Sweet Potato Burger

 Indian-Spiced Sweet Potato Fritters (Vegan | Dairy-Free) 

Ingredients

  • 2 tbsp ground flaxseed (linseed)
  • 4 tbsp warm water
  • tbsp oil divided (I often use organic rapeseed (canola) oil)
  • 1 medium onion (130g) finely chopped
  • 2 tsp minced garlic
  • 250 g / 2 packed cups sweet potato grated
  • 70 g / ½ cup gram flour (chickpea flour) (or you can substitute with wholemeal flour or plain flour)
  • 1 tsp cumin pdr
  • 1 tsp garam masala
  • salt to taste
  • 1 tbsp tomato puree (paste)
  • 40 gm / 1 packed cup spinach finely chopped
  • green chilies, finely chopped to taste or red chili pdr to taste 
  •  

    Preparations First, make the flaxseed 'egg' by placing 2 TBSP ground flaxseed in a small bowl with 4 TBSP warm water and leave to ‘gel’ up. Gently heat ½ TBSP oil in a large frying pan (skillet) and cook the onion, until it starts to soften. Meanwhile, grate the sweet potato (no need to peel it). Add the garlic and grated sweet potato to the frying pan and stir through. Continue cooking for a couple of minutes. Stir in the tomato puree, cumin, garam masala and salt, then remove from the heat. Transfer the contents of the frying pan into a mixing bowl. Add the flaxseed 'egg' and stir through. Sprinkle on the flour and stir through until fully combined (N.B. if using chickpea flour,  I would recommend sieving it to ensure there are no lumps). Stir in the chopped spinach, green chilies/ red chili pdr. If possible, use two frying pans (skillets) to save cooking time. Coat the bottom of the frying pan(s) in oil and heat on medium heat. Scoop about half a cup’s worth of mixture and drop it into the pan. Press down on the mixture using a slotted turner to flatten it into fritter shape. You should be able to fit another three into the pan, but make sure not to crowd them. Cook the fritters until golden brown on the bottom (about 4 minutes), then use a slotted turner to carefully flip them over. Continue cooking until brown on the second side (another 4 minutes or so). As an optional step (which I highly recommend) continue cooking the fritters for 10 minutes in the oven at 210C (190C fan) / 410F. This brings the flavour out even more and also crisps the edges. The fritters can be eaten hot or cold. Any leftovers can be stored in the fridge for up to five days. I haven’t tried freezing them yet, but I’m pretty confident that they will be freezable.

    Boondi Laddu

     Ingredients

    Gram Flour (Besan) 1 cup
    Water 3/4 cup (to make batter)
    Baking Soda a pinch
    Ghee / oil for frying boondi
     
    For sugar syrup
    Sugar  11/2 cups
    Water 1 cup (for sugar syrup)
    Cardamom Powder 1/2 tsp
    Saffron Strands a few (optional)
    Yellow or Orange Food Color a pinch (optional)
    Cashews, Raisins  2 tbsp each (optional, for garnish)
     
    Method

    In a bowl, mix gram flour, baking soda, and food color.
    Add water gradually, whisking until you get a smooth, flowing consistency (not too thick or too runny).

    Heat oil/ghee in a deep pan.
    Use a perforated ladle (boondi ladle) and pour a ladleful of batter over it, allowing tiny drops (boondi) to fall into the hot oil.
    Fry until the boondi turns golden but not crisp. Remove and drain on paper towels.

    Sugar Syrup:
    In a pan, mix sugar and water. Cook on medium heat until you get a one-string consistency.
    Add saffron strands (if using) and cardamom powder. Mix well.

    Add the fried boondi to the hot sugar syrup and mix well.
    Let it soak for a few minutes until the boondi absorbs the syrup.
    Add cashews and raisins if you like.

    Grease your palms with a little ghee. Take a portion of the boondi mixture and shape it into round laddus while warm.
    Repeat until all the laddus are made.

    Let the Boondi Laddus cool and set before serving. 

    Once completely cool, store at room temperature in a tight lid container.

    Helthy cheela

     Cheela is like a pancake, salty, it may resemble a dosa, but yellowish, a little like adai , a well-known South-Indian snack-healthy as well. It is cooked on a tava like dosa. It is basically made with dals.

    Ingredients

    whole green moong dal 1/2 cup

    chana dal 1/2 cup

    arhar / tuvar dal  1/2 cup

    black urad/ white urad dal 1/2 cup

    salt to taste

    besan   2 tbsp

    green chilies to taste

    ginger 1 " chopped

    jeera/ cumin pdr 1 tsp

    turmeric pdr 1/4 tsp

    beetroot grated 2-3 tbsp

    carrot grated  2-3 tbsp

    cabbage grated  2-3 tbsp

    onion finely chopped 2-3 tbsp ( optional)

    you may use spring onion too

    finely chopped coriander leaves  2 tbsp

    oil for cooking


    Method

    wash and soak the dals together for 3 hours, grind with ginger and green chilies.

    add salt, turmeric pdr, besan, jeera pdr and mix well.

    the batter should be like idli or uttapam batter, if too thick add little water

    mix salt and if needed little chaat masala with grated veges

    heat a heavy tava on gas, once hot smear little oil, reduce heat, spread the batter evenly 

    spread the grated veges on top, lightly press them down with the ladle, put little oil all over on top

    once the bottom has become golden, turn it over, press it down, once the bottom gets brown take it out

    repeat with the remaining batter.

    serve hot with chutney of your choice or milagai podi also known as gun powder by some !

