto your slices. Then add your favorite pizza topping and bake at a high temperature for 7 or 8 minutes.   
 
Make wraps: Instead of cutting 12 small slices, make six and use them as foldable wraps. These would make excellent picnic food.  
 
Make canapes: Instead of cutting 12 slices, make 24 and use them as canapes, dressed with your best deli toppings.

CORN CANAPES


CORN CANAPES

Ingredients
  
Readymade canapés                         16   
Corn niblets, boiled and drained           1 cup
Jalapeno peppers, chopped                 2
Onion, chopped                               1 medium
Green olives, chopped                       4
Black olives, chopped                        4
Lettuce                                         8 leaves
Tomato ketchup                             2 tablespoons
Black peppercorns, crushed           5-6
Red capsicum, seeded, thin strips   1 medium
Fresh parsley sprigs     4-6

 Method

1.Take corn niblets in a bowl.  Add jalapeno peppers, onion, green and black olives and mix.

2.Finely chop half the lettuce leaves and add to the corn.

3.Heat sufficient oil in a kadai and deep fry the canapés till crisp.  Drain and place them on absorbent paper.

4.Add salt to the corn mixture. Add tomato ketchup, crushed black peppercorns and mix well.

5.Arrange the remaining lettuce on a serving plate.  Arrange the canapés on it and fill them up with the corn mixture.  Garnish each canapé with a red capsicum strip and a parsley leaf and serve immediately.
