Try This High-Protein Chocolate Mousse Recipe Made With Boiled Eggs

Craving chocolate mousse but want a healthier version? This simple recipe uses boiled eggs to create a rich, creamy texture without heavy cream. It's packed with protein, naturally sweetened and takes just a few minutes to prepare.

 Ingredients:  

2 hard-boiled eggs, 

2 tbsp unsweetened cocoa powder, 

2 tbsp honey or maple syrup, 

2 tbsp milk (or any plant-based milk), 

½ tsp vanilla extract, 

a pinch of salt, 

dark chocolate shavings or berries for garnish

 

Instructions

Peel the hard-boiled eggs and roughly chop them. Make sure they have cooled completely before using.  

Place the boiled eggs, cocoa powder, honey, milk, vanilla extract and a pinch of salt into a blender or food processor. 

Blend for 1-2 minutes until the mixture becomes silky smooth and mousse-like. Scrape down the sides if needed and blend again.

Taste the mousse and add a little more honey if you'd like it sweeter. If the mixture is too thick, add a splash of milk and blend again. 

Transfer the mousse into serving bowls or glasses and refrigerate for at least 30 minutes. Chilling helps improve the texture and flavour. 

 Top with dark chocolate shavings, cocoa powder, fresh berries or chopped nuts before serving.

Mango almond pudding

 Ingredients

For almond milk (500ml)

  • Almonds - ¾ cup/ 110 grams
  • Water - 2½ cups

Other ingredients

  • Cornflour - 35 gm / 4½ tbsp
  • Cinnamon stick - 1
  • Vanilla essence - few drops
  • Sugar - 100 grams / ½ cup

For mango sauce

  • Mango, large - 1
  • Sugar - 50 grams / ¼ cup
  • Water - 1½ cups
  • Lemon, small - 1 no
  • Mint sprigs - for garnish

Method of preparation

  1. First, prepare the almond milk. Boil the almonds for two to three minutes to soften them well. Drain the water using a strainer, and then run tap water over the boiled almonds to bring down their temperature. Now, place the almonds in a grinder. Add water to it and them grind well. When the mixture has been well ground, strain the mixture through a fine mesh bag (or a muslin cloth). Squeeze out the almond milk completely. Keep the ground almond bits aside to use in other recipes.
  2. Set aside some of the almond milk (one large ladleful). To it, mix some cornflour. Mix them well. (Custard powder can also be used instead of cornflour.)
  3. Pour the remaining almond milk into a saucepan and bring it to a boil. As the milk is warming up, add cinnamon, vanilla essence and sugar. Mix them well. Once the sugar is dissolved and the milk starts to boil, lower the heat.
  4. Then, slowly add the almond milk and cornflour mixture into the saucepan. Take it off the flame as it starts to thicken and keep stirring continuously. Bring the saucepan back on the low flame if required, stirring all the time. Cook this blend until it reaches a very thick and gooey consistency.
  5. Remove the cinnamon stick, and transfer the mixture into the molds. When the mixture cools down completely, transfer it to a refrigerator and keep it for around two hours.
  6. Next, prepare the mango sauce. Peel one large ripe mango and put it in a blender with sugar. Then, heat up a pan and pour in the blended mango. Add a dash of water, stir and mix well. Take it off the heat and then pass the sauce through a strainer. Squeeze in a small lemon and stir it in. The mango sauce is ready. Keep it in the freezer to cool it down.
  7. To serve, bring the pudding out of the freezer and take it out of the mold. Plate it with the mango sauce on top, garnished with mint sprig. Enjoy chilled.

Ice Cream Sandwich Cake

Ingredients

24 vanilla ice cream sandwiches, unwrapped

2 (8 ounce) containers whipped topping  thawed

1 (12 ounce) jar hot fudge ice cream topping, warmed

1 (12 ounce) jar caramel ice cream topping

¼ cup chopped pecans, or to taste

 

Preparations

 Gather the ingredients. 

 White casserole dish with ice cream sandwiches topped with whipped topping covered with chocolate and caramel syrup

Arrange a layer of ice cream sandwiches in the bottom of a 9x13-inch dish; top with a layer of whipped topping, hot fudge topping, and caramel topping.

 Repeat layering with remaining ice cream sandwiches, whipped topping, hot fudge topping, and caramel topping, ending with a top layer of whipped topping. Sprinkle with pecans.  

Cover the dish with aluminum foil and freeze until set, about 30 minutes. Slice and serve with your favorite toppings!

Mango Pudding

  

Ingredients

500 g Mango, peeled and de-seeded

 2 tbsp Granulated sugar, to taste

240 ml Evaporated Milk (1 cup)

1 tbsp Gelatin powder

1/4 cup Cold water

Mango and evaporated milk to serve

 

Preparations

Combine the gelatin and cold water in a bowl and set aside to bloom

Put the peeled and pitted mango in a blender and blend until smooth

Add the sugar and evaporated milk to the mango puree and pulse until just combined

Melt the gelatin in the microwave at 10 second bursts, stir until completely dissolved

Add the gelatin to the blender and pulse until smooth

Pour the mango pudding mixture into your glasses of choice and tap gently on your countertop to remove any bubbles

Place in the fridge to chill for at least 2 hours

Remove from the fridge top with more evaporated milk and mango chunks.

