Corn cutlets

 Ingredients

corn 1 can, drained and washed and strained well , grind the corn coarsely

onion 1 big finely chopped

green chilies finely chopped to taste OR red chili pdr to taste

salt to taste

grated processed cheese  1/4 cup

fresh breadcrumbs 1 cup

oil for shallow frying


Method

in a big bowl add ground corn, onion, green chilies, salt and cheese well.

Add breadcrumbs, nix well.

take small amounts of the mixture, shape into round or oval or whatever shape appeals to you.

heat little oil in a pan, once hot, place the cutlets in oil, turn the heat to medium so that it gets cooked well, turn it over, let both sides cook brown, drain on kitchen towels

serve hot with chutney of your choice.

Easy 4 Ingredient Corn cutlet


Since I bought the corn last time, hubby wasn't keen on eating it. The 1st one, I boiled then made corn pulao and corn halwa. The 2nd was crying to be finished. So, yesterday, I removed the kernels, I crushed  peanuts coarsely, then crushed unboiled corn with onion and 1 green chili. I added rice flour as needed to bind it along with salt and red chili pdr. Then fried for yesterday's coffee time snacks.

INGREDIENTS

corn 1 small ( removed the kernels) fresh not boiled

onion 1 big, peeled and roughly chopped

peanuts 2-3 tbsp coarsely crushed in mixer

rice flour as needed to bind it ( you may try using corn flour and all purpose flour)

green chili 1 or as per taste

salt and chili pdr to taste

hing little

oil for frying


METHOD

I first crushed to peanuts and put in a bowl. In the same mixer jar added corn , green chili and onion roughly chopped and made quite fine pulp without adding water. Then I added hing, salt and chili pdr to taste, mixed well, added rice flour to get a good binding.

Heated oil in a kadai, made small cutlets fried till dark brown to get them crisp from outside, soft inside. I enjoyed it, gave some to the kitchen boys also. They thought it was made with potato !

Corn cutlets / vadai !

We had bought some fresh corn. Normally hubby loves when it is boiled, but this one wasn't tasty, he said. So, I decided to make cutlets/ vadai from it. It was boiled corn, I scraped it with a knife to remove the corn from the cob.

Ingredients ( got 16 small cutlets)

corn 1/2 cup or half of the big corn

rice flour  1/2 cup 

besan  1/3rd cup

pottukadalai pdr) roasted dal pdr)  1 heaped tbsp

onion 1 medium finely chopped

 salt and chili pdr to taste

hing little

ajwain/ carom seeds  1/2 tsp

water to knead stiff

oil for frying

 

Method

added corn, onion, flours, hing, carom seeds, chili pdr and salt, mixed well

added little water to make a stiff dough, so that I'ld flatten it like cutlet to fry

fried in medium hot oil, once when light brown, remove, fry again, then it becomes crisp.
