Brownie Sundae

  

 Ingredients

Brownies – store-bought or mix 

Vanilla ice cream – 2 scoops per person

Chocolate sauce – to drizzle

Whipped cream, nuts, or chocolate chips – optional

Method

Warm the brownies slightly.

Place them on a serving plate or in dessert bowls.

Top generously with ice cream.

Drizzle with chocolate sauce.

Finish with your favourite toppings.

Plating Hack: Serve in dessert cups for a café-style look.

Pro Tip: Cookies, cake, or muffins work as substitutes for brownies.

Oreo Vanilla Ice Cream Cake

 Cake recipes:

This Oreo ice cream cake is very easy to make and it's also better than the store-bought frozen dessert. Once you've prepared the Oreo ice cream, putting it together with the cookies is pretty easy and will only take you 10 minutes to prepare. 
 
If you're short on time, you can use the store-bought version and layer it according to the recipe. 

Ingredients for Oreo ice cream: 
 
Whole milk - 1 cup (chilled) 
Sugar - 2/3 cup 
Heavy cream - 2 cups (chilled) 
Vanilla Extract - 2 tbsp. 
Oreo cookies - 1 cup crumbs plus 20 cookies 
Chocolate Graham cracker - 6 
Whipped cream - 3 cups 
Chocolate sauce - as needed


Method of preparing the Oreo ice cream
Whisk the milk and sugar together in a bowl until the sugar has thoroughly dissolved. Add the heavy cream and the vanilla. 
 
Transfer the mix into an ice cream maker and freeze. Then stir in the crumbled Oreos and freeze, transfer to a rectangular air-tight container and freeze for an additional 3 hours. 
 
If you don't have an ice cream maker, transfer the mix into a large square dish, pour a 1-inch layer, mix in the crumbs and let freeze. Once your ice cream is ready, slice it into 3 wide strips to make 3 layers of ice cream. 
 
Line a long, deep baking dish with parchment and place the Graham crackers at the bottom of the pan. Top with 1 inch of the ice cream you made. Spread 1 cup whipped cream over the top of the ice cream and press whole 
 
Oreo cookies into the whipped cream. Then top with a small layer of whipped cream . Top with a further 2 layers of 1-inch ice cream and the remaining Graham crackers. 
 
Then spread the remaining 1 cup of whipped over the crackers. Cover and freeze for a couple of hours, but preferably overnight. 
 
Then, remove the cake from the pan and place it on a tray or serving plate. Pour about 1 cup of chocolate sauce and crush on any remaining Oreo cookies. 
 
Tip: If you only want some ice cream, you can stop after you've finished step 2. You can also use store-bought ice cream.

Cheesecake in a Mug

 

Ingredients:

  • 2 tbsp graham cracker crumbs
  • 1 tbsp butter (melted)
  • 4 oz cream cheese (softened)
  • 2 tbsp sugar
  • 1/4 tsp vanilla extract
  • 1 egg yolk
  • 1-2 tbsp sour cream
  • Fruits
  • Whipped cream
  • Chocolate sauce

Method:

  1. Prepare the crust: In a small bowl, mix the graham cracker crumbs and melted butter. Press the mixture into the bottom of your mug to form the crust layer.
  2. Make the cheesecake filling: In another bowl, beat the softened cream cheese, sugar, vanilla extract and egg yolk together until smooth. You can use a fork or small whisk for this, mix in the sour cream for a creamier, tangier filling.
  3. Assemble: Pour the cheesecake filling over the crust in the mug. Make sure the filling is spread evenly.
  4. Microwave: Microwave the mug on high for 40-60 seconds. Start with 40 seconds and check to see if the cheesecake has been set (it should be firm but slightly jiggly). If needed, microwave for another 10-20 seconds, but be careful not to overcook it.
  5. Cool and Enjoy: Let the cheesecake cool for a few minutes before serving. If you like, top it with fruit, whipped cream, or a drizzle of chocolate sauce.

Quick banana ice cream

 Ingredients

 ripe bananas 4 cut into chunks

milk  3-4 tbsp

almonds toasted and flaked  2 tbsp

chocolate sauce or ready-made toffee  2-3 tbsp


Method

blend banana with little milk well

take the banana mix in an air-tight container

add more milk in the mixer jar, mix well, pour over the banana mixture, mix half of the nuts well.

sprinkle the remaining nuts on top and freeze till well set in the freezer

you may serve drizzled with some chocolate sauce on top or break some chikki or roasted nuts on top and serve.

Tiramisu Protein Pancakes

Low on carbs, low on fat, but high on that protein! You can always add some protein powder for that extra spike if you feel you need it. Most of us don't get enough protein simply due to a lack of knowledge- did you know an adult should consume 0.36 grams of protein per pound? This means an average person weighing 180 Ibs should consume about 65 gr (2.2 oz.) of protein per day! 
 
Starting the morning with a protein-rich meal is a great way to enjoy an energy surge and remain full well until lunchtime.

Ingredients for pancakes:  
Tiramisu Protein Pancakes
Ground flaxseed - 8 tbsp. (alternative: 4 tbsp. psyllium husk) 
 
Almond milk - 4 cups 
 
Vanilla Extract - 2 tsp. (alternative: rum extract) 
 
Flour - 2 cups 
 
Cocoa powder - 4 tbsp. 
 
