Peas Kachoris

INGREDIENTS

for dough

maida/ all purpose flour  2 cups
fine semolina/ suji/ rava  1/4 cup
cornflour   2 tbsp
salt little
ghee 1 tbsp
water to knead

for stuffing

peas mashed  2 cups
green chilli-ginger paste   2 tsp or to taste
garlic paste   1 tsp ( optional)
hing / asafoetida  little
salt to taste
coriander leaves finely chopped   2 tbsp
oil to fry

METHOD

with dough ingredients, mix all well, then add water to make a soft dough.
for stuffing- heat 2 tsp of oil, fry chilli- ginger-garlic paste, well, add hing, fry for few seconds
add mashed peas, mix well, add salt to taste, remove add coriander leaves.
take small amount of dough roll into small puris, put 1-2 tbsp of stuffing, cover well, roll into thick puris, deep fry in hot oil till light brown on both sides
to serve, you can make a small slit, add some sweet date chutney, green chutney, curd, some coriander leaves, serve at once or else it will become soggy.
