Mulled Non-Alcoholic Cider

Give your immune system a health boost with this warming alcohol-free drink. This mulled, spicy cider is very easy to prepare, and it also carries all the health benefits of apples, ginger, oranges, cranberries, and spices like cardamom, ginger, and cinnamon in one irresistible drink that everyone in your family will enjoy.
Mulled Non-Alcoholic Cider   

Ingredients  
 
Apple juice - 8 cups 
 
Orange - 1 (thinly sliced) 
 
Fresh cranberries - 1/2 cup 
 
Whole cardamom pods - 6 
 
Fresh ginger - 1-inch piece (thinly sliced) 
 
Cinnamon sticks - 4 
 
Whole cloves - 3 


Method
Combine all the ingredients in a large stockpot. 
 
Bring the mixture to a boil, then reduce the heat and let it simmer for 30 minutes.Let cool for 5 minutes and strain. 
 
You can serve this drink warm or cold and store it in the refrigerator for up to 3 days.

Chila/ pancake stuffed with spinach and ricotta cheese

 INGREDIENTS

for chila

besan  1/2 cup

maida/ all purpose flour 1/2 cup

salt to taste

turmeric pdr  1/2 tsp

red chili pdr 1/2 tsp 

oil 1 tbsp

oil for shallow frying


for stuffing

oil 1 tbsp

onion chopped 2-3 tbsp

jeera 1/2 tsp

spinach chopped 1 cup

ricotta cheese/ cottage cheese  1/2 cup chopped

nutmeg pdr 1/4 tsp

salt to taste

tomato finely chopped 2-3 tbsp


for dressing salad and olive oil


PREPARATIONS

for the batter mix the flours, and spices well, then add water whisking well to avoid lumps

last add oil, mix well, let it rest for sometime.

Filling

in a pan heat oil, add jeera,once it crackles, add onion, little salt fry well till pink

add spinach, cheese, salt and tomatoes mix well, let it cook for a 2-3 minutes, then add nutmeg, mix well.


Now to make chila  to stuff and serve.

heat a tawa, smear little oil, spread little batter, spread well to make a thin chila, put little oil on top and flip it to cook on other side. when both sides are light brown, remove, make all in the same way.

Either you can stuff in one corner and roll it OR

make a slit, like radius from the center to the edge,  spread the filling near the cut edge and roll it, you will get a nice triangel shape.

once filled, put it back on tawa to get slightly roasted on both sides by smearing little oil.

to serve, make salad of your choice, serve with a coriander leaf on top.

There your healthy chila is ready, as it has carbd, protein,vitamins and minerals, making it a healthy breakfast or tea time snack.

Ingredients  

4 cups Dill  

4-6 Green chilies 

8-10 cloves Garlic 

¼ tsp Turmeric powder

½ tsp Coriander and cumin powder

3 tbsp Oil

salt

 

Instructions 

Wash the dill leaves with clean running water, and roughly chop.

Crush chilies and garlic cloves.

Heat oil in a heavy bottom kadai or pan, add the crushed garlic and chilies.

Saute for a few minutes, till garlic turns light pink start adding chopped dill leaves. Keep stirring and mix in the dill leaves. Add turmeric powder and coriander and cumin powder. Keep mixing the sabzi for 2-3 minutes, add salt. Cook sabzi about 6-8 minutes. Switch off the heat.
