Oats Upma

 Bored of eating oats the same sweet way every morning? Give your bowl a savoury twist with this South Indian-style oats recipe. Packed with paneer, curd, vegetables and peanuts, it is filling, comforting and full of flavour.  

 Ingredients: 

For the oats mixture, you'll need 1 cup oats, 

3 tbsp thick Greek yogurt or curd, 

1 cup water, 

½ tbsp grated ginger, 

1 green chilli (chopped), 

a handful of coriander and salt to taste. 

For the tempering and vegetables, you'll need 

1 tbsp oil, 

1 tsp mustard seeds, 

1 tsp urad dal, 

1 tsp chana dal, 

a pinch of hing, 

10-12 curry leaves, 

2 whole red chillies, 

1 onion (chopped), 

1 cup mixed vegetables (carrot, peas and beans), 

100 g paneer (cubed or crumbled), 

1 tsp turmeric 

2 tbsp roasted peanuts

 

Method

Take the Greek yogurt or curd in a bowl and add 1 cup water, grated ginger, green chilli, coriander and salt. Whisk everything together until smooth and lump-free. This mixture will give the oats a slightly tangy, comforting flavour. 

Heat oil in a pan and add mustard seeds. Once they start spluttering, add urad dal, chana dal, hing, curry leaves and whole red chillies. Let the ingredients cook for a few seconds until fragrant.

Add the oats, paneer and turmeric to the pan. Mix everything well so that the oats and paneer are coated with the tempering and vegetables. Paneer adds protein and also makes the dish more filling .

Lower the heat and slowly pour in the prepared curd-water mixture. Stir continuously so that everything combines evenly. Cook on low to medium heat until the liquid is absorbed and the oats become soft and creamy. If the mixture becomes too thick, add a little more water to reach your preferred consistency. 

Turn off the heat and garnish the oats with freshly chopped coriander and lots of roasted peanuts. The peanuts add a delicious crunch to the otherwise soft and creamy oats.

Weekends are meant for slowing down, but spending a long time in the kitchen may not always be part of the plan. If you want a filling lunch without turning on the stove or oven, a few simple ingredients can come together into surprisingly satisfying meals. 

 Chickpea And Veggie SaladIngredients: 1 cup boiled or canned chickpeas, 1 small cucumber (chopped), 1 tomato (chopped), ¼ cup onion (finely chopped), 1 tbsp lemon juice, 1 tsp olive oil, salt and black pepper (to taste) and coriander (chopped).

Ingredients: 1 cup boiled or canned chickpeas,

Method:

Drizzle with lemon juice and olive oil, season with salt and pepper, and toss well. 

Finish with fresh coriander. Better to add the seasonings, just before serving.

 

Paneer And Mint Chutney Wrap 

 Paneer And Mint Chutney WrapIngredients: 1 whole-wheat roti or ready-to-eat tortilla, 100 g paneer (cut into thin pieces), 1-2 tbsp mint chutney, sliced cucumber and tomato, lettuce or cabbage and chaat masala (optional). 

Ingredients: 

1 whole-wheat roti or ready-to-eat tortilla, 

100 g paneer (cut into thin pieces), 

1-2 tbsp mint chutney, sliced cucumber and tomato, lettuce or cabbage and chaat masala (optional). 

Method: Spread mint chutney over the roti. Add paneer, cucumber, tomato and lettuce. Sprinkle with a little chaat masala, roll tightly and serve.  

 

Corn, Avocado And Bean BowlIngredients: ½ cup canned sweet corn (drained), ½ cup canned kidney beans or black beans (rinsed), ½ avocado (chopped), ½ cucumber (chopped), 1 tbsp lemon juice, salt and pepper and Coriander.

Method: 

Combine all the ingredients in a bowl and toss gently. 

Add lemon juice, salt and pepper to taste. 

You can serve it as a salad or scoop it into lettuce leaves for a light lunch.  

Curd And Cucumber Sandwich 

Curd And Cucumber SandwichIngredients: 4 slices whole-wheat bread, ½ cup thick curd, 1 small cucumber (thinly sliced), 1 tbsp chopped coriander, black pepper and salt.  

