Avocado, Chocolate Chip Cookies

Avocado is a great way to substitute butter in a dessert recipe.

Ingredients  
 
1 avocado (4 1⁄2 ounces) 
 
1⁄2 cup (1 stick) unsalted butter, at room temperature 
 
1 1⁄2 cups dark brown sugar 
 
2 large eggs, at room temperature 
 
2 tsp. pure vanilla extract 
 
2 cups all-purpose flour 
 
1 tsp. baking soda 
 
1 tsp. coarse salt 
 
1⁄2 tsp. baking powder 
 
1 1⁄2 cups old-fashioned rolled oats 
 
1 3/4 cups semi-sweet chocolate chips 
 
Directions:  
 
1. Cut the avocado lengthwise, removing the pit and the skin. Place the flesh in a large bowl, add the butter and the brown sugar. Combine until texture appears fluffy and creamy - this should take about three minutes. 
 
2. Add the eggs one at a time, then add the vanilla extract. Add the flour, baking soda, salt and baking powder, combining slowly and ensuring that you do not over-mix the batter. Add the oats and the chocolate chips, mixing well. Refrigerate for 1 hour. 
 
3. Next, preheat the oven to 325°F and line a baking sheet with parchment paper. Using wet hands, roll the dough into 12 balls, flattening the cookies with the palm of your hands, creating 2 1/2-inch disks. Place on a baking sheet and bake for 20 minutes. The cookies should be slightly golden brown on the edges, but soft in the middle. 
 
4. Remove from the oven and leave to rest for at least three minutes. Transfer to a cooling rack, then serve immediately or store in an airtight container in the refrigerator for five days. The cookies may also be stored in the freezer for up to three weeks.

DATE AND NUT BARS

Ingredients

for biscuits
butter  4 tbsp
powdered sugar 1/4 cup
self raising flour 145-150 gm
almond / cashew nut coarsely powdered  1/4 cup

For topping
seedless dates  1/2 cup
cashew nut coarsely powdered  1/ cup
demerara sugar  1 tbsp
ghee 1 tbsp
milk 2 tbsp
almonds blanched and split 64glaze cherries 8

Method
take butter and pdr. sugar in a big plate/ bowl and rub with your hands to make it light.
add self raising flour & the nut pdr., mix and make a dough
roll out the dough into 2 mm thickness on a polythene sheet dusted with dry flour.
put them on a greased baking try, make a few holes with a fork.
bake at 170 deg. C for 10 minutes or till it turns light pink colour.
take out the tray, while still hot cut into rectangular pieces.
For the topping- take ghee, sugar, dates and milk in a vessel.
heat on slow flame, cook stirring continuously to make a smooth paste.
remove from heat, apply on top of each biscuit.
arrange them on baking tray, decorate with almonds and cherries
bake again for 5-7 minutes at 100 deg. C
take out, cool and serve.

Fig & walnut cookies

Ingredients: 
1 and 3/4 cup all purpose flour(maida)
1 cup butter
5 tbsp dried figs(finely chopped)
1/4 cup brown sugar
6 tbsp honey
1/2 tsp vanilla essence
1 tsp mixed spices
1 tsp baking soda
2 tbsp dried dates(finely chopped)
2 eggs
175 g rolled oats
1/2 cup walnuts(finely chopped)
Pinch of salt

Method:
Take a bowl, add butter and whisk. Add dried figs, brown sugar and honey and mix.
In a bowl, add vanilla essence, mixed spices, pinch of salt, baking soda and chopped dates and mix.
In a bowl, break the eggs and beat well.
Add the mixture of (vanilla essence, mixed spice and dates) and mix. Add the butter and dried figs mixture and mix well.
Add walnuts and mix well. Add flour and rolled oats and mix.
Grease a baking tray with oil. Put a tablespoon of batter onto the greased tray keeping enough distance between each spoonful.
Bake in a preheated oven at 180-degree centigrade for 25 minutes.
Cool and serve

melting moments

Ingredients

flour  140 gm
sugar  85 gm
butter  115 gm
baking pdr  1/4 tsp
cornflakes  55 gm
eggs  1/2 to bind

Method''sieve flour and baking pdr.
cream butter and sugar till light and fluffy
to this add beaten eggs and cream well
add the sieved flour, mix well with a wooden spoon to a smooth dough
divide into 20 equal sized balls, round them with wet hands and pass them over cornflakes
place them in a greased baking tray, bake at 375 deg. F for 15-20 minutes

Coocnut macaroons

Ingredients

sugar  150 gm
grated coconut  100 gm
egg white  2
baking pdr.  1/4 tsp
lemon essence few drops

