Roasted Cauliflower Chowder

 roasted cauliflower chowder recipe soup red bell peppers low carb vegetarian vegan gluten free 

Ingredients

large head cauliflower, washed and cut into florets

tbsp olive oil

pinch of salt

tbsp butter, vegan/paleo: use olive oil

1medium yellow onion, chopped

cloves garlic, minced

medium carrots, chopped

celery ribs, chopped

large red bell pepper, seeds removed and diced

cups veg broth

tsp chopped fresh thyme

small bay leaf

1/8 tsp freshly ground black pepper

tsp salt

cup heavy cream, vegan/paleo: use cashew milk

 tbsp chopped fresh parsley

 

Instructions 

Preheat the oven to 400 degrees F.

Place the cauliflower florets onto a lined baking sheet and drizzle with the olive oil and a pinch of salt. Roast for 20-25 minutes until nicely browned, turning with a spatula after 15 minutes. Set aside until ready to use.

Heat the butter in a stock pot over medium-high heat and cook the onion until soft and translucent, 5-7 minutes. Add the remaining vegetables and cook for another 5-7 minutes until softened. Add the roasted cauliflower, stock, thyme, bay leaf, salt and pepper and bring to a boil. Reduce the heat to medium-low, cover and simmer for 25 minutes. Discard the bay leaf.

Use an immersion blender to puree the soup to consistency you prefer (I like to puree just part of it and leave the rest chunky). Alternatively transfer a portion of the soup to a regular blender, puree it, and add it back to the pot.

Add the cream and parsley and heat through. Add salt and pepper to taste. Note: If you prefer a thicker consistency you can dissolve some cornstarch in a little water (e.g., 1 tablespoon cornstarch in 3 tablespoons water) and pour it into the soup at the end. Let the soup simmer for a minute or two until slightly thickened.

Healthy Moongdal Idlis

Ingredients and Preparations

Moongdal 1 cup, wash and soak for an hour, drain and grind to a smooth paste adding 2 tbsp cud

Remove the batter in a bowl.

Heat 1 tsp oil, add

Mustard seeds ¼ tsp

Urad dal ½ tsp

Green chilies chopped ½-1 tsp as per taste

Curry leaves finely chopped 1 tsp

Hing little

Finely chopped carrots 1-2 tbsp

Green peas 2 tbsp

Cauliflower 2 tbsp ( optional)

Saute all the veges once mustard seeds have cracked and dal is golden, fry for 2 minutes and add to the dal paste, along with 1-2 tbsp of finely chopped coriander leaves, mix well adding 1 tsp Eno fruit salt mix well, this should be added just before steaming.

Grease idli plates well. Pour the batter, steam for 12-15 minutes on medium flame. Remove, cool little, serve hot with chutney of your choice.

Turmeric chickpea and vegetable rice bowl- Anti-inflammatory food

Ingredients

½ cup cooked brown rice

½ cup boiled chickpeas

1 cup chopped vegetables such as cauliflower, carrot and capsicum

¼ tsp turmeric

½ tsp jeera pdr

Black pepper pdr to taste

1 tsp oil

A squeeze of lemon

A handful of coriander leaves chopped

Salt

How to make it:

Toss the vegetables and chickpeas with  oil, turmeric, cumin, black pepper and salt. Roast or sauté until the vegetables are tender and lightly browned. Spoon them over the rice and finish with lemon and coriander. Mix well and serve hot with cucumber raita and roasted papad to complete the meal.

Cauliflower Paneer in Gravy

 INGREDIENTS AND PREPARATIONS

1 medium cauliflower, cut into florets, soak in hot water with salt for 3-4 minutes, strain well, wash, drain, add to the mixer jar along with 1/4 tsp salt, 1 green chili , 1 " ginger and 1/2 cup curd, blend well. 
 
ADD  2 tbsp cornflour/ maida, if need be add another tbsp, 1/4 tsp baking soda, thick , blend well, spread on a greased plate ( if  you feel a bit watery, add 1-2 tsp cornflour to get the thick batter consistency)
 
in a pan add 2 glasses water, keep a small bowl upside down in the center, peel a big onion and roughly chop into 4 put around the bowl in water, along with 4 small tomatoes whole, 2 green and 2 red chilies, 10 garlic cloves, ginger 1 tsp cut into long pieces 
 
 Over the bowl n the center, place the greased plate on which the cauliflower mixture is spread, cover and steam for 10 minutes in high flame, to test for done, insert a knife, it should come clean
 
take out the onion, tomatoes, garlic, ginger and chilies, remove tomato skin, once cool grind to a smooth paste, keep the water in which the vegetables were boiled.
 
heat pan add 2 tbsp oil, once hot, add 1 bay leaf, cinnamon 1", cloves 2, cardamom 1, 1 tsp saunf, once saunf fried, keep flame low, add the ground paste, add 1 tsp Kashmir chili pdr, 1 tsp red chili pdr, 1/4 tsp turmeric pdr, jeera n pepper pdr, garam masala & coriander pdr 1 tsp each, salt 1 tsp, mix well, keep in sim, cook covered for 2 minutes, add cooked water, 1/2 cup water in the mixer jar, mix well, cook covered for 5 minutes, cut cauliflower paneer into pieces, add paneer, stir light, cover and cook for 2 minutes in low flame, add crushed kasturi methi.
 
