Suralichi Vadi

 What is Suralichi Vadi?

Also known as Surali Chi Vadi or Surali Vadi, this classic Maharashtrian recipe is made by cooking a smooth batter of gram flour and yoghurt until thick. The cooked mixture is then spread into a thin layer, cooled, cut into strips and carefully rolled into delicate spirals.

The finished rolls are topped with a fragrant tempering and garnished with grated coconut and chopped coriander, giving the dish its signature aroma and fresh taste.

Its biggest highlight is its soft, melt-in-the-mouth texture. The yoghurt lends a mild tang, while the tempering adds crunch and depth of flavour.

Ingredients

For the batter:

1 cup gram flour (besan)

1 cup plain yogurt

2 cups water

Salt to taste

A pinch of turmeric

1–2 finely chopped green chillies

1 tsp grated ginger

1 tsp lemon juice

Optional: A small amount of sugar for a sweet-tangy balance

For the tempering:

1 tsp oil

1/2 tsp mustard seeds

1/2 tsp cumin seeds

A pinch of asafoetida (hing)

A few curry leaves

1–2 slit green chillies

For garnish: Freshly grated coconut Chopped coriander leaves

How To Make Suralichi Vadi

Step 1: Prepare A Smooth Batter

Whisk together the gram flour, yogurt and water until completely smooth. Make sure there are no lumps, as they can affect the texture of the vadi. Stir in the salt, turmeric, ginger and green chillies.

Step 2: Cook The Mixture

Transfer the batter to a heavy-bottomed pan and cook over medium heat, stirring continuously. This prevents the mixture from sticking and helps it thicken evenly.

Once it reaches a spreadable consistency, remove it from the heat and quickly mix in the lemon juice. If you like a hint of sweetness, add a little sugar at this stage.

Step 3: Spread It Thin

Immediately pour the hot mixture onto a greased steel plate, marble slab or another smooth surface.

Using a spatula or the back of a spoon, spread it into a very thin, even layer. Work quickly, as the mixture begins to set as it cools.

Allow it to cool for a few minutes until firm.

Step 4: Roll The Vadi

Cut the set layer into long strips using a knife, then gently roll each strip into neat spirals.

Your Suralichi Vadi is now ready for the final touch.

Kutchi Dabeli

Preparations

For dabeli masala, heat a pan and add all the whole spices, and a pinch of salt and sauté them on low heat.
Add the coconut and continue roasting all the ingredients until the spices are fragrant.
Cool the roasted spice and add them to a blender.
Add the powdered spices, sugar and blend to a smooth prefer.
Add salt to taste, blend again and keep aside.
For spicy chutney, soak the red chillies in hot water for 10 to 15 minutes.
Cool the soaked chillies and deseed them if you want the chutney to have a smoother consistency and be less spicy.
Add all the ingredients to the blender, with required amount of salt and water and blend to a semi thick, smooth paste.
For sweet chutney, heat some water enough to soak the tamarind and let it soak for 15-20 minutes.
After the water is cooled, squeeze the tamarind to separate the pulp.
Heat oil in vessel and saute the powdered spices briefly without burning.
Add the water with the tamarind pulp and the remaining ingredients and add some more water enough to boil the ingredients.
Let it boil on low heat till it become semi thick.
Remove the pieces of the date and set aside.
For dabeli filling, boil the potatoes very well, peel and mash them.
Heat oil in a vessel, add the cumin seeds and asafoetida and sauté it quickly.
Add the dabeli masala and saute it.
Add the mashed potatoes, sweet chutney and mix well.
Add the chopped coriander leaves and mix well.
Set the dabeli filling in a plate, cover the top with grated coconut, masala peanuts and pomegranate arils and press them well.
For assembling the Kutchi Dabeli, cut the pav in half alongside the width.
Toast it lightly.
Spread the sweet chutney on inner side of one half of the pav and the spicy chutney on inner side of the other half.
Add the dabeli filling in generous amounts on one half of the Fresho pav and place the other half on top.
Dip the pav sideways in the nylon sev, and the Kutchi Dabeli is ready to serve.

Bengal's Echorer Torkari

  

A Bengali Sunday without Echorer Torkari feels incomplete. Young jackfruit, potatoes and the warm crackle of panch phoron — simple, deeply comforting and unmistakably Bengali.

Ingredients

400 gm raw jackfruit, cut into medium pieces

2 potatoes, cut into cubes

1 tsp panch phoron

2 bay leaves

2 green chillies, slit

1 tsp ginger paste

½ tsp turmeric powder

½ tsp red chilli powder

½ tsp sugar

3 tbsp mustard oil

Salt to taste


Method

Parboil jackfruit in salted water for 10 mins. Drain.

Heat mustard oil until smoking. Lower heat.

Add panch phoron and bay leaves. Let them splutter.

Add potatoes and fry until lightly golden.

Add jackfruit, ginger paste, turmeric and chilli powder. Mix well.

Add ½ cup water, salt and sugar. Cover and cook on low heat for 15 mins.

Serve hot with steamed rice.

Panch phoron Ingredients

1tbsp cumin seeds

1tbsp brown mustard seeds

1tbsp fennel seeds

1tbsp nigella seeds/ black cumin or kalonji

1 1/2 tsp fenugreek seeds

Combine the seeds in a small bowl. Store in an airtight container.

Depending on what kind of dish you make with these seeds, they can either be fried briefly in oil or dry roasted to coax out their rich flavors.Makes about 1/4 cup of panch phoron.

