INGREDIENTS
whole meal flour(can use wheat flour only or wheat flour 50 gm, ragi pdr, 25 gm & soy flour 25 gm)
self raising flour/ maida 75 gm
apples 2
curd 65 ml
soft butter 115 gm
cinnamon pdr. 1 1/4 tsp
eggs 2
demerera sugar 150 gm
honey 3 tbsp optional
METHOD
pre-heat oven to 180 deg. C
grease and line a loaf tin with greaseproof paper
beat the butter & sugar until it is pale & light & creamy
add eggs & beat until fluffy
add cinnamon & mix in the curd with a spatula
sift the flours together
fold into the wet mixture with a light turning action, do not over mix.
you'll have a fairly thick batter, don't worry
as long as you've mixed gently & not vigorously, you'll have a light cake
place some of the batter in the perpared tin
now peel & core & thinly slice the apples & arrange them on the batter, top with some more batter, then another layer of apples & then the last bit of batter
bake for 35- 40 minutes until it is golden & a skewer inserted in the centre comes out clean.
let it cool for 5 minutes before transferring onto a plate
brush the top with honey or drizzle honey over slowly to glaze & let cool
this is a perfect tea time cake
