3 dal for poli

Normally people make the poli stuffing using chana dal, which is pressure cooked, ground in mixer, for salty-spicy poli grind ginger and green chilies to taste , add dal grind well, remove put in the heavy kadai or non-stick pan add the ground dal, add salt to taste, keep stirring till the mixture is thick adding some hing also. Those who like garlic may grind garlic with green chilies and ginger.

I added about  I washed and soaked almost equal quantities of each dal, then added some water and kept in the pressure pan till it started boiling, then I covered the pan for about 2 hours. Then added just enough water to cook the dals putting whistle, for 2 whistles. Once cooled, I could mash the dals well with a serving spoon. kept roughly 65 % for making spicy poli, in the rest added gur almost equal quantity of dal, kept cooking stirring till it became thick, added 1.2 tsp of cardamom pdr, mixed well, remove to cool.
For the spicy stuffing, was lazy to take out mixi, as one I didn't have any fresh ginger, so finely chopped 2 green chilies, as the quantity of cooked dal mist have been 1 cup.Then added about 1 teaspoon of dry ginger powder, salt and hing little, kept cooking stirring till it became thick.

Made the  outer covering , I added about 200 gm of maida in a bowl, added 1/2 tsp of turmeric pdr. and 2 tsp of oil, with little salt. mixed all well, then added little water to make a soft dough.
Took small lemon size ball, shaped like a small cup with my fingers, put enough stuffing, covered well from all sides, dusted some atta( wheat flour) rolled it as thin as I could. then cooked on a hot tawa, till brown spots came on both sides. added ghee to cook it for another 2 minutes on low flame.

Chana dal- peas vege

Ingredients
chana dal 1 cup soak for an hour
onion 1 big
ginger finely chopped 1 tsp
garlic finely chopped 1 tsp
green chilies finely chopped 1 tsp or to taste
carrot finely chopped 1 big
peas blanched  1/4 cup
hing little
jeera / cumin  1/2 tsp
mustard seeds  1/2 tsp
urad dal 2 tsp
curry leaves finely chopped 1 tsp
coriander leaves finely chopped 2 tsp
ghee 1 tbsp
oil 1 tsp
salt to taste
turmeric 1/2 tsp

Method
drain well the soaked dal, grind without adding any water along with green chilies to taste to a coarse paste.
Heat oil and ghee, add mustard seeds, once it crackles, add urad dal and jeera, once the dal is golden, add hing, curry leaves, fry for few seconds, add onion, ginger and garlic, fry adding wee bit for salt till  onion is light brown
add carrot,  fry for 2 minutes, add peas and dal paste along with turmeric, keep frying on low flame for about 5-6 minutes, adding half of the coriander leaves.
 once the dal is well cooked, remove, garnish with remaining coriander leaves, serve hot with rice, adding some fresh ghee !