Method

mix coconut, sugar and egg whites in a thick bottom pan
place on low heat and cook till it starts to become a sticky mass and leaves the sides of the vessel
remove, cool and add baking pdr. and essence, mix well
put small balls on a lined baking tray
bake at 325 deg. F till they're golden ( approximately 10-15 minutes)
makes about 10-12 pieces

TOY COOKIES

INGREDIENTS

for cookie dough
flour  1 1/4 cup
butter  4 tbsp
powdered sugar  1/4 cup

for topping
walnuts few chopped
cherries few chopped
candy covered chocolate jams
white chocolate pieces
milk chocolate pieces
multi-coloured sprinkles

METHOD
grease a baking tray
heat oven to 175 deg. C
take butter & sugar in a bowl, beat well to get a nice creamy mixture
add flour, make dough
roll dough on a polythene sheet to a 1/4 " thickness
cut into various toy shapes
arrange cookies on the tray, make few holes with a fork
bake for roughly 15-20 minutes, time can vary from oven to oven till light brown in colour
remove from oven, after 5 minutes, cool on a wire rack
take white chocolate pieces in a vessel, either microwave them to melt, or add boiling water, stir over gas to melt
apply on the cookies, do the same with milk chocolate
put sprinkles, walnut, cherry pieces when the chocolate is still warm to give a decorative effect.
allow to cool, store in dry container if anything is left after your kids & adults had a good go at it.

Almond Butter Cookies

INGREDIENTS

All purpose flour / Maida 1 Cup
Butter 3/4 Cup at room temperature
Sugar 3/4 Cup
Baking Powder 1/2 tsp
Baking Salt 1/4 tsp
Almonds 1/4 Cup

Method:

Preheat the oven at 180 degree C
Take the butter and sugar in a bowl . Using a whisk, mix them both well till you get them fluffy
Dry roast the almonds for 2 minutes and then take it in a mixer and grind it coarsely
Take all purpose flour, baking powder and baking salt in a bowl and sieve them so that the baking powder and baking salt are mixed nicely with the all purpose flour. 
Add these to the butter-sugar mixture along with the grounded almond  and mix them well to make a dough
Then take small lemon sized balls and press it lightly in the middle and place it in a baking tray lined with foil. 
Leave at least 1 to 2 inch gap between the each cookie pieces as they well get flattened in the oven. 
Bake the cookies in batches. 
Bake it in the oven for 12-14 minutes.
 When it is 10 minutes, just stand in front of the oven and see if the edges has changed to light brown colour. 
When you see the cookies gets flattened and colour of the cookies changes to light brown colour, then  remove the baking tray and allow the tray to cool off.
 Do not press the cookies at this stage as they will still be soft. Only after cooling off completely, the cookies will becomes harder.
 Then slowly and gently take the cookies from the baking tray and line it up on the wire plate to cool off completely. 
After 15 minutes, when you touch the cookies, they would have become harder enough.

Cheese Biscuits

Ingredients
2 cups all-purpose flour
4 tsp baking pdr.
1 to 1½ cups finely grated Cheddar cheese, divided
1/2 cup butter
⅔ cup milk


Method
Preheat oven to 425 degrees F/ 200 deg. C.
In a large bowl, mix together flour, baking powder and ½ cup cheese.
Add butter; cut into flour mixture with 2 knives or pastry blender until mixture resembles coarse meal.
Make a well in centre, pour in milk and stir with a fork just until dough forms a ball.
On a lightly floured board, knead dough lightly, about 15 times, until it is smooth.
Roll out dough to ½-inch thickness.
Cut with a 2-inch cookie cutter.
Place on greased cookie sheet and bake about 10 minutes.
Remove from oven.
Sprinkle tops of biscuits generously with grated cheese.
Return to oven and continue baking until cheese is completely melted, about 3 minutes.
Serve warm.

Buttermilk-Raisin Biscuits

Ingredients
½ cup raisins
¾ cup apple juice or cider
4 cups self-rising soft wheat flour
1 tsp granulated sugar
⅔ cup butter
1¾ cup buttermilk
¼ cup unsalted butter, melted


Method
Soak raisins in apple juice or cider for 4 to 8 hours; drain, discarding juice, and set raisins aside.
Combine flour and sugar in a large bowl; cut in shortening with a fork or pastry blender until shortening is the size of peas.
Add milk, stirring with a fork until dry ingredients are moistened (dough will resemble cottage cheese and be sticky.)
Turn dough out onto a heavily floured surface; add raisins.
Knead lightly 10 to 12 times.
Roll dough to ½-inch thickness; cut with a 2½-inch round cutter.
Bake at 475 degrees F for 12 to 15 minutes on an ungreased baking sheet.
Brush with unsalted Butter, optional.
Yields 2 dozen.