Ingredients: 

4 slices whole-wheat bread, 

½ cup thick curd, 

1 small cucumber (thinly sliced), 

1 tbsp chopped coriander, 

black pepper and salt. 

Method: 

Mix thick curd with coriander, salt and pepper. 

Spread it over the bread and layer with cucumber slices. 

Place another slice on top and cut into triangles. 

For better texture, use thick or hung curd so the sandwich does not become soggy.

High-Protein Healthy Pizza- No Oven, cook over gas

 Ingredients: 

5-6 Boiled Sweet Potatoes

1/2 cup Oats Powder (for binding)

Salt

1 tsp Oil

Paneer

Boiled Sweet corn

Chilli Flakes

Oregano

Kashmir Red Chilli Powder

Pizza  Sauce

Lots of Cheese


Preparations

Prepare the pizza base: Peel the boiled sweet potatoes and place them in a large bowl. Mash them thoroughly until smooth, making sure there are no large lumps.

Add the binder: Add ½ cup oats powder, salt and 1 tsp oil to the mashed sweet potatoes. Mix everything well until you have a soft, dough-like mixture that can be shaped into a pizza base.

Shape the base: Place a large piece of parchment paper or a lightly greased flat surface on your kitchen counter. Transfer the sweet potato mixture onto it and gently flatten it into a round pizza base. Keep the base neither too thin nor too thick so that it holds together while cooking.

Heat the pan: Place a non-stick or heavy-bottomed tawa/pan on the gas stove and let it heat on a low flame. Carefully transfer the prepared sweet potato base onto the pan. If needed, shape the edges gently with a spoon or spatula.

Cook the base: Cover the pan with a lid and cook the base on a low flame. Let it cook until the bottom becomes firm and lightly golden. Avoid using a high flame, as the sweet potato base can brown too quickly while remaining soft inside.

Add the toppings: Once the base has firmed up, spread a layer of pizza/pasta sauce over it. Add the paneer and boiled sweetcorn, followed by chilli flakes, oregano and a little Kashmir red chilli powder.

Add plenty of cheese: Top the pizza generously with cheese. You can add extra paneer or vegetables at this stage if you want to make the pizza even more filling and nutritious.

Cover and cook: Cover the pan again with a lid and cook on the lowest flame until the cheese melts completely and the toppings are heated through. This usually takes a few minutes, depending on the thickness of the base and the type of cheese used.

Serve: Once the cheese has melted and the pizza is cooked through, carefully remove it from the pan. Let it rest for a minute or two before slicing and serving hot.

Paneer Pakoras

INGREDIENTS

For Marinating Paneer

200 gm  paneer cut into 3/ 1/2" long pieces

1 tsp red chilli pdr

1tsp garam masala pdr 

½ tsp salt or to taste


For Batter

¼ cup maida

¼ cup Cornflour

1tsp ginger-garlic paste

1 tsp red chili pdr

1 tsp salt or to taste

½ cup Water or as needed

For Coating and Frying

1½ cups breadcrumbs

Oil for Deep frying OR fry in Airfryer

 

PREPARATIONS

  • Cut paneer into fingers like shape. Add in red chilli powder, salt, garam masala powder and mix well. Set aside.

  • Take plain flour, cornstarch, ginger garlic paste, chilli powder, salt and water in a bowl and make it into a thick batter. Set aside.

  • Take breadcrumbs in a bowl and set aside.

  • Now to assemble the paneer. Take each paneer piece, dip it into the batter, roll it in the breadcrumbs really well. Place this in a plate and chill in the fridge for 30 mins.

  • Heat oil for deep frying, drop the paneer pieces one by one till golden brown and crispy.

  • Strain using a slotted spoon and keep it on some paper towel to remove excess oil.

  • Serve hot with ketchup or mint chutney.

    Want to eat healthy without giving up taste? Nutrition coach shares simple ways to make Indian food better

     

    Healthy eating doesn’t have to mean boring food. Culinary nutrition coach Eshanka Wahi shares how to make everyday Indian meals more nutritious and delicious.