Ladyfinger Roll Cake- No cook/ bake

 Ladyfinger Roll Cake  

This creamy and delicate ladyfinger roll cake is a gourmet challenge for those who grow bored with sponge cakes. But here's the nice part- it doesn't require baking! 
 
If you don't want store-bought pudding, you can use our créme anglaise or créme patisserie recipes.

Ingredients:
 Ladyfinger cookies - 24 
Milk - 1 1/2 cups 
Vanilla pudding - 2 cups (or pastry cream) 
Banana - 2 (peeled) 
Cocoa powder - 1 tbsp. (or instant coffee)

Method of preparing the Ladyfinger Roll Cake: 
 
In a bowl, dip each ladyfinger into the milk. 
 
Lay a long piece of plastic wrap on the counter. 
 
Place two rows of ladyfingers, side by side, on the plastic wrap. 
 
Cover with a second piece of plastic wrap, and place them in the fridge for 4 hours or overnight.
 
If needed, brush on some milk and chill for another hour. 
 
Once pliable, remove the top plastic and spread the pudding in a thin, even layer over the ladyfingers. 
 
Leave a 1/2-inch border along one of the long sides. 
 
Place the bananas, lengthwise, in the middle of the row of ladyfingers that are completely covered with pudding or pastry cream. 
 
Carefully, using the extending plastic wrap, roll the ladyfingers up and over the bananas and continue rolling the entire cake to form a cylinder with the ends of the two rows of ladyfingers coming together. 
 
Chill in the fridge for 30 minutes. 
 
Serve on a long plate, sprinkle with cocoa powder for garnish and top with whipped cream with the help of a piping bag.

When it's hot and sweltering outside, we all begin to crave something cold and sweet to cool us down. However, many frozen treats can put a real strain on your waistline, causing you to pile on the pounds. Luckily, there are healthy options available that will help you keep cool without feeling guilty, such as the incredible one-ingredient watermelon sorbet that you can find below:

To make your one-ingredient watermelon sorbet, you should first peel a ripe watermelon, and cut out as many medium-sized cubes as you can

Then, arrange the cubes on a 9″x13″ baking sheet and place it in the freezer for around 2 hours, or until it has frozen entirely.

Once all of the fruit has frozen, remove the tray from the freezer. Then, in separate batches, add all of the pieces to a blender, and puree until perfectly smooth. Once each batch has been pureed, empty it into a loaf pan, firmly packing it and evening it out with a spatula.

Then, simply place the loaf pan into the freezer again for at least 1-2 hours. Always remember to let it sit for around 5 minutes on the counter before serving, otherwise, it will be way too hard to eat!

Strawberry Shortcake Ice Cream Cake  

Ingredients

1/2 cups strawberry shortcake ice cream topping 

16 to 20 vanilla ice cream sandwiches with vanilla outside “wafers,” such as Prairie Farms® Double Vanilla ice cream sandwiches

16 ounces whipped topping

1/2 cup strawberry ice cream topping

1 cups sliced strawberries

 

Preparations

Prepare ice cream topping according to recipe. Measure out 2 1/2 cups. Reserve the rest for another use.

Place half of the ice cream sandwiches in the bottom of a 9x13 dish in a single layer. 

Top with half of the whipped topping. Drizzle evenly with strawberry ice cream topping and top with strawberry slices. Sprinkle half of crunchy ice cream topping over the strawberries. 

Add remaining ice cream sandwiches in a single layer. Top with remaining whipped topping and crunchy ice cream topping. 

Freeze overnight or at least 8 hours.

Classic Banoffee Pie - Easy, No-bake !

 Ingredients

For the base:  
 
7 tbsp (100g) butter, melted  
 
250g graham crackers or digestive biscuits, crushed 
 
For the toffee: 
 
7 tbsp (100g) butter  
 
⅔ cup (100g) dark brown sugar  
 
1 can (14 oz/397g) sweetened condensed milk 
 
For the top:  
 
3 to 4 bananas  
 
1¼ cup (300ml) heavy cream, lightly whipped  
 
Cocoa powder 
 
 
 
Method:. 
 
Crush the crackers/biscuits in a food processor or by hand, as finely as possible. Mix it with the melted butter and spread it around the base of an 8-inch (20 cm) spring-form pan. If you wish, you may grease the pan beforehand to make it easier to remove the pie later. Leave it in the freezer for ten minutes. 
 
Melt the butter and brown sugar in a non-stick saucepan over low heat, stirring all the time with a silicon spatula or whisk, until the sugar has dissolved. Add the sweetened condensed milk and bring to a boil, always mixing. Let it boil for about a minute and spread over the biscuit base. Let it cool for a few minutes and then chill it for at least 1 hour in the fridge, until firm. 
 
Slice the bananas and place them over the toffee. Top with whipped cream and decorate with cocoa powder. Leave it in the fridge until it’s time to serve.