Serve hot with roti, dosa, bread toast, rice. Healthy cauliflower paneer. 
 
TIP
Soaking cauliflower florets in hot water, helps to remove dirt, small insects hiding between florets,

Udupi-Style Vegetable Pulao

 Udupi Style-Vegetable Pulao 

Ingredients

 For Paste:

1 cup freshly grated coconut

3-4 garlic pods

1 tbsp ginger

2 green chilies

2 tbsp coriander seeds

2-3 red dried chilies

1 cinnamon stick

2-3 cardamom pods

2 cloves  

Pulao Ingredients:

1 cup basmati rice

1/2 cup cashews

1 sliced onion

1 tomato

1 potato

1 carrot

1 cinnamon stick

1  Bay Leaf

1 cardamom

1/2 cup peas

1/2 cup cauliflower , chopped

1 tbsp oil

1 tbsp ghee

1/2 cup coconut milk

Salt as per taste

coriander leaves

 

Preparations

Soak the rice in water for 20 minutes.

Next in a hot pressure cooked add ghee. Add bay leaf, cinnamon stick, cardamom, clove, and cinnamon. Sauté the dry spices.

Add cashews and roast them in ghee.

Next add onion, tomato, and 1 tbsp spice paste. Mix it well.

Next add the chopped vegetables, coconut milk, chopped herbs, salt, and rice. Mix it nicely.

Cook it under pressure for 15 minutes until you get 3-4 whistles.

Once cooked, garnish it with fresh coriander leaves and serve hot with cucumber/ tomato raita and papad.

Tawa Sabz Pulao

Tawa Sabz Pulao 

 Ingredients

70 Gram cauliflower ( roughly 1 cup chopped)

30 gram beans ( about 10-12 beans)

40 gram carrot ( 2 small carrots)

5 tbsp ghee

75 gram onions/ 1 big onion or 2 small

80 gram tomatoes 3-4 tomatoes

1/2 tsp garam masala

1/2 tsp salt

coriander, fresh chopped 1 tbsp

Mint (according to taste)

30 gram onions, browned 

basmati rice cooked as required 

 

Preparations

Cut the cauliflower, beans and carrots in even sized dices and blanch them in hot water till half done.

Heat ghee on a hot tawa / kadai and add chopped onions.

Saute till it turns light brown in colour. Later, add chopped tomatoes and garam masala.
 
Add cooked basmati rice, salt and mix well on tawa/ kadai

Add chopped fresh coriander, mint and brown onions. Toss well and serve hot with cucumber raita and roasted papad to complete the meal.

 Note- At home, we don't have a big tawa to cook like in a hotel, you can do the same in a kadai at home and still get the same taste, easier to stir and cook in a kadai.

Hariyali Sabz Pulao ( Green veg puree Pulao)

 Haryali Subz Pulao 

 Ingredients 

For the haryali / green  puree:/ green 

1 cup mint leaves

1 cup coriander leaves

1 cup spinach

2-3 green chilies

For the Pulao :

1 cup onions , finely chopped

2 potatoes , chopped

3-4 pieces sliced ginger

2 cup cooked basmati rice

3-4 ghee and oil

Spices - 3-4 elaichi/ cardamom

2 cloves

1 bay leaf

2-3 cinnamon sticks

1 cup peas

1 cup cauliflower

3 cups water

Salt to taste 

 

Preparations

Boil rice and cook until soft. Strain the water and keep the rice aside,

Make a paste of the mint, coriander, chilies, and spinach.

Boil peas.

In a pan add some oil. Add raw spices, chopped veggies, and peas. Now add water and cook for 10 minutes.

Add the mixture to the vegetables and cook.

Add salt and mix well

Once the paste and vegetables are cooked. Add cooked rice to it.

Gently mix it and keep it aside.

Cook rice separately. Add veggies to rice and gently mix.

Add ghee and serve the rice hot with curd/ raita and roasted papad to complete the meal.