    When people hear the words “healthy food,” many immediately picture a bowl of salad or a meal that looks uninteresting. That idea has made healthy eating  feel like a compromise for many people. But nutritious food doesn’t have to mean giving up taste. From dal and chilla to homemade snacks, spices, chutneys and traditional recipes, Indian cooking already offers plenty of nutritious ingredients. The key is knowing how to combine them, how much to eat and how to make them enjoyable.

    In an interview with HT Lifestyle, Eshanka Wahi, Dubai & Delhi-based Culinary Nutrition and Holistic Wellness Coach and Founder of Eat Clean With Eshanka, explains how people can make everyday Indian food more nutritious without compromising on flavour. 

    “Healthy food doesn’t have to mean giving up the flavours you enjoy. The idea should be to make the food you already eat more balanced and nutritious, rather than completely changing your meals,” Eshanka says.

    Healthy doesn’t mean boring

    “One of the biggest mistakes people make while trying to eat healthy is removing everything they enjoy from their plate. Instead of completely changing familiar meals, small changes in ingredients, preparation and combinations can make them more nutritious without taking away their taste,” she says.

    “For example, a regular chilla can be made with vegetables and paired with curd or another protein-rich accompaniment. Homemade snacks can also be used instead of reaching for packaged options every time hunger strikes. The goal isn’t to make every meal perfect. It is to make everyday food nourishing enough to support health while still being something people actually enjoy eating,” Eshanka adds.

    Indian food is healthier than we think

    “Indian food itself isn’t necessarily the problem. The quantity, frequency and combination in which we eat it also matter. Indian food is healthy; we just need to change the way we eat it,” Eshanka explains.

    “Take besan as an example. Besan can be a nutritious ingredient, but having besan pakoda, followed by besan chilla and then another besan-based snack on the same day can mean relying too heavily on one ingredient. Even a nutritious food needs to be part of a varied diet,” she says.

    “The same principle applies to other foods. Instead of asking whether a particular Indian food is ‘healthy’ or ‘unhealthy,’ it is more useful to look at the overall meal and how different foods are balanced throughout the day,” Eshanka adds.

    Tasty alternatives can still add nutrition

    “Healthy alternatives don’t have to be limited to salads or plain food. There are plenty of homemade options that can satisfy cravings while also adding useful nutrients to the diet. For example, moong-based snacks such as moonglate can be included as a protein-rich option,” Eshanka says.

    “For someone craving something sweet, homemade date-based chocolates made with ingredients such as dates, nuts and seeds can be an alternative to some packaged sweets. These options can also be useful for families with children,” she adds.

    “Homemade versions allow parents to experiment with ingredients while keeping familiar flavours and textures. Another practical approach is preparing certain homemade snacks in batches. Depending on the recipe and storage method, some preparations can be made ahead of time and stored for several days or longer. This makes it easier to have a homemade option ready instead of relying on packaged snacks when there isn’t enough time to cook,” Eshanka explains.

    One-pan cottage cheese and vegetable sauté

     Ingredients

    150–200 grams paneer, cubed
    1½ cups vegetables (capsicum, zucchini or broccoli chopped)
    2 cloves garlic, sliced
    1 tbsp olive oil

    ¼ tsp turmeric
    ½ tsp black pepper
    Salt

    How to make it:

    Sauté garlic in olive oil, add vegetables and paneer. Season and cook until lightly golden.

    Ridge Gourd -paneer sabzi

     Ingredients

    ghee 1 tbsp

    jeera 1/2 tsp

    ginger grated/ paste 1 tsp

    tomatoes chopped fine 1 small cup

    ridge gourd peeled and chopped 1 big bowl

    chili pdr to taste

    salt to taste

    hing little 

    turmeric pdr 1/4 tsp 

    paneer cut into small pieces 1 cup

    coriander leaves finely chopped 1 tbsp

     

    Preparations

    heat ghee in a pan

    add jeera, once it crackles , add hing, chili pdr

    saute for few seconds, add ginger and tomatoes fry till tomatoes are soft

    then add gourd pieces, turmeric pdr, wee bit water, mix well, cover and cook almost done

    now add paneer , coriander leaves, mix well, cook for another 2 minutes on low flame, stirring often,

    remove, serve hot with roti/ rice.