Coffee - 1 tbsp. 
 
Baking powder - 4 tsp. 
 
Cooking spray - as needed 
 
Ingredients for topping cream
Yogurt - 3 cups (can be soy) 
 
Honey - 2 tsp. (alternative: stevia) 
 
Chocolate sauce - as needed (optional) 
 
Strawberries - as needed (optional) 
 
Method of preparing the pancakes: 
 
Whisk together the flaxseed, almond milk and vanilla extract. Set aside and let thicken. 
 
In a separate bowl combine the flour, cocoa powder, coffee and baking powder. 
 
You can also add 2 scoops of protein powder. Now fold in the flaxseed mix. 
 
Heat a cooking-spray-coated pan over medium-low heat. Using 1/3 cup quantities at a time, pour in the pancake mix and cover with a lid. Cook each side until the sides firm up. 
 
To serve, whip the yogurt and honey and top the pancakes. You can also add chocolate sauce or strawberries.

SIMPLE TRICKS TO USE FOODS THAN THROW IT AWAY

I hate wasting food, as millions go die due to shortage of food. Also, with the inflation, when we pay so much to buy food, why throw it in the bin, when they can be used for making different snacks, or preserved in a better way.

1) OVER RIPE BANANAS- Normally when bananas are ripe, we'll throw it, one way to save them is put them in zip-lock and store in freezer, till we've enough to use for baking an egg-less cake or use it to make a nice smoothie with some yoghurt, nuts, dates. To prevent bananas from ripening too fast, tie plastic wrap around its stem.

2) BREAD GETTING OLD- Normally when bread is old, past the expiry date, we throw it. In case, it isn't spoiled, you may use it to make some nice bread upma , or bread vadai , bread kheer, bread pudding or toast it and powder it to make bread crumbs, or bread halwa or croutons for soups and salads. ( you can see recipes for all in this blog).

3) POTATO- Never store onion and potato together. To prevent, potato from sprouting, store it with an apple ! Or, you're going to use it within a week and you feel, it may sprout or get bad, best boil it with skin and store in the fridge after draining it well. It lasts for some days, as that is what I do. You feel like having a dessert- make kheer by soaking and grinding almonds and boiled potatoes together, Or, potato halwa, for making some cutlets.Or slice it fine, dry it with paper towel, then season it, roast in microwave or oven, to get some healthy chips, which can be stored too.

4) POMEGRANATE- I used to store my pomegranates outside, then found them dried, difficult to peel, by storing in the fridge, I found it fresh, easy to peel and lasts long.

5) MAYONNAISE- When last bit is left in the jar, don't throw it, add oil, herbs, spices, shake it well and use as salad dressing !

6) HERBS= Sadly herbs are expensive and also spoil easily. Best way is to wash, dry them, mix them with butter and freeze them in ice tray, then store those cubes in ziplock bag for later use. It can be defrosted and used when needed by taking out how many cubes we need . Curry leaves can be washed, dried in microwave and stored in a bottle outside. As for coriander leaves, always remove the stem and any other part that looks bit suspicious, put them in those little containers with holes, so they don't sweat. Then each day, when we use, turn the sides and check to discard anything getting bad, so it doesn't spoil the entire lot, OR, after sorting it out, if you store in those little net bags on the fridge door, I found that it gets dried and last long without getting spoiled !

7) CHOCOLATE SAUCES OR NUT BUTTER- when little left in the jar, instead of discarding it, add some warm milk, shake it up to get a nice tasty drink ! Or, you may add little milk and use it while baking a cake.

8) TOMATOES-  Best always choose those tomatoes that are green or semi-ripe when you buy. Tomatoes are best stored outside, than in the fridge, lasts longer for more than 3 weeks ! Suppose you feel they're getting too ripe, then you can always use them to make tomato chutney or puree or soup and enjoy it.

OATS COOKIES



INGREDIENTS
Banana 2 big mashed
Oats ½ cup slightly crushed
Cinnamon pdr. ¼ tsp
Pdr. sugar 2 tsp
Chocolate pdr. ½ tsp
Chocolate chips 2 tbsp
Honey 1 tbsp
Chocolate sauce 1 tsp
Raisins 1 tsp

METHOD
Mix all well, shape as desired, put on greased baking tray.
Bake at 180 deg. C for 12-15 minutes or till the top is light brown.

ENERGY BALLS COATED WITH CHOCOLATE



INGREDIENTS
Oats  100 gm
Almonds chopped  50 gm
Peanut butter  2 tbsp
Honey 1 tbsp
Chocolate sauce ¼ cup

METHOD
Roast oats for 3 minutes, stirring continuously, remove
Roast chopped almonds in the same pan for 2 minutes, add to oats and cool
Once they’re slightly cool, crush them with your hands and mix well, adding peanut butter and honey
Roll into small balls, coat half of each ball in chocolate sauce (melt chocolate in microwave for a minute)
Keep in fridge for 30 minutes to set, store in air-tight box.
Ps- if you prefer, you can coat the whole ball in chocolate sauce too.