    You can also mix the grated veges with the batter, depending on how many cheelas may be needed ! 


    NOTE- those who want more flavour, after you flip over, spread some grated cheese or cheese slice on top, cover it, cheese will melt, serve hot like a pizza !l

    Carrot MysorePak

     INGREDIENT

    besan / gram flour 1 cup

    carrot puree 1 cup

    ghee 1 cup

    oil  1/2 cup

    ghee for greasing

    METHOD 

    roast besan in low flame stirring continuously till raw smell goes. Mix it with oil and keep aside

    In the pan add sugar and carrot puree boil till raw smell goes

    when it reaches  1 string consistency, lower flame, add besan mixture, keep stirring

    add ghee 1-2 tbsp at a time, keep stirring, add more ghee if the previously added ghee is absorbed.

    when the mixture leaves the sides of the pan and frothy and bubbles appear on the underside of the mixture  when mixed, it is the right time to switch off the gas and spread the mixture in a greased plate.

    keep aside to cool and set, after 15 minutes, cut and leave for it to set.

    Healthy Mango-date pudding / halwa



    I cooked it fully in the microwave, as I was too tired to keep stirring it continuously. You're free to cook it over the gas, you can add more sugar as per your taste


    INGREDIENTS

    besan / gram flour  1 cup

    mango chopped    1 cup

    dates  chopped 1 heaped tbsp

    cashew nuts chopped 1 tbsp

    ghee 2 tbsp

    sugar 1 tbsp

     Milk 1/2- 3/4 cup

    METHOD

    In a microwave safe dish I added besan, ghee mixed well, micro wave on high power for 2 minutes, remove stir well. 

    Again micro high for 2 minutes, remove stir well, repeat the process for 2 more minutes.

    Then I added milk, stirring well, micro for 2 minutes, remove and mix well,  repeat once more for 2 minutes.

    Then I added nuts, mango and dates, mixed well, then micro high for 2 minutes, remove and mix, keep repeating for 3-4 times, check for sweetness, add more sugar as per your taste.

    Mix well and micro high for 2 minutes, remove and stir well, keep repeating till the mixture is thick.

    Can be served hot / cold.

    I wanted it to be with natural sugar, as then I can give to my hubby who is a diabetic with sweet tooth. Hardly added 1/2 tbsp of sugar, our daughter said, " amma it is hardly sweet", but I like it that way, as I prefer my dessert with less sweet.

    Carrot Pancakes Served With Salted Yogurt

    This is a great gluten-free dish to try if you’re looking for something different to make in the kitchen. 
     
    We start by mixing four thoroughly beaten eggs with 1 pound of peeled and grated carrots, a quarter cup of chickpea flour and a third of a cup of chopped cilantro, in a big bowl. Add a pinch of kosher salt and some pepper to season your rough mixture. 
     
    Take a large cast-iron skillet (preferably, if you have one) and add 2 tablespoons of olive oil and heat the skillet over medium flame. 
     
    Put two well-sized scoops of your carrot mixture individually on the skillet and flatten them to about half the existing thickness, or whatever thickness is your preference. From that point on the process is the same as making a normal pancake. 
     
    Keep rotating the skillet to ensure all sides of your pancakes are heated evenly until they are a nice golden brown. Then you can remove your pancakes from the skillet and drain them of any excess oil using paper towels. 
     
    While your pancakes are browning up, you can prepare the yogurt. Just add a cup of chopped spicy greens like watercress, one tablespoon of fresh lemon juice and a little bit of salt and pepper to one cup of plain whole yogurt, and stir.

    Besan-Khoya burfi

    Ingredients

    besan 1 cup

    sweetened khoya 200 gm *

    ghee 5-6 tbsp

    milk 1 cup

    desiccated coconut 2 tbsp ( optional) ^

    sugar 1/2 cup or to taste

    * I had store bought sweetened khoya, in case you don't have sweetened khoya use more sugar.

    In one of earlier recipes, I had mentioned about how to make quick khoya with milk and milk powder.

    ^ I added desiccated coconut, as I felt it was too sweet, so, it can be omitted.

    Method

    in 2 tbsp ghee, fry besan on medium flame stirring continuously. I had used a heavy kadai ( not non-stick).

    Once you get a nice aroma from besan and it turns light brown, I added the crumbled khoya and sugar and kept stirring, added desiccated coconut, once sugar had slightly melted, I tasted and felt the sugar was more, so added the coconut, so, it is absolutely optional, then to bring the mixture together added milk, kept stirring till it got thick, once it slightly started leaving the sides of the kadai, I added a tbsp of ghee, and kept stirring for 2 minutes, then another tbsp of ghee and kept stirring, once I felt it was done, I added a tsp of ghee, stirred for a minute and spread on a greased plate, sprinkled some slivered almonds on top, again optional and pressed it down. 

    once it had cooled completely, I cut into slices and stored it. My critic- hubby liked it very much. So, felt happy. He asked why did I make it, said there was no sweet at home and as we stopped buying sweets from shop, make it whenever my health permits and I'm in a mood to make !