sesame seed cookies

INGREDIENTS

butter - 200 gm
Sugar Powder/castor sugar - 300 gm
Eggs - 2
Vanilla essence - 1/2 tsp
all purpose flour /Maida - 240 gm
Whole Wheat Flour (Atta) - 320 gm
Baking Soda - 1/2 tsp
Baking powder - 1 tsp
Salt - 1/2 tsp or 2.5 gm
Sesame Seeds - 100 gm
Milk - 50 ml

METHOD

Sieve plain flour, whole wheat flour, baking powder, baking soda together twice and add salt to keep it separately.
In another bowl add butter and stir with the help of a ladle, add sugar powder little by little and continue to stir, you will see that the cream is fluffing and becomes soft.
Once the sugar incorporates, add the eggs and essence to the creamed fat & sugar & continue to mix till evenly blended.
Once well mixed, fold in sieved dry ingredients along with sesame seeds to the creamed mixture and mix evenly to get smooth and soft dough/pliable consistency.
Evenly divide the dough into equal parts and arrange them on a lightly greased baking tray a inch apart.
Keep the tray in a pre-heated oven (OTG or Convection Microwave) at 150 deg.C for 20 minutes or more until it’s risen, and turns light brown in color.
Remove from the oven and let cool completely and  store in a container .

ALMONDS-RAISINS BISCUIT/ cookies

INGREDIENTS

maida/all purpose flour   200 gm
butter  100 gm
castor sugar   50 gm
baking pdr.   1/2 tsp
vanilla essence/extract  1 tsp
almonds sliced or coarsely crushed  1 tbsp
raisins chopped   1 tbsp
milk little
orange rind  1 tsp

METHOD

in a bow mix flour & baking pdr. well.
in another bigger bowl, beat sugar & butter well
mix the dry ingredients well with it
add raisins, almonds, rind, essence, mix well.
knead all together now with your hand, add milk if needed 2-3 tsp.
the dough shouldn't be too sticky nor too dry
now form into a log, wrap well, refrigerate for 15-20 minutes
take it out from the fridge, unwrap it, cut into 1/2" thick slices
keep in a greased baking tray
bake in preheated oven at 150 deg. C for 20-25 minutes.

NOTE- don't heat the baking tray, whenever you make biscuits, the tray shouldn't be heated.
this can be stored in airtight container for 7-10 days.

SUGAR- FREE HEALTHY BISCUITS (COOKIES)



INGREDIENTS

oats 1 cup
ripe bananas mashed 2 big
dates 1/4 cup
ragi pdr. 1/2 cup
chopped nuts( almonds/ walnuts)  3 tbsp

First mix well mashed bananas & dates, if the dates are a bit dry, then soak in warm water for some time, drain & mash well with bananas. then add the other ingredients, mix well. In case, you find it a bit dry, then add little milk. I didn't add any milk or baking pdr. Bake in pre-heated oven at 200 deg. C for 10 min. or till done. as this depends on the capacity of the oven.

NO BAKE COCONUT COOKIES

Ingredients

1 1/2 cups sugar
1/4 cup cocoa powder
1/2 cup milk
1/2 cup butter 
3 cups grated coconut
1/4 cup peanut butter, either creamy or chunky
1 teaspoon vanilla

Method

Line 2 baking sheets with waxed paper.
 
Place sugar, cocoa, milk, and butter in a large pot and bring boil for 1.5 minutes.
 
Immediately stir in peanut butter and vanilla, stirring until they dissolve. 
 
Add the coconut as quickly as you can, coating it all.
 
Remove from heat.
 
Drop by rounded teaspoonfuls onto prepared cookie sheets. Cookies will set up within about a half hour setting on the counter.

Chocolate cookies/ biscuits


 Chocolate cookies/ biscuits

Self raising flr/ maida 1 ½ cups                             butter 100gm
Pdr. Sugar ¾ cup                                                   cocoa pdr 1 ½ tbsp
Milk 2 tbsp                                                            vanilla essence ¼ tsp
Pinch of salt

Method
1)      sift flr. Cocoa & salt.
2)      Beat sugar & butter in a bowl till light & fluffy.
3)      Mix essence & milk.
4)      Slowly add flr. mixture  to form a smooth pliable dough.
5)      Put the dough between grease proof papers & roll to a thick chapatti.
6)      Cut in desired shapes with biscuit cutter or with any small round katori/ dish.
7)      Place on a greases cooking sheet a little apart & bake in a medium hot oven for 10 minutes.
8)      Cool a little & remove.