Low Calorie Teen Ratna Dal

 Ingredients

1 Cup Mix of chana, green moong and tuvar dal

1 tsp Turmeric pdr

3-4 Green chili, slit

Salt to taste 

2 Tbsp Onion, chopped

1/2 tsp Ginger, chopped

1/2 tsp Garlic, chopped

1 tsp Cumin seeds

2 Whole red chilies

1 tsp Hing

1/2 tsp Garam masala pdr

1 Tbsp Mustard oil

1 tsp Ghee

Freshly chopped coriander - to garnish

 

Preparations

Boil dal with turmeric, green chili and salt. Keep aside.

Heat oil in a kadhai and add red chili and cumin seeds.

Add some hing and let it all splutter.

Add ginger, garlic and onion and let them cook until they turn golden brown in colour. Add some salt.

Pour the boiled dal in the mix and let it simmer.

Sprinkle some garam masala powder and ghee on the top.

Garnish with coriander leaves, switch off the flame and cover the lid.

Beetroot Idli Fry

 Beetroot Idli Fry 

Ingredients

 For idlis -

2 cups idli rice

1 cups urad dal

1 medium-sized beetroot, chopped

Oil for greasing idli plates

For frying –

1 medium onion, finely chopped

2 green chilies, slit from middle or chopped fine

1 tsp cumin seeds

1/2 tsp mustard seeds

1/2 tsp turmeric powder

Garam masala (optional)

Red chili powder (as per taste levels) OR use milagai podi as per taste

Hing

2-3 tbsp ghee/oil

5-6 curry leaves finely chopped

 

Preparations

In two separate bowls, rinse and soak rice and dal. Set it aside for 6-7 hours. After they are soaked, grind them in a blender till they are smooth as a paste. You can use a little water in intervals to make sure the dal and rice blend is lump-free. Let them ferment overnight.

In a blender, put the chopped beetroot and make a fine paste out of it. You can add 1-2 teaspoons of water to ensure the paste is smooth.

After the idli batter gets fermented overnight, add the beetroot paste along with some salt. Make sure that you mix it well so that the batter has a beautiful pink colour. If the batter seems too thick, add ¼ cup of water in it and mix well.

Grease the idli plates with ghee or oil and pour the beetroot batter into it. Place the mould in the steamer and steam-cook the idlis for 15-20 minutes. Allow the idlis to cool down a bit before removing them from the mould.

In a pan, heat some oil or ghee. To this, add mustard and cumin seeds and allow them to splutter. Then add chopped onion and curry leaves, and mix well.

Add the rest of the spices, turmeric powder, red chili powder, salt and slit green chilies. Cook until the onions lose their rawness and become translucent. At this point, you can also raise the spice levels by adding a bit of garam masala. Mix well.

In the meantime, take out the beetroot idlis from the mould and cut each into four pieces. Toss the beetroot idli pieces in the pan and give it a good mix so that it's well coated with the masala.

Cook the idlis till they are golden brown and slightly crispy on the edges. Garnish them with coriander leaves and voila! your beetroot idli fry is ready to serve! You can serve these idlis with peanut or coconut chutney!

Wheat Flour/ Atta Adai

Ingredients

  • Wheat flour - 1 & ½ cups atta
  • Onion - 1 big sized
  • Sambar powder - 1 & ½ tsp Replace with 1 tsp red chili powder, ½ tsp coriander seeds powder ( optional)
  • Turmeric - ¼ tsp
  • Green chilies -finely chopped as per taste
  • Curry leaves - 1 sprig
  • Salt
  • Water As needed
  • Cumin seeds 1 tsp                           
  •   oil for cooking
  •  Instructions
    • Chop the onions finely, add the chopped onions,turmeric,sambar powder,salt,curry leaves to the flour and mix well.
    • Add water (for me it consumed ½ cup plus little more) and make a smooth dough. Divide into six equal sized balls.
    • Take a zip lock cover/ parchment paper/ butter paper/ banana leaf over a platform and grease it with few drops of oil. Flatten the dough ball with hands into a little bit thicker than roti.
    • Heat a flat pan,drizzle with oil and toast the adai both the sides in medium flame till golden brown spot appears.

    Notes

    my mom makes a raita with golden fried onions+curd,seasoned with mustard,urad dal and curry leaves. The best combo for this adai.

     I didn't add cumin seeds.

    You can also add the onions to the adai after sautéing it.

    A chopped tomato can also be added,after frying it…

    Replace sambar powder with 1 tsp of red chili powder and ½ tsp dhaniya (coriander) powder.

Crispy Roti Roll

 Ingredients
For Rolls:
4 leftover rotis, 1 cup gram flour (besan), water as needed, green chilies, ginger, garlic, cumin seeds, turmeric, red chili powder, coriander powder, hing, ajwain, garam masala, salt, sesame seeds, sugar, lemon juice, coriander leaves, chopped spinach, oil for frying.

 Ingredients
Tamarind Chutney:
Tamarind pulp, chopped onion, coriander leaves, green chili, black salt, sugar, water.

Grind chilies, ginger, garlic, cumin, and a pinch of salt into a coarse paste. Mix into the batter.

 Add spices, sesame seeds, sugar, lemon juice, coriander, and spinach. Mix well.

Spread batter over each roti, roll tightly, and repeat with the remaining rotis. 

 Steam the rolls on a greased perforated plate for 12–15 minutes. Cool and slice.

Deep-fry until golden and crispy. Serve hot with sweet & tangy tamarind chutney.
