LEMON HONEY BUNS



INGREDIENTS
for buns
butter  6 tbsp
demerara sugar  3 tbsp
honey  3 tbsp
lemon juice  2 tbsp
lemon essence  1/2 tsp
all purpose flour  1 cup
baking pdr.  1 tsp
milk  1 tbsp

for decoration
butter  2 tbsp
lemon juice  2 tbsp
icing sugar  3/4 cup
few jub-jub sweets (something like jelly toffees)
white frosting 2 tbsp ( see chocolate hearts recipe)

METHOD
take butter, sugar, honey , lemon juice in a vessel, melt on low flame, stirring till sugar dissolves.
remove and cool little. add lemon essence, and flour, baking pdr., and milk, mix well.
pour prepared mixture in paper cups or muffin tray, pre-heat oven to 200 deg. C, bake lemon honey buns for 15-20 minutes. take out when they're done, cool them.
for decoration- take butter, lemon juice and icing sugar in a vessel. melt over hot water, mix well with a wooden spoon. remove and cool. stir often with the spoon till spreading consistency. apply on top of buns. allow the topping to cool. decorate with sweets and white frosting.

LEMON HONEY BUNS

INGREDIENTS
for buns
butter  6 tbsp
demerera sugar  3 tbsp
honey 3 tbsp
lemon juice  2 tbsp
lemon essence  1/2 tsp
self raising flour  1 cup
baking pdr. 1 tsp
milk  1 tbsp
paper cups

for decorations
ghee 2 tbsp
lemon juice  2 tbsp
icing sugar  3/4 cup
any small candies/ flavoured rice balls

METHOD
take butter, sugar, honey & lemon juice in a vessel, melt on slow heat till sugar dissolves.
remove from gas, cool a little, add lemon essence, flour, baking pdr. & milk, mix well.
take butter paper cups in small pastry tins, pour prepared mixture.
pre-heat oven to 200 deg. C, bake them for 15-20 minutes. take out when done. cool.
For decoration-
take ghee, lemon juice & icing sugar in a vessel. melt on hot water, mix well with a wooden spoon.
remove from heat & cool. stir often till it comes to a spreading consistency
apply on top of buns, spread little candies.

CINNAMON-WALNUT-PECAN COOKIES

INGREDIENTS

whole wheat flour  280 gm
soft butter  230 gm
demerara sugar powdered  115 gm
cinnamon pdr.  1 tsp
pecans, walnuts chopped  1/4 cup ( or use nuts of your choice)

METHOD

pre-heat oven to 200 deg. C
in a bowl cream butter and sugar till soft and light, add the nuts
fold in well
sift flour with cinnamon and add to the bowl
fold in, till it forms a soft dough
make small balls, place on a baking tray and flatten slightly, make any markings using the back of the fork or use any cookie marker
bake for 10-12 minutes or until golden.
allow to cool on tray
store in air-tight container.

Thai Peanut Sauce And Thai Red Curry Paste

INGREDIENTS
thick coconut milk   400 ml
demerara/ palm sugar   3 tbsp
Thai red curry paste   2 tbsp
roasted unsalted peanuts,coarsely ground   225 gm

mix all the ingredients in a saucepan, simmer for 15 minutes, stirring continuously.
can be used at once or refrigerate, warm again to use.
makes about 2 cups.

Thai Red Curry Paste

INGREDIENTS

dried red chillies 6 soaked in warm water
cumin seeds   1 tsp
coriander seeds  1 1/2 tsp
nutmeg grated  1/4 tsp
lemon grass finely slices  2 tbsp
onion 1 small finely chopped
shallot finely chopped and roasted  1 tbsp
garlic finely chopped   1 tbsp
grated zest of 2 limes
peppercorns   5
salt  1/4 tsp
cloves  3-4

drain chillies after soaking for an hour, deseed
on a tawa/ griddle, dry roast cumin, coriander seeds and nutmeg for a minute
grind to a fine powder
transfer to a larger food processor jar,add all the ingredients and grind to a smooth paste, adding a few drops of water if necessary.
refrigerate in a tight lid jar until needed, lasts upto a week

makes about  1/2 cup

APPLE CINNAMON CAKE

INGREDIENTS

whole meal flour(can use wheat flour only or wheat flour 50 gm, ragi pdr,  25 gm & soy flour 25 gm)
self raising flour/ maida  75 gm
apples 2
curd  65 ml
soft butter  115 gm
cinnamon pdr. 1 1/4 tsp
eggs  2
demerera sugar   150 gm
honey   3 tbsp optional

METHOD

pre-heat oven to 180 deg. C
grease and line a loaf tin with greaseproof paper
beat the butter & sugar until it is pale & light & creamy
add eggs & beat until fluffy
add cinnamon & mix in the curd with a spatula
sift the flours together
fold into the wet mixture with a light turning action, do not over mix.
you'll have a fairly thick batter, don't worry
as long as you've mixed gently & not vigorously, you'll have a light cake
place some of the batter in the perpared tin
now peel & core & thinly slice the apples & arrange them on the batter, top with some more batter, then another layer of apples & then the last bit of batter
bake for 35- 40 minutes until it is golden & a skewer inserted in the centre comes out clean.
let it cool for 5 minutes  before  transferring onto a plate
brush the top with honey or drizzle honey over slowly to glaze & let cool
this is a perfect tea time cake
