BASIC VANILLA ICE-CREAM RECIPE

INGREDIENTS

milk   6 cups
sugar  1 1/2 cups
cream  1 cup
cornflour  2 heaped tbsp
China grass  2 tsp
vanilla essence  1/2 tsp

METHOD
soak China grass in 1/2 cup of warm milk, keep aside
mix cornflour with a little cold milk
boil the remaining milk in a heavy kadai/ pan
boil till it reduces to half its quantity, stirring all the time
mix cornflour mixture, add to boiling milk, stir and allow the milk to thicken more
be careful not to let it burn, so keep stirring continuously, on low flame
add sugar slowly, stirring well, till all the sugar dissolves completely
remove, allow it to cool
stir the China grass with a spoon, mix well, add to thickened milk
beat the cream lightly till smooth, add to milk along with the essence
pour this ice-cream mixture into an aluminium ice-cream tin, cover and freeze till half set
remove and beat the mixture with a fork till it becomes smooth and creamy
freeze again in the covered tin
once well set, serve with chocolate sauce and nuts sprinkled on top.

Chocolate sauce

heat 2/3 slabs of chocolate in a double boiler or in the microwave, till it melts

ps- tips for good ice-cream
do not boil the mixture while adding sugar, or even after adding, keep on low flame till sugar melts, then remove from heat
keep ice-cream to freeze in a covered aluminium tin