Whole Roasted Cauliflower

 Ingredients

1 medium head cauliflower (2 pounds)

3 tbsp extra-virgin olive oil

2 tsp grated garlic, divided

5 tbsp grated Pecorino Romano cheese, divided

tsp coarsely ground pepper, divided, plus more for garnish

½ cup whole-milk plain yogurt

¼ cup reduced-fat cream cheese, softened

tsp salt 

Chopped fresh flat-leaf parsley for garnish (optional)

Directions

Preheat oven to 400°F. Line a large rimmed baking sheet with foil. Remove and discard leaves from cauliflower. Trim bottom of core so the cauliflower head sits flat on the prepared baking sheet. Whisk 3 tablespoons oil and 1½ teaspoons garlic together in a small bowl. Brush the cauliflower all over with all of the oil mixture, making sure most of the grated garlic pieces are on the top or sides of the head. Sprinkle the top and sides with 2 tablespoons Pecorino and 1 teaspoon pepper, lightly pressing to adhere.  

 Cover the cauliflower with foil; roast for 40 minutes. Uncover and continue roasting until golden brown and tender, rotating the baking sheet halfway through, 30 to 35 minutes more. 

Meanwhile, whisk ½ cup yogurt, the softened cream cheese, 2 tablespoons Pecorino, ⅛ teaspoon salt and the remaining ½ teaspoon garlic and ¼ teaspoon pepper together in a small bowl until well combined. Cover and refrigerate until ready to use.  

Using the back of a spoon, spread the yogurt mixture on a serving platter. Top with the roasted cauliflower head; sprinkle with the remaining 1 tablespoon Pecorino. Garnish with parsley and/or additional pepper, if desired.

Cauliflower Mac and Cheese

Cauliflower Mac and Cheese
Ingredients:
Cauliflower
  • 2 1/2-3 lb head of cauliflower
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1/4 tsp black pepper
  • salt to taste

Cheese sauce
  • 3 tbsp butter
  • 3 tbsp all purpose flour 
  • 1 1/4 cup whole milk or 2% milk
  • 4 oz sharp white cheddar cheese block
  • 8 oz Monterrey Jack cheese block
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • salt to taste

Topping
1 1/2 cups shredded Mozzarella cheese

Instructions
 Preheat the oven to 375°F and lightly grease an 8×8 baking dish. (You can also use a different sized baking dish that's about 2 quarts in size.) Wash the head of cauliflower and cut off the florets. Chop florets into bite-size pieces and try to make them close to the same size. Sauté cauliflower pieces with some olive oil, salt, pepper, and garlic powder over medium heat. Cook until it’s partially softened but still have a little crunch in the middle. (This could take 10-15 minutes, depending on how large you cut the pieces.) Take cauliflower out of the pan and set it aside. Melt butter in the same pan and whisk in flour. Keep whisking and slowly start pouring in milk. Keep gently whisking until all incorporated. When the milk mixture is warmed, start adding cheese one handful at a time. Continue to whisk and add the cheese in handfuls until all is smooth and melted. Season with salt, garlic powder, and pepper.  When the cheese sauce is smooth, mix it with cauliflower and transfer into a greased baking dish. Spread cauliflower evenly in the baking dish and top it off with shredded Mozzarella cheese. Bake it for about 15 minutes. You can turn on the broiler until the top is golden but keep an eye on it.

Cauliflower Crusted Pizza

  

Cauliflower is an excellent alternative to many unhealthy carbs. You can prepare your delicious pizza base easily using cauliflower. This is a low-carb and low-calorie option that can also be suited to the pizza cravings of vegans. 

Serves: 4-6 servings

Ingredients: 

1 small cauliflower head

1 egg

1 cup mozzarella cheese

Salt and pepper to taste

½ cup pizza seasoning 

½ cup toppings of choice

½ tsp olive oil

½ tsp mixed herbs

3-4 fresh basil leaves

 

Preparations

Preheat the oven to 300’C. Grate the cauliflower to get a fine powdery texture. Flash-boil the cauliflower in salted boiling water for not more than 1 minute. Strain the cauliflower and drain out all extra water. 

Transfer the cauliflower to a mixing bowl, and add an egg and half the quantity of mozzarella cheese to it. Season it with salt and pepper. Take a baking dish and line it with butter paper, brush the paper with some olive oil.

Now using a spatula or your fingers, flatten some of the cauliflower mixture on the paper. Shape it like a pizza. Add the baking tray to the oven and bake the cauliflower crust for 15 minutes or until it forms a crust-like texture. 

Remove from the oven and add the pizza sauce, toppings of choice and the remaining mozzarella cheese. Put the tray into the oven again and bake for another 8-10 minutes or until the cheese melts. 

Remove from the oven and tear some fresh basil leaves on it and sprinkle some mixed herbs. Cut into 4-6 pieces and enjoy hot.
